"Chic and intimate, this modern yet elegant dining room sits discreetly on centrally located Dawson Street, with closely set linen-laid tables, smoked mirrors and a refreshingly relaxed atmosphere; while trams rumble past outside, the focus stays firmly on the plate and service is friendly, personable and highly attentive, with chefs even nodding hello as you’re greeted at the door. Head Chef Mickael Viljanen often presents the main courses himself and conveys clear passion, leading a dynamic kitchen whose accomplished, classically based yet creative cooking offers a 4- or 6-course set menu. Top-class French and Irish ingredients are treated with precision and an à la minute approach, yielding stunning sauces and intense, layered flavors, including a typically Finnish sweet/acid contrast in a signature foie gras royale with Granny Smith apple, walnut and smoked eel. Subtle Asian influences appear in dishes like steamed turbot with roasted yeast tapioca, maitake mushrooms, soy marmalade, truffle sauce and Château Chalon. Standouts noted by the Inspectors include lobster cooked in kari gosse with peas, redcurrants and lobster head sabayon, and milk-fed Lozère lamb saddle and shoulder cooked in kidney fat with asparagus, peas, morels, wild garlic and savoury jus gras.
