This was the #1 restaurant we wanted to try in Mendocino. We are huge fans of Neapolitan style pizza. I, myself, make a Neopolitan style crust with a 3-day cold fermentation in the backyard on my Ooni pizza oven. As a disciple of the Ninja Turtle generation, it is my favorite food in the world and I'm a sucker for a place that makes good pizza.
Brickery definitely makes good pizza. You can tell based on the menu combinations, the smell of the woodfire brick oven, and the high-quality ingredients (including their excellent mozz).
We walked around the cutty side (between a couple buildings on the left) and stood in line for maybe 5 minutes. This is a popular spot and it was pretty common for one person to stand in line while another went and grabbed seating.
When trying a pizza place for the first time, I like to get a baseline. So I tend to order a plain cheese or margherita (something with minimal toppings), so I can judge the crust and sauce. When my turn came up, I ordered a marg pizza with a couple drinks.
Our wait was minimal (maybe 10 minutes?). We enjoyed the garden setting while we waited. Once my buzzer went off, I went to grab the pizza. It looked excellent and I told the guy "This looks fantastic, man." He grinned and said, "Oh, it's gonna be good!"
I brought it back to the table, took a quick picture, and then we dove in. I'm sorry to say, the slice immediately flopped, the cheese and basil slid right off, and the pizza appeared to be way over-sauced. As you can see in the picture, the sauce was so heavily used, it never really cooked down into a paste. It was still very wet and soupy when we ate it.
Having said that, the bottom of the crust was perfectly charred and blackened (though the crust didn't play very crispy... more soft and chewy). The slices that DID stay together were very flavorful. The cheese, basil, and tomatoes were all clearly high-quality. You could tell that this place cranks out some excellent pizzas... ours must have been a bit of an outlier.
Overall, I would definitely come back and try another pizza... but I might ask them for "light sauce" next time, if this is their usual amount.
