The Best Holiday Drinks and Pop-Ups in Portland, Oregon | Eater Portland

"The Gibson is a newcomer to the picturesque Multnomah Village crossroad, but the charming bar has already acquired a devoted following of neighborhood regulars and post-commute happy hour patrons. The small space has an even smaller menu of bar snacks and drinks, but each one is thoughtfully curated and makes a statement. Take the house toddy “Ol’ Hot Hands,” which combines brown butter bourbon, honey, lemon, and spice bitters in a mug; its flavor evokes buttery sugar toast. Bartender Audry says a spiked eggnog cocktail is also in the works." - Ben Coleman

The Cocktail Heatmap: Where to Drink Right Now in Portland

"The Gibson is a neighborhood bar at its best: a low-key watering hole for the Multnomah community. Everything on the menu is $15 or under, making it easy to become a regular. Try the eponymous cocktail with olive oil-washed gin, or a barrel-aged boulevardier. Bar snacks like mixed olives, a charcuterie board, and grilled cheese are also available to pair with the cocktails." - Rebecca Roland, Janey Wong, Eater Staff

There's a lot of classy joints out there classy joints. You know, good bars, great service. Japanese whiskeys hiding in the nooks and crannies. The Gibson, though, truly outstanding service beyond beyond like, how would you even qualify or quantify the excellence of Bella? Not beyond measure, but like second to none service. Mixology, respect and love and just everything all stirred up (or shaken if thats your preference) into one perfect experience with a Christmas bow. The Gibson has some skill dare I say genius with mixing, service and ambiance all around. I love what they are doing here.

My wife and I love that we have a neighborhood bar with wonderful and well crafted cocktails, solid food menu, and excellent, skilled service. On a summer night we went and tried 6 different cocktails of their cocktails and each one was more impressive than the last. They regularly rotate their drink menu, demonstrating their skill and diversity in making a good drink! Would recommend, will return!

I feel so lucky to have this gem colee by in Multnomah Village! Their house created cocktails are fantastic. I usually like to stick to my usuals but I have been so surprised and delighted by their specialty concoctions I have branched out. Staff here is awesome. Highly recommend.

One of my favorite bars. Great atmosphere to sit and talk with friends and new acquaintances. The drinks are delicious and unique. The bartender is very versatile and knowledgeable. Can't go wrong dropping in for break.

Great little spot! Cocktails were craft-quality, using fun infusions and house made syrups. My only complaint is the lighting was way too bright—it was dark outside but lit inside like a coffee shop.

unrecognizable from the ice cream shop that was once there, the gibson is an intimate little bar with unique cocktails and a low key but upscale environment. we've been trying to visit since it opened but it has been very popular and filled to the brim for weeks. luckily, we were able to take a seat at the bar on a sunday afternoon and enjoy a handful of their signature cocktails. i had the "no fly list" and "ol' hot hands" (pictured), and both were mixed perfectly and very tasty. my partner and i shared an italian sandwich during happy hour (4-6 pm), so we got it for $1 off, and it was excellent; they use olympia provisions meats, so the quality is there! the bartenders were friendly and attentive. overall, looking forward to visiting again and trying their charcuterie or cheese boards!

Google
Awesome hidden spot in Multnomah Village. Great cocktails and the Italian sandwich really hit the spot. They were playing The Shivas when we were there, which was a cool contrast with the aesthetic. Normally you'd only hear good local garage rock in a dive. The service was quick and friendly. Highly recommend!

Google
Small neighborhood style bar serving top tier cocktails. Worth a stop for thirsty shoppers or those who find themselves in the area on a nice sunny day.

Yelp
A cute little bar for a cocktail before heading to dinner. We arrived early evening and there were only 3 other people and within the hour the place was full! The cocktails were good and the vibe is vibey.

Yelp
Cute bar and a good place for a date night. Love the vibe inside. I had no idea this bar was here but glad I found it. You order at the bar, which is fine, but no one ever walked over to take our empty glasses or ask if we wanted a refill and it was absolutely dead on the night I went. I definitely would have ordered another beverage... would just remove a star for service but would go back as the ambiance is great.

Yelp
Lovely little bar with a "fancy" vibe (for the Village) and a great selection of drinks. The owner is knowledgeable and nice to chat with. We love coming here for date nights and pre drinks before events.

Yelp
Great ambiance! Very cool vibes from the booths to the wallpaper to the lighting. The service could use a little improvement, being better at whipping down tables & perfecting cocktail orders (ordered a cosmo that is typically made with lime but they made it with lemon). Overall, definitely recommend this place & hope to see it grow!

Yelp
Great place. There was a creepy guy eyeing our table the whole night. Tried to get us to leave. The bartenders didn't notice or didn't do anything. Great drinks good vibe. Good bartenders. But gotta manage tough people in there. The guy followed another customer out harassing the person. We were super creeped out.
