Visited The Collab this past Saturday for dinner with my family and had a very pleasant experience overall. The restaurant is located inside a hotel I hadn’t been to before beautiful lobby and a great first impression. The restaurant is immediately to the left as you enter, with stylish aesthetics that work well for a family meal, a night out with friends, or even a date night. One standout was their open kitchen you can actually see the chefs handcrafting pizzas and sliding them right into a stone oven. My son loved watching that, and the pizza did not disappoint. I ordered the Branzino for my main course, and while the fish was well-cooked and flavorful, it was served without any sides, which felt incomplete. Most places usually pair this dish with something, and I would’ve appreciated the server giving me a heads-up or suggesting a side. Thankfully, my wife shared her pasta, which helped round out the meal. On the plus side, their wine selection is excellent my wife and I enjoyed two outstanding bottles. All in all, a beautiful spot with great ambiance, solid food, and just a small service detail that could’ve made it a five-star evening.

The Collab is our absolute favorite restaurant. We’ve dined here many times, and the food is always outstanding. We recently hosted a private dinner for 13 guests, and everything was flawless. The private library room was set up beautifully with orchids and a warm, elegant ambiance. The food was superb—our guests loved every dish and were so impressed they even asked for the recipe of one course. Compliments to the chef for an exceptional menu. The service and attention to detail were impeccable, and as always, The Collab truly feels like home. Highly recommend for both intimate dining and private events. A heartfelt thank you to Massimiliano Giua for his incredible attention to detail and for ensuring every element of the evening was perfect. We couldn’t have chosen a better place to host such a meaningful gathering.

Chef Nico and his team have done an exceptional job with The Collab. The atmosphere is cozy with a great selection of music. Great for an intimate dinner date or girls night. Jose was very attentive and efficient. The food was truly incredible from presentation to taste. The crispy cauliflower was packed with flavor. The grilled octopus was incredible and charred to perfection. I’d recommend the tenderloin truffle as a main dish or the beef cheek pasta. Both were full of flavor and truffle. The desserts were just as delicious. The apple tart and pavlova are definitely a must. Overall, The Collab delivers an outstanding dining experience and service. It’s a wonderful addition to The Thesis.

This was a fantastic dining experience with my family and my daughter who goes to University of Miami. The atmosphere is wonderful. The manager Hector is very responsive and very involved in the customer experience. Hector will treat you like family. The bartender Kristoff is a cocktail magician and has a very cool vibe of his own. I highly recommend this restaurant for the atmosphere, the food and the cocktails. For breakfast, the Shakshuka was out of this world.

What an incredible experience. I went with my parents to check out the Taste the Gables menu but we didn't expect this world class service. The attention to detail was outstanding and the food itself was delicious. Thank you so much to the chef and the staff (especially Jose) for making our evening so special. We will definitely come back! Foods tried: Octopus, beef tartare, crab croquettes, chicken, picanha, salmon, tiramisu, and toffee pudding. 10/10

Must try in Miami. Food was great tried multiple apps and entrees. It was all flavorful well balanced. Beef ribs was the star and sticky toffee pudding for dessert is a can't miss. Wine and cocktail menu had something for everyone. The "Hey Now" was a favorite of the night, a tequila based cocktail that was not overly sweet. The ambiance was nice intimate, good for anything from a family dinner, date night or girls night out. The service was what took it over the top, you can tell the place was being ran by professionals. Hector and Aaron if I'm not mistaken are the gentleman who made my night, they made sure we were being taken care of. The attention to detail was something you don't get in most places. The combination is what will keep me coming back. Meal was great but the hospitality is why I will definitely be back.

I just had the pleasure of dining at The Collab, @ The Thesis hotel, and it was an exceptional experience from start to finish. We began with the crispy cauliflower, which was perfectly glazed and packed with flavor. The blue crab croquettes and grilled Spanish octopus followed as appetizers; both dishes were outstanding, with the octopus being one of the best I’ve ever tasted. The octopus is a big deal!!!!! For our main courses, we had the branzino, tenderloins, and picanha. Each dish was a masterpiece, cooked to perfection and bursting with rich, savory flavors. The branzino was delicate and fresh, the tenderloins were tender and flavorful and the mushrooms that came with it were outstanding , and the picanha was simply divine. The dishes look simple but packed with so much texture and flavor. Dessert did not disappoint either. The apple tart was the best I’ve ever had, a perfect balance of sweetness and texture. While the green tea pavlova dessert wasn’t my favorite, the fruit in the middle was a delightful surprise and added a refreshing note to the meal. Overall, The Collab delivered the best version of every dish I’ve ever had. Can’t wait to go back!!!!

I can’t believe this restaurant isn’t one of the most talked-about spots in Miami yet—because it absolutely should be. From the moment you walk in, you’re greeted by a team that’s clearly passionate about what they do. The servers are warm, attentive, and genuinely eager to make sure every guest feels welcome. The bartender is an artist behind the bar...every drink is a masterpiece, perfectly balanced, and visually stunning. Special recognition has to go to the manager, Max. He’s the kind of leader every restaurant dreams of: professional, approachable, and laser-focused on making sure every detail of your experience is flawless. You can tell his influence touches every aspect of the service here. And the food… wow. The chef and kitchen crew are ridiculously talented, somehow managing to fuse flavors from different countries into dishes that taste like they were meant to be together all along. Every plate is vibrant, perfectly cooked, and bursting with flavor. The creativity in the menu is matched only by the execution, this is fine dining without the pretension. Whether it’s the incredible cocktails, the world-class food, or the impeccable service, this place will blow your mind.

had a lovely time! me and my boyfriend both tried the preselected 3 course meal for $65 and it was delicious! drinks were good, island girl was my favorite and they also gave us some rose which was nice (: we got the gem salad and octopus for starters, both very tasty and great flavors! candied walnuts on the salad were so yum. got the pichana and salmon for mains, the salmon dish was amazing! the desserts were sooo so good! the tiramisu was light and refreshing and not as sweet, the sticky toffee was delicious with the ice cream and bourbon caramel was wow! thank you for the culinary experience

Service was impeccable, the 40 oz. Picchana was well worth it, grilled on an open wood fire! I love the atmosphere in this restaurant, it's warm with greenery hanging from the ceiling, and a touch of topical flare with a flamingo behind the bar! We brought our own bottle of white wine, they didn't charge us a corking fee and brought us a wine bucket with ice. We felt like we have been friends with everyone for many years. FYI any seat is extremely comfortable and the music is low enough to hear but have great conversations we'll be back!

I can't believe I had not written a review. Been here so many times since it opened. The Collab serves innovative and absolutely delicious food. Chef Nung creates magic for your palate. The service is always attentive. The decor is beautiful and welcoming, good for a meal with family and friends or simply to enjoy a bite at the bar.

There are several reasons why I this restaurant DID NOT meet the mark. First, the parking is very limited and confusing. There is limited street parking and there is expensive valet parking. It's not very obvious, but there is self parking at the hotel although it's five dollars for the first hour and eight dollars for 1-2 hours. When you get out of the parking garage, the courtyard is actually quite lovely and spacious with lots of nice greenery and lights. The restaurant itself is also very beautifully decorated, it feels modern with lots of greenery and beautiful light fixtures. We showed up for the happy hour thinking we could also potentially order a few items off the regular dinner menu. We were there at 4:30 PM and they said that they are very strict with the menu times... dinner menu started at 5:30 PM which meant we HAD to order off the happy hour menu ONLY. Being vegetarian, I was kind of disappointed because they were two options: the brussels sprouts and the pizza. The pizza ended up being just a cheese pizza and the brussels sprouts were actually deep-fried in the same oil as the chicken so I couldn't even eat the brussels sprouts. My ONLY option was eating cheese pizza like a chil at a Chuck E. Cheese birthday party... My husband and I ended up sharing one cocktail, he got the chicken and the salmon happy hour dishes, and I had the super exciting (being sarcastic) cheese pizza. The cocktail was good and the food was decent, but the prices were definitely high and the portions were smaaaall. Not to mention during this whole experience, we were literally only people in the entire restaurant during happy hour... Overall, I was really not too thrilled with this experience. I wish they were more accommodating on several points. First of all since the happy hour menu does not have any vegetarian options or even vegan options, I would think they would be a little more accommodating on offering other items or letting me order from the dinner menu. Also, this place was really overpriced. Our whole evening of having basically a few snacks because the portions were teeny tiny cost about $60 for two people, and we were STILL HUNGRY AFTERWARDS. We ended up going home and having more food because whatever we ate did not fill us up. I wouldn't go back here. I hope they improve their offerings to vegetarian and vegan people, increase their food portions, become more accommodating, like offering dinner during happy hour.

Stopped by to try and went for their Miami Spice dinner. First I had an Island Girl that was fire. Absolutely delicious. For the appetizer I had the grilled octopus and it's got to be some of the best I've ever had. Totally impressed. For my main I chose the short ribs that were incredible! A huge portion as well. I could not finish it. Unfortunately I had to leave so I too my dessert to go and it was yummy later that night. The service is beyond amazing. Very involved without being intrusive. Lovely location with on site paid parking. The ambience was lovely and the decor very chic. I'm looking forward to becoming a regular. Well done!

The bottle of Cabernet Sauvignon (recommended by our server) paired excellent with the Crispy Cauliflower, Blue Crab Croquettes and the Chicken Sausage and Cilatro Pizza, followed up by the Matcha Pavlova... DELICIOUS ON SO MAMY LEVELS! Approximately, $75/each before tip... DEFINITELY WORTH THE 5

I went to the Collab with a friend for their fantastic Miami Spice menu. It is located inside the Thesis Hotel, which has paid parking. It's a bit hidden because the Mamay restaurant is easily visible, but the front desk directed us to the other side of the hotel where the Collab is located. First off, there are some great vegetarian choices! I had the roasted beets, which were delicious, as an appetizer. Then, they were able to do the mushroom gnocchi dish vegetarian, and it was great and filling. The matcha dessert was so delicious with the yuzu ice cream! I don't usually go for the pavlova, but I would return just to have theirs again! The waiter told us the concept is Mediterranean and Asian fusion, and their chef is from France. The service was friendly and helpful. I appreciated that our waiter was actually vegetarian himself! Some places are not as accommodating to vegetarians when it comes to the Miami Spice menu, but I was very appreciative they were able to leave out the ham from the gnocchi, so I could enjoy it too. The ambiance was fun and the decor was trendy and great to look around. I thought the prices were reasonable considering the vibe of the restaurant and that it's attached to a nice hotel. I will definitely be coming back to try more of the veggie tapas dishes and some of the pizzas as well!

Pretty poor in every way except looks. The ambiance is nice but the menu for lunch is five items. Service was poor from the moment I walked into a non friendly bartender to the server who was nice but seemed lost. I ordered a nice bottle of wine and it literally never showed up even asking for it twice. Eventually I told them just forget the wine. Serving sizes were small although the items they do make were ok. Disappointed as the reviews made this place seem great. Unfortunately it wasn't.

The Collab is in the old Orno space at the Thesis Hotel. The dining room is lovely and comfortable and big. The service was great and everyone was cool and young and interesting. The servers uniforms were all wrong, distracting really but that and only that is the negative because everything at the collab was positive and fantastic. We went for dinner during happy hour and had some delicious discounted appetizers. the cocktails were also discounted and so so good!!! We had negronis and martinis and old fashioned and their shelf liquors were all great and not the super cheap variety. Their regular cocktail menu looked interesting and creative but we stuck to the classics. For our meal we started with the Blue Crab Croquettes, Beef Carpaccio, and Crispy Korean Chicken. The chicken was juicy and had the right amount of sauce where it remained crispy but tasty. The blue crab croquettes had a little aji amarillo and they were crabby and creamy and 3 were not enough so we ordered more. The carpaccio came with a frisee salad and topped with a truffle aioli. Light and bright and perfectly sliced, the Carpaccio was a tasty snack. We had the Branzino - super fresh, with pickled fennel that added a nice texture and salt to the dish. The Airline Chicken was well seasoned and very juicy. It came with the tastiest sunchoke puree......never thought I would like sunchokes but here we are. Our friends shared the Tenderloin Truffle. Cooked to a perfect medium rare, the meat was tender and juicy and had shaved truffles all around and delicious and crispy onions on top. We ended the meal with the stickiest, tastiest, yummy and naughty Sticky Toffee Pudding - so crazy delicious. As I mentioned, everything about The Collab is a positive. Service, Ambiance, and top notch food. It is a great experience!!! Now please, have your servers wear black, buy them some cool aprons and get them out of those uncomfortable looking uniforms. Aside from that A+++++

Nice new spot in the Thesis hotel! My family loved the old restaurant in this location (Orno), so we thought we'd try the new one for brunch. The decor has stayed the same (which I don't mind because it's really nice), but the chef, restaurant name, and servers have changed. The servers were a bit off, with them bringing over some items that weren't ours and needing to ask a few times to repeat what we said a few times, but it wasn't really a big deal. I got the crunchy French toast which was AMAZING! So creamy on the inside with a nice brûléed top. My dad got the leek quiche we he also enjoyed. Overall, I would very much recommend!

I'm not a foodie my boyfriend is. I was skeptic about yet another restaurant in Miami. From the moment we walked in I felt a great vibe. We were lucky enough to meet Jose our waitstaff his recommendations right on point and service impeccable. We ordered the truffle filet mignon and branzino entrees incredible . The Piece de resistance for me was the sticky toffee pudding it was totally orgasmic. This place is a must kudos to Chef Nico

The food was great! Really did enjoy the portion size. Went for the Miami Spice menu and it was honestly, unique and wonderful! The server was great. She was attentive and still respected our space.
