Had a delicious sushi meal here. Sampled 17 different pieces of sushi with their dinner omakase option. All were very tasty with my favorite being the first piece of golden eye red snapper. The pieces were brought out quickly one after another, took about 60 minutes from start to dessert. Food was prepared right in front of you when sitting at the bar. It’s a nice sushi spot one block from crazy Times Square.

My husband and I celebrated our birthdays at The Chemistry Room in NYC and it was our 3rd visit. We brought our closest friends and it was such a beautiful and fun experience! Our friends had never tried Omakase and we were delighted to introduce them to this amazing experience. Our birthday is in December and we went on Dec 21, 2024 so you know the holiday and tourist traffic was madness! We'd originally booked the entire bar for 7 of us, but traffic made it impossible for most of us (us included) to get there on time. We kept in touch with The Chemistry Room while on the road to give them updates on our ETA and they suggested we switch to a large table instead. Although we tried to make it, we agreed to change seating and honestly it was the best idea because of how intimate it was and how awesome it was to see everyone's faces as they experienced Omakase for the 1st time. Thank you so much to Chef and the amazing staff. We truly enjoyed ourselves and we can't wait to come back. By the way, the food was SUPERB. As always!

Chemistry Room is delicious! Came here for restaurant week with a group of friends. From the first course till end of dessert, everything was scrumptious. The sushi is very fresh and the omakase did not disappoint. This place is rather on the expensive side but worth it for quality sushi. The restaurant has a very chill and low key vibe. The service was top notch as well.

I did the omakase at the bar, and every bite felt like a love letter from the sushi gods—delivered personally by a chef who looked like Ryu from Street Fighter and had the humility of a monk. Each piece was butter-soft and beautifully crafted, but the sea scallop? That one’s living rent-free in my brain forever. To top it off, the sushi master poured me a taste of his best sake—on the house. That little gesture sealed the deal. No, you won’t leave full (I snagged a $1.50 slice on the walk back), but you will leave changed. This isn’t dinner—it’s a culinary dojo where flavor trains in silence and emerges victorious. 5/5 experience. Book the bar, bow to the chef, and prepare for sushi enlightenment.

An absolutely outstanding dining experience at The Chemistry Room! We had the countertop omakase dinner, and everything from start to finish was exceptional. Beautifully decorated and very welcoming and relaxing atmosphere. Very genuinely friendly staff and attentive. Sushi chefs did a very good job of describing each item in detail and very easy to converse with. Almost all of their fish is imported from Japan very delicious good quality and fresh. I have recommended this place to some of my Japanese friends and they say it is almost as good as eating an Omakase dinner in actual Japan. I plan on dining here again in the future for sure.

Visited for Feb 2025 NYC Restaurant Week. They were offering a 3-course dinner for $60. I opted to start with the beef gyoza, followed by a 7 piece omakase and ended with a matcha creme brûlée. The whole experience was so exciting cause you truly didn't know what to expect next. Standouts for me were the (I believe) egg/tofu custard with salmon eggs, sea urchin and the matcha creme brûlée (if you're a matcha fan, I truly believe they nailed the proportions). If you're gluten free, they can accommodate the omakase to you. One of my friends had a few modifications to her omakase and instead of dessert, she got an extra hand roll. They have a coat check right by the hostess which is so lovely! My party and I absolutely enjoyed our time here and are already talking about visiting again.

I visited as a fairly last minute dinner decision on my recent trip to NYC. Friends I traveled with decided on here because they were one of the restaurants participating in restaurant week. Reservations are available. The restaurant week menu had various options that opened it up to most diners. I had the Gyoza, a 7 course Omakase, and a Matcha Creme Brule. First the restaurant: Small, intimate, fairly quiet even when full, and perfectly cozy. Now the food: everything was AMAZING. The menu even came with a complimentary Smoked Miso soup with Seaweed infused tofu served in a beaker. I am a huge fan of miso soup, so this was a make or break, and boy did they MAKE. The Gyoza was magnificent, though it may have ruined normal beef gyoza for me forever. The omakase had such a variety including Uni directly from Japan, a tartar with a poached quail egg, and various forms of tuna and salmon. Each carefully crafted, and I made sure to slowly taste each one. If I visit again, I will absolutely be having their full omakase course. The creme brule was so perfectly balanced between your usual flavor and matcha, and the crust on it was everything you would expect from a fine brule, not burnt burnt, and consistent across the entire dish. It will certainly be a must visit again next time I am in the Big Apple

The Chemistry Room is a creative and state of the art Japanese cuisine. It features an omakase tasting menu and an intimate dining setting for sushi lovers located in the Sanctuary Hotel New York in Midtown, Manhattan. The staff and service were attentive, the food was fresh and flavorful, and also has a great selection of sake, cocktails, and Japanese beer. My friends and I enjoyed our omakase tasting experience. The Chemistry Room is definitely a must visit!

When it comes to service, the staff was attentive and informative about each piece that was served during our Omakase experience. The restaurant gives quaint, tucked away speak-easy vibes with vibrant flakes of Japanese culture in every morsel of the room. The Omakase experience: I would say although the description provided to us during the serving of each piece was thorough with each piece fostering its own vibrant appearance, the taste was a little lackluster. It would seem each piece got more flavorful as the courses went on, however out of the multiple Omakase experiences I've had the pleasure of enjoying, this does not even rank in the top five, sadly. If you're looking for a beginner friendly Omakase experience then The Chemistry Room is your go-to, as the flavors are safe and the integrity of the fish is respectful and solid. However, if you're a seasoned Omakase diner looking to explore and venture out into eccentric flavors and textures while still honoring and incorporating traditional Japanese sushi profiles, this is not it.

I had a work dinner and stumbled upon Chemistry Room. From the start, they were incredibly accommodating and seated me early. The staff was very attentive, and the drinks were fantastic! As a fan of omakase, they certainly didn't disappoint. I highly recommend checking it out and saying hello to Tomo, the hostess. She ensured my experience was top-notch, creating a relaxing atmosphere that will definitely make me a repeat customer!

I enjoyed my visit here. I did the 12 piece omakase, which made me want more pieces. The waiters were on top of everything. Every piece was delicious. I opted for not receiving uni, so they provided me with a substitute roll. They offer other dishes as well such fries, sandwiches etc. I wouldn't change anything about my experience, I loved it all.

The staff was so sweet. I put that we were celebrating a birthday in the reservation notes and they made my mom a complimentary mocktail. Delicious! Very attentive and kind. The restaurant week omakase was a great experience. We both had the smoked miso soup, tuna crispy rice, 7 course omakase. We got one of each of the desserts, cheesecake and matcha crème brûlée. The cheesecake was AMAZING. The crème brute was okay, saying this as a matcha lover. The first course of the omakase was not good, unfortunately. The other 6 were amazing! Great to try something new

My husband and I had an omakase dinner at The Chemistry Room last month before a play at a theater nearby. Overall, it was pretty good - lots of courses and great cocktails. 17 courses - most I really enjoyed. My favorites were the tile fish, sake cured mullet roe over pasta, mushroom medley rice, and the sea bream. The courses came out quickly (it was a fast omakase), and the explanations were great and very descriptive. The drinks were also great - we shared some sake that was recommended by a staff member and then had a couple of cocktails as well (I looooooved their Midori Sour). The service was great - very attentive and yet not distracting from the experience. The restaurant is beautiful. The experience didn't stand out from the other omakase experiences I've had, but it was a delicious, fun meal - a great spot for a meal before the theater.

Restaurant week 2024 $60 pp Dinner They started us with a complimentary miso broth. It was the most delicious miso dish I've ever had. Not just because it was free. Spicy Tuna Crispy Rice as an app was very delicious. 7 Course Omakase was well above average. Very delicious and every bite was tasty. The NY Style Cheesecake was very good. It was a nice sized piece and tasty. The service was excellent. The dining room was pristine. This felt like a treat. I would definitely return for the full priced lunch, dinner, or whatever. I really enjoyed this. It was well worth the money and I rarely say that.

love coming back here , one of my favorite in the city that's very affordable. We came for early dinner at 5pm for their first seating on Valentine's Day. there's no a la cart for the night only the $125 set menu. the menu is completely different than when i last visited. there are new favorites and some less desirable. the whole meal lasted about 1.5 hrs , the house was full and the chefs were so busy but that didnt stop them to provide the exellect food and service.

This restaurant totally ruined our Valentine's Day, despite our best efforts. I have some serious food intolerances. My partner and I are used to this being a huge issue when we eat out, so we take every precaution. He wrote in my food intolerances when making the reservation and also had a text conversation (included here) to triple check that they would be able to accomodate the dietary restrictions. They said yes. We also confirmed in the text conversation that they would be able to seat us side by side and they also said yes. However, when we got there, they were unable to accomodate ANY of our previously confirmed requests. They did not know what FODMAPs were and when the chef looked it up (which they should have done in advance, not after we got there), he rudely told us that we should've checked their website, which states they cannot accomodate a gluten intolerance, so logic follows that they wouldn't be able to accomodate mine either, which contradicts the text conversation we had with their staff. At this point it was 6pm on Valentine's Day. We called and checked online for dozens of restaurants to try and find a spot to eat. We were able to find Oceana nearby but we were unable to do our typical due diligence in advance because we had been derailed by The Chemistry Room, and when we got there and explained the dietary restrictions they also were unable to accomodate. We tried another spot and another. All the same. In the end we thought we had no choice but to go back home without eating, but luckily a reservation got put up at SHINN EAST and I snagged it. Without any advance notice they were able to accomodate *all* of our requests at SHINN EAST - FODMAP free, kosher, side by side. It's not that hard, really. And there are no excuses when you've had advance notice multiple ways. At least tell the customer accurately that you can't accomodate instead of overpromising and underdelivering. I highly recommend avoiding this spot if you have any sort of dietary restrictions.

Loved this place! It's right next to its sister restaurant Sushi Lab. The sushi was fresh and delicious and they mixed in some great kitchen items (esp loved the pasta). Decent selection of wine and cocktails and they have us a free glass of champagne for my friend's birthday, along with a chocolate birthday sign with her dessert (a delicious black sesame cheesecake). Highly recommend!

After a few visits to Sushi Lab, my sister and I decided it was time to try their sister restaurant located inside the same hotel. As expected, The Chemistry Room was phenomenal! Each course from our omakase experience was unique, fresh & flavorful. Sitting at the counter is the best way to interact with the chefs, who are more than happy to explain the menu and where they've sourced each fish. All of the staff were very friendly and pleasant. We started off with the smoked miso soup, which surprisingly was one of my favorite courses! Another star of the show was the angel hair pasta with goma soy & sesame paste sauce. I loved that we were provided with a printed menu of what we would be enjoying throughout our meal. Overall, we had an incredible meal, complete with delicious cocktails and cozy atmosphere. Undoubtedly, we will be back!

I came here for date night with my husband. Easy to make a reservation via Resy the night before for a 5pm dinner. There were 10 diners at the omakase table in total. Beautiful, clean establishment with excellent lighting. Casual. Exceptional service from waitstaff. Chefs did not interact much aside from telling us what each dish is. It may or may not be important to note they are Chinese speaking. Personally it does not matter to me as good sushi is good sushi but worth mentioning for those who do care. Allergies were noted early on which is always appreciated. I love that a menu was provided which tells us exactly what dish we should be expecting... also love it because I never remember which dish is which and sometimes have trouble hearing or understanding what is being said. Pretty solid food. But in all honesty I didn't love it. Definitely not in my top 3. For example: The (hotate) sea scallops itself were very tasty but overwhelmed by the soy sauce. The (otoro) fatty tuna looked amazing but was kind of fishy and had an odd bite to it rather than melting in my mouth. I am allergic to shrimp so for the (shiro ebi) baby white shrimp, they just omitted the shrimp altogether in the dish rather than a substitution or give extra ikura at least. Let's face it, miso soup isn't particularly exciting. Unagi is so delicious at baseline that I wish they didn't deep fry it! The (zuwaigani) snow crab was probably the most disappointing - as the last dish before dessert I was expecting it to end with a BANG but it fell beyond short... the subtle taste of the snow crab was completely overwhelmed by everything else on it! I was also very disappointed that wagyu was not on the menu. I mean don't get me wrong, there were some really good pieces. Some of my favorite is (amadai) tile fish, mushroom medley rice, and (chu toro) medium fatty tuna, and (bafun uni) sea urchin. Would I come back? No because we are fortunate enough to have tons of omakase spots everywhere you look and this one simply did not wow me.

This is the sister restaurant to the ever famous Sushi Lab but honestly I like this place much more. This location opened up only a year or two ago but it's a must visit. The vibes are amazing - beautiful Japanese inspired decor with some nodes to their chemistry theme. It's a clean, open and quiet space. I booked a 6:00 slot and was able to stay for 2 hours at the counter. The entire meal was a dining experience. They brought out beakers for the miso soup which was smokey and rich. I enjoyed every piece of sushi that was included. I felt that all the toppings and parings were very tastefully put together and of course, very delicious. The price is fair for what you get and we left the meal feeling quite full. $125 for 15 courses included appetizer and dessert!

Loved this place, one of the best omakases in this price range in the city! For years I've been going to its sister restaurant Sushi Lab and their rooftop in the same building, but then I saw someone else post about this place and knew I had to try it out! The service was amazing. As each course came out, the server would explain what it was. As soon as we finished a course, they would clear off the table. Didn't have to wait too long between courses and the drinks were also quick to come out! I believe it's an omakase only menu (that was the only menu we were given besides drinks) and it's definitely an experience. I wasn't a huge fan of the cream puff nor the mushroom medley rice but everything else was super good! My friend and I both got cocktail drinks and they were super good! Total price came out at $311 (pre-tip) for 2 omakases and 2 drinks. For 15 courses, I think this is somewhere definitely worth trying with friends or on date night! Would recommend, would come back :)

Celebrated my birthday eve at @thechemistryroom with an omakase course as a luxurious treat to myself. The chemistry lab concept is cute (e.g. miso soup in a beaker) and I wish they'd dive in deeper with that theme! The photos are roughly in order of how much I liked it, was surprised by it, and how memorable it was. Many of them were very unique. For example, the uni with tempura was such a great mixture of softness and crispness! Very glad that I visited, and thanks for the birthday mocktail!

The Chemistry Room's Omakase is one you don't want to miss! We sat at the sushi bar and were treated to 15 hand crafted omakase selections. I don't think there was one we didn't like! The chef was very kind and talked us through each piece. Hands down one of the best Omakase experiences I've had.

My best friend took me here for my birthday celebration and everything about this restaurant was exceptional. I started the meal with the Pearfection cocktail - it was a strong 5/5. Moving onto the omakase, the starter course was a miso soup served in a beaker which I thought was clever and original for the name of the restaurant. It was also delicious! Next up, the sushi pieces consisted of the most fresh fish and each piece had a creative spin with the garnishes and sauces used. My favorite piece was the amberjack. The service was excellent as well, with the chef moving at our pace rather than us waiting too long in between each course. The restaurant itself was very open and inviting with a feeling of a fresh new and unique atmosphere.

I've been to a number of Omakase places throughout the city but had never heard of The Chemistry Room before and was excited to try it, especially since the food in this area of midtown in not known for being fantastic. The restaurant is small as restaurants go, but big for an Omakase place. You can choose between sitting at the sushi counter or at a table. My friend chose table for us, but I always think you get the best experience sitting at the sushi counter watching each course be made. Our first course was a miso soup in a chemistry beaker which was very tasty and on theme, but that was the extent of the chemistry theme for the evening. The courses started off high but some towards the end were a bit disappointing. The tuna flight was by FAR the best course, three different pieces and types of tuna I could have eaten just that all night. We didn't like the edamame tofu at all (tasted a bit like dirt), or the crab on eggs, which looked like a crème brûlée and was a little too sweet and I didn't think paired well together. We were celebrating a birthday so the host brought over 1 glass of champagne which was a nice touch (although the three of us shared it, which was a little weird, but I guess I wouldn't expect them to bring over 3 glasses on the house.) All in all I would probably not be back any time soon given the $125 price point and a few courses falling short for me, but we had a great time and service and the chefs were fantastic!

came here for their omakase tasting menu, definitely recommend making a reservation. they do not do take out. its a small and intimate dining experience. side note, they do offer regular dining!! the table next to us got the shrimp and truffle pasta and it smelled sooo good. anyway, the omakase was 15 pieces for $125. we also did handrolls for $25 each. my favorite was definitely the scallop and uni as runner up. my husband loves the mushroom oyster truffle rice over anything!! downer was that their omakase set doesnt offer waygu. their sister restaurant the sushi lab is next door and i believe their omakase offers wagyu and set price is the same. originally we wanted to do sake pairing with the set but turns out its just wine and 3 other sakes to pair with this 15 course so we opted for cocktails instead. their cocktails did not disappoint - the pearfection was SO GOOD. id go back just to get that drink haha overall bill was about $430 before tip which is pretty standard for good omakase with couple of drinks and a handroll for top off so no complaints here. i wonder if they switch up their menus according to seasons, but ill definitely be back!

Came here for dinner on a Saturday evening. We got seated at the counter and prep for the food promptly started at 6:30PM. When I got in, it was quite empty but filled up rather quickly come 7. I generally have the preconceived notion that no one is ever actually full after omakase but chemistry room has distilled that. It's a 15 course omakase that excites your taste buds! Out of the courses, my favorites definitely had to be the tuna flight, shima aji (striped jack, so fresh!), and the wagyu. The ingredients were very fresh and the chefs were also friendly. We sat in front of Frankie who was super informative on each roll he crafted for us. Definitely a worthwhile experience for both the exceptional food and service!

Excellent new omakasa spot in the mid tier range! I came with my fiance and sat at the counter. Our sushi chef was very very entertaining and a tune to our needs. He noted that I was left handed right away and that my fiance loved ginger and kept it coming. The decor was also beautiful inside. And course all the SUSHI was excellent. Highly recommend!

Amazing place, definitely make a reservation. It's kind of small and intimate place, but it didn't make you feel like it was too stuffy and formal. Food was excellent! Delicious and speedy. I didn't feel rushed to finish the sushi, and everything tasted perfect. For $125, this is a great bargain omakase. One additional thing I'd like to mention is that their drinks looked really great. I don't drink, but I would've considered asking for a mocktail!

Excited to finally try the Chemistry Room after more than three visits to their sister restaurant on the rooftop, Sushi Lab Rooftop. The menu concept is completely different from Sushi Lab, as is the atmosphere which feels more like a proper sushi restaurant tucked away in a small space in Japan. Playful cups and flatware make for an interesting experience - the drink glasses are designed as chemistry beakers. Diners enjoy a 13-course set menu for $125, including their well-known smoked miso soup which is the first dish - perfect for a cold day, or a warm one. Every subsequent piece was delicious with high quality fish. My favorites were the Tuna Flight and A-5 Wagyu. I'll let the pictures do the talking. Overall, this is my new favorite Omakase experience in the city. Highly recommend to anyone who wants to enjoy best-of-best sushi night at a reasonable price.

Another fantastic meal; the restaurant has a couple of tables but you really must sit at the sushi bar to see the chefs' skill; there are two that work together like a dance as some of the pieces often require multiple steps to create This is omakase experience is not one of the more talked about in NYC; but needs and deserves to be on the map It's not a tradition omakase as the chefs try to innovate with various ingredients and techniques; but they do not go overboard as to mask the freshness of the fish The servers are attentive and friendly Atmosphere is upscale but casual attire is welcomed

If one could ever choose a sushi restaurant to marry, I would propose to this restaurant. The Omakase is your only choice and it is OFF. THE. HOOK. Service is incredibly attentive and very accommodating. Our servers gave us a warm, welcoming feeling. My well-traveled dining partner said this was better than high-end Tokyo sushi restaurants she had been to and couldn't believe this was NYC. Our sushi master chef walked the bar patrons through each course, answering detailed questions about ingredients and how they were sourced and made. If you want the true Omakase experience, sit at the bar, not at a table. Each piece presented was better than the one before. The flavors and textures were all pleasant surprises, like a roller coaster sushi ride. The sake selection is excellent and there is a drink pairing option, if you want to go in the sommelier direction. Also, for those of us who don't get full off of a dozen pieces of sushi, you can opt for additional hand rolls. I got the dungeness crab and Uni hand roll. The best thing about the roll is that the meats are not plopped at the top like most hand rolls, they are evenly spread throughout the roll so each bite gets the full experience. It was a little messy, but completely worth it. You finish your Omakase with a nice dessert and green tea. The ginger helping provided was just enough to cover a cleansing of the palate between each course. One course had fresh wasabi included. If you are a sushi lover or a sushi snob, you will love this experience. If you are new to sushi, save your money and build up your palate and sushi repertoire to truly appreciate this place. Remember to tip well (and account for a tip In your budget if you are cost conscious). Highly recommended.

This place used to be amazing. The first time we went about a year ago, the service was exemplary, the sushi was incredibly creative and balanced, and the atmosphere felt classy and modern without being pretentious. We've been back twice since, and while the staff is still friendly and the food is still quite good, it feels a bit like you're being rushed through the menu, and the sushi is good but not spectacular. The omakase menu is $125 ($190 or so after tax), which felt like a steal the first time we went, but now feels significantly overpriced. Overall, a very good meal in a nice venue with attentive staff, but too expensive for what it is.

Hands down my favorite Omakase spot in nyc so far! The price is very reasonable for the amount of sushi. (you actually feel full at this one ). Everything was crafted so perfectly, the flavor, the freshness of the fish...so so delicious!!! I wanted to experience it a second time around right as I was eating it! The service was great! Friendly staff, and it was very empty when I went with my partner and I. Would recommend this over Sushi Lab any day 10/10! I need to go back soon!

The chemistry room is truly experimental and I appreciate that. The meal was an experience, just not one I'm sure I would do again given the amount of other omakase places in the city. 13 courses on the menu (including miso, dessert and tea) was actually 15 courses (tuna sampler came with 3 pieces total). Highlight dishes (4)... - King Salmon: a meal in one bite. The leek and the sakura leaf were so distinct and flavorful. - Tuna flight (akami): simple but good. - Tuna flight (otoro): yes! I had doubts because it was weird but it was perfectly seared to give a slight smokiness. Caviar on top was A+ too. - Snow crab: took me by surprise. It was ... creamy? and the ikura lended a good amount of saltiness. Not so good dishes (5).. - Smoked miso soup: not sure where the smoked flavor went. It's basically miso served in a hipster beaker cup labeled 'caffeine' - Red snapper and uni rice - meh, the red snapper was cooked, and overcooked at that, and not well seasoned. Uni rice was lackluster. - Tuna flight (chutoro): nope, all I could taste was quail egg and nothing else. - Uni: It wasn't very good but it was unique. Creamy uni, crunchy tempura (I think this ruined it), salty ikura. - Tiger Prawn: again, overcooked and a bit tough. Everything else was OK but nothing to write home about.

The Chemistry Room is probably one of the best places I've had omakase. For the price of $100, it's undervalued and it won't likely stay there for long. The size of the pieces are more than generous and they do not shy away from piling on those expensive ingredients like caviar, Hakkaido uni and truffle. You might see 10 dishes on the menu but the tuna flight is 3, so really, you're getting 12 pieces plus the soup. And these pieces are huge. You can add another hand roll of your choice for $25. The room is nice, the sushi chefs are really down to Earth and chill and the vibes were nice. Not stuffy at all. Just one thing to pick at... the fish was just a tad too cold. I think it needs to be a little more at room temperature. Other than that, this place is perfect.

We had the opportunity to go to the chemistry room at sushi lab this weekend. It was a fantastic experience!! It was a ten course that was elevated from their normal experience on the roof. We were lucky enough to have Frankie as our chef since he has been our favorite since day 1. Each and every course was carefully prepared and not rushed. They took extra measures to make sure each course was absolutely perfect. I really can't say enough how much we enjoyed this. I'll def be there more frequently and I believe they are incredibly underpriced. Honestly the chemistry room is on par to be one of the better experiences in New York for the price point. I'd get there before that changes!!

Food and quality were great! Great ambiance, and the Chinese chef spoke very clearly when presenting the courses. Flavors were very balanced and light. The sushi rice was seasoned well and the amount used was just right (not too much). I really enjoyed each dish, but my favorite courses would probably be the Chawanmushi (steamed egg pudding with crab and mushroom), the mushroom medley rice, and the Shima Aji (striped jack) sushi. Highly recommend this place for a good dining experience~

My apologies for not finishing my review last night but my mind... Well, it's still blown! I'm still not sure where to begin my review. That being said, I'll try not to make it read all over the place but no guarantees. The hospitality was incredible. The warmth, the kindness, the service, the love, the care, the pride were amazing! With everything going on these days nothing was scrimped. The ambiance was tranquil, unpretentious, and welcoming. Don't get me started on the artistry! I meant food. It's obvious that great care is taken into making each extremely fresh, almost-too-beautiful-to eat piece. Very delicate presentations only outdone by flavor. Fourteen courses in their Chemistry Lab will definitely fill you up so come hungry! Empty stomach hungry. Passing on Sushi Lab would be a shame. ------------------- I don't know what I did to deserve such a mind blowing culinary experience at such a reasonable price but I must have done something very, very right! I'm going to update this review tomorrow because my mind is still blown. In the meantime, enjoy the photos!

With my scientific background, I was eager to once again hit the chemistry room for some delicious experiments. Last time I visited was at the the Sushi Lab rooftop (sister restaurant). First impressions, the interior of the restaurant is beautiful. The wood panels on the walls and the minimal design brought out a welcoming and relaxing atmosphere. The staff were very friendly, polite, and attentive - replaced plates and silverware quickly. You could tell that they were really focusing on trying to deliver a memorable and enjoyable experience! The food was spectacular... some were absolutely mind blowing.. my favorite was the BAFUN UNI - SEA URCHIN from Hokkaido. I'm usually very picky with uni, but this melted away so gently and peacefully, it was one of the best uni I have ever had! But all the other courses were just as incredible. I only have one quarrel - the last two courses were the green tea and cream puff. Now, I love green tea, but I wouldn't consider that as a course. Also, the foie gras cream puff definitely had an interesting taste, but was probably my least favorite course. It was just a little bit of a sad ending to such a beautiful start! However, it still doesn't take away from the entire experience. A bit pricey - $125 per person, but definitely worth it. Also, the drinks here are phenomenal. I had the Mr. Chirisi (I think that's how you spell it), and it was top 5 cocktails of all time. 4.6/5 !!!

Valentine's Day dinner at The Chemistry Room is definitely a core memory for me. I love uni, tuna, caviar, and truffles more than words can describe, so I'll just say that those ingredients shined exactly how they should as the stars of a really beautiful meal. For $125 minimum per person, this is an expensive dinner. However, for around 15 courses (including the yummy miso soup appetizer served in a chemistry beaker, the matcha, and the dessert), this is a pretty standard price for good omakase in New York, and I would say the quality we enjoyed last February was off the charts. Some of the pieces were just so satisfying and memorable (uni nigiri, tuna flight) that I feel the steep bill was not SO crazy. Proof: I'm writing this review more than 7 months later, and when I look through the photos I took, I remember how almost each piece tasted like it was last night. I wish we had the crème brûlée dessert when we went, so I hope that will still be the dessert course on my next visit! The ice cream "macaron" dessert was nothing special, and I was surprisingly full near the end of the meal (which is really rare with omakase, so I was impressed haha). A more special addition to our meal was the cocktail selection, beautifully presented and tasty. Though I am also a fan of the chefs' selections at Sushi Lab Rooftop upstairs, I would recommend saving a little extra money for an evening here if you're hesitating between the two. The calm, elegant atmosphere feels more in line with the price point of these meals. I also felt that the level of service and timing was better (which makes sense since the chefs prepare the same course for everyone at the same time, one course at a time).

Finally tried the chemistry room by sushi lab and it was so good! The fish was very fresh and had some interesting flavor profiles. My favorite would be the king salmon. The omakase is the only option here, at $125pp. I think it would have been a good deal at the previous price point. The add on handrolls are expensive and didn't think it was worth the splurge. A good place for a nice occasion.

I've read and seen a lot about this place and was very excited to try. I came in knowing it's not traditional omakase and to expect some interesting toppings, etc. The front of the restaurant is unassuming but once we entered it was a brightly lit spot. We were greeted immediately and given wet towel and asked if we wanted any water. The omakase was 15 courses and they provide you with the list of the courses and description. It took about 15 minutes before the omakase courses started and I was pretty shocked when one of the glass jars that held the miso soup completely shattered from the bottom when they were serving it to the table next to us. That got me a little worried that would also happen to me because the glasses did seem pretty fragile and I wondered if they were meant to hold scorching hot soup. Nevertheless, the miso soup was pretty good, albeit pretty gimmicky to be served in a chemical glass jar. There were a few standouts for the sushi, in particular the otoro, king salmon, and uni which had good flavor and king salmon and uni was unique. The tamago was surprisingly good and I liked it had the subtle flavor of shrimp in it. The Japanese cheesecake for dessert was also really a lovely end to the meal and very light and delicious. I was a bit disappointed with a few of the pieces because the texture seemed off, in particular the hotate, lean tuna, and shima aji. The snapper with the uni rice would've been quite good since flavor was balanced if only they didn't overcook the snapper for me meanwhile my partner's was seared but not fully cooked which is how it should have been. The uni was also dried out. The wagyu was also pretty good but wish they would've cut the beef a bit thicker to give it a nicer texture, it felt a bit like I was eating small bits of meat ends. I think overall I respect that they tried to be innovative but I was not a fan of the poor/gimmicky presentation, and lack of attention to detail when cooking the fish to ensure consistency. Also, I would suggest they invest in some better air purifiers because it smelled very smoky throughout the omakase from the several times they smoked the fish even though we were sitting quite far from the counter. I also had a bunch of flies hovering around my table the entire meal which was a turnoff. Service here is very friendly but they can be more attentive, I had to ask several times before my ginger was refilled. I think if you are a fan of modern sushi, this is not a bad place to try. As a traditionalist omakase fan, I think I was seeking a bit more refined flavors and service as well as a bit more attention to detail. I would also suggest sitting at the counter rather than at a table because some pieces came out really cold and dry by the time it was served at the table.
