unrecognizable from the ice cream shop that was once there, the gibson is an intimate little bar with unique cocktails and a low key but upscale environment. we've been trying to visit since it opened but it has been very popular and filled to the brim for weeks. luckily, we were able to take a seat at the bar on a sunday afternoon and enjoy a handful of their signature cocktails. i had the "no fly list" and "ol' hot hands" (pictured), and both were mixed perfectly and very tasty. my partner and i shared an italian sandwich during happy hour (4-6 pm), so we got it for $1 off, and it was excellent; they use olympia provisions meats, so the quality is there! the bartenders were friendly and attentive. overall, looking forward to visiting again and trying their charcuterie or cheese boards!
