A Hit Korean Fried Chicken Stall From Baltimore Is Coming to D.C. | Eater DC

"A fledgling Baltimore stall slinging South Korea’s famed gangjeong chicken, The Chicken Lab operates a fast-casual counter in South Baltimore (1065 S. Charles Street) inside Federal Hill’s Cross Street Market and will add a second D.C. location next year. Husband-wife duo Daehee “Danny” Wi and Hyeyeon “Hye” Jeon run the operation—Wi leads the kitchen and Jeon handles everything else—and Wi draws on childhood flavors from Incheon, where whole streets are devoted to gangjeong. The signature dish features battered, double-fried chicken tossed in a sticky, sweet-and-spicy sauce with chewy fried rice cakes, onions, and peppers, finished with scallions, sesame seeds, peanuts, and a side of pickled radish; Wi also applies the gangjeong treatment to shrimp and vegetarian dumplings. The fried chicken bowl, a slightly lighter option, combines steamed white rice, mixed salad, glassy japchae noodles, fried chicken, and a drizzle of homemade sauce, while kimchi appears atop cheese fries and in stir-fried rice with a fried egg. Wi reports about 60–80 gangjeong orders on a typical Saturday (doubling on home Ravens or Orioles game days). If you’re looking for top tier chicken in Baltimore, the Chicken lab is the right place for you. Their Korean chicken, specially the Gang-Jeong, is very crunchy, flavorful and perfectly seasoned. The portions are very generous and the price is really fair. The chicken is a standout , on a soft brioche bun with coleslaw and pickles is just satisfying. This would definitely be one of your go to spots whenever you’re craving fried chicken. I can’t wait to go back to Baltimore !!

Very disappointing, I was on my lunch break today and was craving something different a chicken sandwich and figured I would give this place a try. It was a waste of money and time, I am not sure if this looks normal for a Korean chicken sandwich but it was not what I was expecting. I am pretty sure it was very undercooked due to the color and it had a slimy texture, I took two bites and couldn’t do it anymore. Also didn’t have time to go back and fix it due to being on break at work and then taking 12-15 minutes per sandwich.

I got the chicken bowl. Chicken is very fresh abs a lot of it. Kinda hard to eat. Wrong container. Trying to fit too much in the container. Taste great However. The noodles are awesome. Service is slow slow

I went to the chicken lab expecting bold and delicious Korean flavors. The chicken sandwich, in reality was pretty bland, and the sauce tastes like a space Big Mac sauce, no authentic Korean flavors at all from either. The chicken wings however were pretty good. Would I come back again? No, there's better Korean fried chicken spots to try.

I’m absolutely crazy about Dakgangjeong (Korean-style sweet and crispy fried chicken)! This place is one of the few that serves authentic Korean-style Dakgangjeong, so I had to check it out. The price and portion are reasonable, and the flavor is great. However, I have one suggestion—if the batter was slightly thicker or fully coated, it would be even better. Some parts without batter made the chicken a bit tough. I'd definitely come back again!

I ordered on GrubHub, so I can not speak to the customer service. The food was definitely a 5 out of 5 🌟. I ordered the soy garlic chicken wings and fries. The wings were fried to perfection 👌🏽. They were crispy with the right amount of sauce. The fries were delicious. The orange sauce that comes with it is a little spicy but still tasty. I also ordered the soy garlic chicken and rice bowl. There was barely any sauce on it, but it was delicious. I enjoyed the milk and yogurt soda. FYI, there is only one flavor. I tried ordering again the next day, but they were closed. Next time!!

Really tasty food. Absolutely nails that "just a bit of spice, but tons of flavor" sweet spot. The portion size was well matched to the price. Cross Street Market has got a lot of cool spots, but it's really noisy. So minus 1 star for the atmosphere.

Located inside of Cross street market, this is a good lunch time option. They have hibachi style bowls and a nice amount of other menu options. You can order digitally at the counter, but staff is there to answer questions. I got a chicken and shrimp mixed bowl, and requested no soy sauce, which they were able to accommodate! The food was very tasty, service was good, and you have the option to dine in inside the spacious market if desired.

This was one of the best chicken sandwiches I've ever had. The cook on the chicken was perfect, and the Korean fusion slaw and sauce took this sandwich from technically impressive to masterfully inspiring.

The miso sauced chicken was delicious even the next day the perfect amount of sauce without making the wings lose their perfect crunch. The fries were super good as well everything is made to order absolutely delicious. You can order and pay at the kiosk which makes the process more quick and efficient

Wow!! The Chicken ganjeong was sweet and savoury. The chicken was tender and the rice cakes were perfectly chewy. The house sauce was so good I even ate my grilled veggies. The place is cute and next time I really want to try the fried chicken sandwich, with more of that wonderful house sauce.

I ordered my meal through doordash and when I received it, it was fairly warm. I ordered the teriyaki chicken and shrimp bowl and the soy garlic boneless wings with fries. I was disappointed in the bowl. The shrimp were really small and the chicken could have been seasoned a little more. I didn't really care for the sauce on top either. For me and my tastebuds this just wasn't the meal for me. Other's may like it, try it for yourself. The soy garlic boneless wings were okay. The were fairly crispy but the flavor was a little too much for me. I don't think I liked the soy too much. The fries were just okay, nothing special. I don't think this is the place for me but I would suggest you try it for yourself.

This is probably my favorite food option in Cross Street market, and I crave it on almost a weekly basis. Really good fried chicken (I love the jalapeño garlic), and don't skip the fried rice cakes! I also love getting the bowl and the Korean style BBQ chicken. The spicy mayo dipping sauce also hits the spot. It's very easy to order online and pickup, and service is solid. Very convenient and addicting!

I like this place and I have been here many times. The service seems to be better. You order at a kiosk and pay there. You can select your dish and options for preparation. It takes about 10 min for them to make your food. I usually take the food home but there is a cool seating area with places near by where you could get an alcoholic beverage. I get the chicken dumplings with the traditional spicy sauce. It is so good. Crunchy, sticky, spicy, sweet. The portion size is very large too. This is a quick easy option for sit down restaurant quality food to go.

Looking forward to this- love Korean fried chicken! So we ordered sandwiches and fries. Man, so disappointed. The chicken was fatty and rubbery- texture was terrible. Crust crispy, flavor good, heavy on garlic, but man- fatty, rubbery chicken thigh not our thing! And the mayo-based sauce was rich and creamy. But the sweet chili sauce was SWEET- and zero spice. Made our teeth hurt. My wife tossed it after 2 bites; I was really hungry and kept hoping it was a bad bite or something- but between the rubber and the sickly sweet I gave up half way through. The fries at least were good- crispy, salty, hot. But for what was probably a pound of them only 3 tiny ketchup. Never again!

The sandwich is definitely the way to go after having tried the sandwich and the rice bowl. It is cheaper and the portion is relatively the same. I opted for soy garlic this time, but there definitely was not enough sauce. Regardless, everything was tasty and it was a great move to put the slaw and pickle in a separate container so the buns didn't get soggy. My only complaint is the shop should've labeled the sandwiches since our group order of 8 sandwiches all came together and it was a puzzle trying to figure out which sauce was on what sandwich.

Love everything about this place. The Chicken Gang-Jeong is my favorite dish and the portions are huge. Also go for the regular chicken bowl often but beware of the "Call The Doctor" sauce. I'm always ordering hot and spicy food but this sauce is serious but still really good if you're into spice. They are located conveniently right in the middle of cross street market where musicians are often playing. I'll make special trips across town just to go.

This was recommend to me by my wife. She had gotten it before and raved about it. We stopped by today, and while I enjoyed it, she was a bit disappointed. For what we got, I would say it is a solid 3.5/4 stars. OK value, OK quality, OK service. The prices are relatively reasonable for the markets, and the concept is appealing. Sandwiches were not huge, but were a reasonable amount of food. The spicy fries were good too, but a bit small. The only real issue for me was the service. It took about 15 min for them to prepare our food. And during that time I only saw them put out maybe 2-3 other orders... not terrible, just not very quick considering the minimal prep required. Will consider going back, maybe next time my experience will be closer to the one my wife raved about.

I was searching for wings on Yelp and came across this new restaurant!!! I was intrigued by the menu and excited to eat some Korean chicken and ordered delivery! We got the chicken gang-jeong with the original sauce. The rice cakes were amazingly chewy and I could not stop eating them! The boneless chicken pieces were well seasoned in a sweet and spicy sauce. The veggies were a nice relief from the heaviness of the rice cakes and chicken. Overall an awesome dish! I also couldn't pass up the chance to get Korean fried chicken so got the wing combo. I opted for the soy garlic sauce which was pretty subtle but the wings were well fried. I opted for the seasoned fries and might forego that option next time. I put both the wings and fries in my air fryer due to heat them up from the delivery. Would highly recommend! Excited this spot is in Baltimore!

This is so exciting to be the first reviewer! So I just came from an event that was catered by the Chicken Lab. They are officially opening on Dec 17th. I liked this sandwich infinitely more than the famous Ekiben. I got the sweet and spicy fried chicken sandwich and it was incredible! Like 10/10! Reminded me of a much better take on the chick-fila sandwich with the sweet and spicy sriracha sauce. My friend enjoyed her garlic chicken sandwich. They also had kimchi fried rice for the vegetarian folx. Overall, the food was a big hit! Welcome to Federal hill, Chicken lab!! I can't wait to try more of the menu

I like that I can order online and by the time I walk over my food is ready. I don't recommend the tofu but the chicken bowls and sandwhichs are great. We like when they have the ca-bab (spelling?) special.

We decided to get dinner near the BIL's house and Ramen was the request. The BIL said that there was a good place at Cross Street but alas it was closed on the day we went. I did find this spot and it seemed intriguing, so off we went to get some dinner. I got the Chicken Gang-jeong with a choice of either soy or spicy chicken, I of course chose the spicy. The rice cakes were as expected chewy, and cooked just right. The chicken and sauce covered the entire takeout container. I wish there was some pickled veggies (turnips and/or carrots) just because the sauce was so much. Some rice may have helped with this also but i think I just needed something sour to just cut through it all. Overall, I would go back but i may ask to see if they could get me a side of pickled diakon. If not maybe see if Theo's (the Banh Mi place) would be willing to sell me a side.

It's unfortunate that it closes at 8, I've forgotten about that and missed the delivery window, but the food is awesome. The spicy sauce is indeed spicy, the price point is competitive with BRD, another fried chicken place a few steps away, and the kimchi fries are top notch when they're all hot and melty

I believe I had seen this place on tv or some kind of food advertisement and was so glad when I realized I was just blocks away. Ordered threw their kiosk pad and took about maybe 15 minutes for wait time. The sweet chili sauce on the wings were nice chicken was fried extra hard but I gotta say not much to really rave about. The fried rice cakes were actually good and I'm glad they weren't as bland and chewy compared to my last experience eating rice cakes. The fries seasoned with some kind of powder seasoning but it was flavorless and sort of disappointing. The boneless wings were supposed to be seasoned with lemon butter but had no seasoning on it at all they gave you a wedge of lemon on the side and that was about as much of that seasoning you were to get. It's a nice spot but nothing what I thought it would be.

This place is AMAZING! Stopped in for lunch after a long walk so we wandered into Cross Street Market and ended up at TCL. The chicken gang-jeong was incredible. It was freshly fried, covered in the most delicious sauce, and was so moist. The peppers and onions added a nice crunch to offset the softness of the chicken, and the pickled daikon was a great palate cleanser. I'm already dreaming of when I can come back

There were so many options at the Cross Street Market that looked delicious, but my heart belongs with Korean food. So I really had to try this place out as I am a sucker for fried chicken and rice cakes. Both are the ultimate comfort food that you can't find too easily around the city. Onto the food! We ordered the Chicken Gang-jeong and the Kimchi Cheese Fries. We had to wait 10/15 minutes for our food, which felt like forever since our mouths were salivating over the smell, but it was also a good sign since it probably meant that our food was made fresh! The chicken was so juicy and tender, with a light yet crunchy fried outer layer. Absolutely phenomenal. And the fried rice cakes were my absolute favorite as I am obsessed with the texture! They were so chewy and absorbed all of the delicious flavor. And the sauce was very thick and was a perfect combination of sweet, spicy, and umami. The best was taking a combination bite of both the chicken and the rice cake together-- so yummy! For the Kimchi Cheese Fries, the cheese covered the fries like a warm blanket and was melted to perfection. The Kimchi on top added another dimension of crunch and tanginess, as the cheese and fries were only soft and umami. Since we did order takeout this time, the food did taste fairly fresh. But my only complaint was that the fries were a tad soggy-- but this is inevitable considering that they are covered in warm cheese and were packaged. I am absolutely obsessed with the food I got from this place. My mouth is literally watering as I write this review! It was worth the wait as the food was so fresh and delicious! Would highly recommend checking out this new restaurant when visiting the Cross Street Market!

Why did the chicken cross the road? To head over to Cross Street Market and enjoy Chicken Lab + a fun evening out! The Chicken Lab mashes up Korean street food with food hall vibes for a great time out with friends. They must call it Chicken Lab because they engineered an excellent fried chicken sandwich with a unique sweet flavor profile! And don't overlook their gang jeong, it is finger licking good. Overall Chicken Lab was a great fast casual stop, and adds character to the Cross Street Market lineup.

For lunch I tried the a Chicken Gang-jeong in sweet and spicy sauce and it was delicious! I had to drive home (about 15 min away) and the chicken was still super crispy when I got home to eat it! The sauce was so good, sticky and flavorful. I thought it was going to be "burn your face off" hot, like most Korean fried chicken, but it wasn't that hot at all, I could have cranked it up a bit more, but it did give me a slow burn the more I ate it. The rice cakes were so good in it! I never liked them at Korean bbq places that much since they are usually unseasoned but these were tossed in the delicious sauce and they were awesome! This dish also had peppers and onions, no rice, but I think rice would have made me overly full, so this was honestly perfect, I didn't miss anything! Would def get again!

This spot has amazing food and service! And the atmosphere is also great because it's right inside of the Market Place down in Fed Hill. This Chicken Sandwich was fresh, crunchy, and tasty, and the coleslaw was perfect on this! I also got the Sweet and Spicy Kung Pao Chicken with White Rice a different day before having this sandwich, but I realized I forgot to take a picture of that dish after already eating it LOL. That dish was amazing too! I highly recommend checking this spot out!

I had the soy garlic shrimp gang-jeong. I was happy to be able to order something from here that wasn't spicy, bc I'm really sensitive to spicy food. I finally got to eat those little rice cake things that usually go in spicy korean dishes but it wasn't spicy and it was so good I loved the the texture! My boyfriend loved the sweet & spicy chicken gang-Jeong too! It was just a little pricey for me tho, for a booth that you order from in the cross street market.

One of the many great places to try in cross street market! We went for lunch and ordered to go but there are also areas where you can eat inside. The soy garlic chicken combo was delicious; chicken is very crispy and the flavor was tasty. They have many to choose from as well as a boneless option. Even taking it to go it was still hot and crispy when I got to my destination. Very good!

They're located inside Cross Street Market, and they specialize in Korean fried chicken BUT THEY ALSO JUST STARTED SERVING BINGSOO, AND IT'S THE BEST BINGSOO I'VE HAD IN THE DMV. And yes, that required all caps in case you were wondering As for food, here's everything I got: Sandwich Combo ($12.95) - the highlight of my meal for sure (savory at least). I got spicy and LOVED IT! It had nice heat to it, and the sauce was so flavorful. Also, I thought it was a great value. $12.95 for a sammie, drink and fries? YES PLZ. And the sandwich was BIG, too. Chicken Gang-jeong ($14.95) - you get a nice amount of chicken + fried rice cake along with diced veggies and pickled radish on the side. I got the traditional flavor, and I thought it was solid. My fave part of this dish would actually be the rice cake though. I thought it was cooked really nicely, and it had this phenom texture that was addicting. Teriyaki Chicken & Shrimp Bowl ($12.95) - served with japchae (korean vermicelli noodz), salad and rice with a generous amount of protein! Apparently one of their more popular menu items b/c it's great for grab and go. Strawberry Bingsoo ($7.95) - OMGGGGGGGGGGG, THIS BINGSOO! My only regret was that my mom wasn't there to share it with me. She would've LOVED this. Unlike other binsoo's that are made with ice, this is made with milk, and the texture is so amazing. Honestly, I would come back for this alone, lol. Additional notes They're apparently opening a 2nd location soon which is exciting! I'll keep you guys posted once I know more. They offer Milkis + banana milk here which I LOVE! Banana milk is so nostalgic for me, lol. I got it all the time as a kid, and it was def one of my favorite drinks. Don't knock it 'til you try it.

At first I was excited to try Korea fried chicken here but the customer service is abysmal. Earlier this week I came to this establishment to order food and was ignored by the staff when trying to order food. Please teach your staff better customer service, I will not be visiting this establishment again.

So, I did try chicken lab over the weekend, two dishes to be exact. My verdict I liked one more than the other, but very tasty nonetheless. I had the fried chicken drumstick combo with a spice level of call the doctor. I loved it, don't even go there if you can't handle heat. Will try other flavors on subsequent visits . They also have a Korean street food Gang-jeong, I had it with chicken (boneless) and their sweet and spicy sauce. I liked the veggies and the rice cake, but really was not into the chicken, maybe I just don't like boneless chicken, it wasn't crispy enough for me. I will do the shrimp next time and have them use a different sauce with more heat.

Great spot inside Cross Street Market in the heart of Federal Hill! I'm always down for some Korean Fried Chicken, so it was a no-brainer for my friend and I to stop here for a bite. We both got a wing combo, mine with the fried rice cakes. I really loved the crunch of the chicken and the jalapeño sauce was solid. The rice cakes were also a nice change from the typical fry that I otherwise would have gotten. The seating inside the market is open, like a lot of other markets in the city. Grab your food, find a seat, and enjoy. There are actually a lot of TVs throughout so if you're hoping to catch a game here, it would definitely be possible. We came in on a Saturday afternoon and it was pretty empty, so it was a nice change of pace from the bustling you usually see when around Fed Hill. I'm sure it gets more rowdy at night. I found the price to be pretty reasonable with the amount of wings I got, and they tasted great. Definitely will have to come back to try some other sauces, maybe even go for their hottest one to see how it is! Give this place a chance if you like fried chicken, they won't disappoint!

If you watch mukbang, then you know dak(chicken) gangjeong is a popular Korean street food and I was so excited to see Chicken Lab serve this gem. It's a mix of boneless chicken, rice cake, peppers and onions all fried and tossed in a traditional Korean sweet and spicy sauce. The chicken was double fried so it was extra crispy and very moist, the rice cakes were heavenly slight crunch outside and chewy center. Pair each bite with a pickled radish it was chefs kiss. The chicken sandwich was also great, the batter is not too thick and has a good texture. Only one downside is that there wasn't enough soy garlic sauce on the chicken. No doubt I will be coming back here often !

This was disappointingly bad. Friend and I got the fried chicken that was supposed to come with rice cakes and radish with two different sauce types. 1) The sauce was barely present on the spicy sweet order, the other (soy garlic) had no sauce at all, 2) one order had twice as much chicken as the other, 3) there were NO rice cakes in either of our orders- we ordered on site and waited, and they certainly didn't mention having run out when they handed our boxes to us, 4) the most serious issue- we ate our food immediately across the street and it was lukewarm. The chicken had been previously cooked (it was also hard and stringy), so it wasn't raw inside luckily, but the person who was supposed to "re-warm"/toss in sauce clearly didn't care. First time in my life I've tossed out fried chicken while hungry. If only there were a Bonchon in the city :( Order total was ~$35 for some of the most subpar food I've eaten in Baltimore.

Nice quick place in Cross Street Market. Fairly new vendor. Glad they are there. There was quite a bit from which to choose. I had the chicken rice bowl. It was plenty of food. Rice, fried chicken, noodles, lettuce & tomatoes. Very tasty. I also ordered fries - just regular fries though there were also some flavored ones. Fries were ok - I imagine the flavored spicy ones were good.

I was searching for restaurants in Fed Hill and came across this place, thinking that they have Korean food. I was very happy to see one and was pleasantly surprised with how tasty their Gang-jeong and chicken was! As a Korean, I can say that their chicken was cooked really nicely and sauce was on point! I really liked the way they added in veggies to the mix. I highly recommend anyone looking to try Korean chicken, this is one place they really need to try out!

I'd tasted one of their dishes previously and found it pretty good, but have had two negative service experiences. I arrived to pick up my order only to be completely ignored while standing at the counter. A woman who apparently worked there had her back turned towards me as she scrolled her phone. She didn't budge when I said Hello? after several minutes of standing there watching her scroll through her phone. She finally turned and scowled at me before calling the owner who refunded my order as I requested. I hope another place opens in the area that is authentic and friendly to all its customers.

The chicken was so crispy and the rice cakes were so pillowy soft! The pickled radish tasted especially good with spicy flavors. Everything was made fresh and everyone was super nice. Absolutely coming by again :)

Chicken lab has gotten better again and the portion sizes are more like what they used to be. Flavors are still on point and I'm back to ordering here regularly.

Walking through Cross Street Market hungry and the aroma coming from The Chicken Lab is hard to resist. I had the Chicken Rice Bowl with sweet chili sauce and it was definitely yummy! I could probably eat that everyday actually ‍

Great chicken sandwich, worth going back for...bun is kinda standard, although they do a cool thing where they do the logo with a branding iron on the bun. Toppings are fresh but again kinda standard, tomato and iceberg, an interesting slaw would get me to that fifth star. Fries are awesome!!

I always try to Yelp when I'm in a new area. Super helpful reviews! I went with the chicken gang jeong with chicken in the original sauce. I loved loved loved the chewy rice pieces in it. The sauce was delicious, not too spicy. The veggies were great. Everything was very fresh. I would totally recommend stopping here.

The service is very slow. I went to order and the customer service representative never even lifted her head up from her phone. She just pointed to the kiosk so I could order. I ordered for my son and me. His order was ready 15 min before mine, but they didn't even notify me. So, his food was cold by the time they called my name. I even asked was my order ready after I saw them put together his order, and she replied no. There were no other orders before me, and it took about 40 min. I stood there and watched the entire time and they took their sweet time. I won't be going back.

I ordered the chicken gang-jeong. While the chicken was good, they forget to add rice cakes to my dish and did not provide me the pickled radish that was supposed to go with the meal. I paid full price for a meal missing two essential items. I didn't realize this until I left the market and am disappointed at the quality control. There was no excuse for this since I was the only customer at the time and were not busy at all.
