25 big restaurant openings that didn’t happen in Las Vegas in 2020 | Eater Vegas

"Boasting “World Famous Pastrami” and a Southern California pedigree since 1951, The Hat planned its first out-of-state expansion at 6239 S. Rainbow Blvd. in Spring Valley with pastrami dip sandwiches, chili fries, hot dogs, an outdoor patio, and a drive-thru; the signature thinly sliced pastrami is served on a French roll with mustard and pickle and dipped in the house au jus, alongside roast beef dips, burgers, cold sandwiches, fries with gravy, onion rings, and chili fries. There was zero movement on the permit during 2020 and signs are not good that it will open." - Susan Stapleton

Iconic L.A. diner Bob’s Big Boy to return to Nevada | Eater Vegas

"A Los Angeles–origin pastrami institution famous for its “World Famous Pastrami” announced plans to open a Spring Valley location, with paperwork pointing to a site at 6239 S. California’s The Hat opens soon in Spring Valley | Eater Vegas

"Boasting “World Famous Pastrami” and a Southern California pedigree that stretches back to 1951, this location — The Hat's first out-of-state expansion — is back on track for a 2020 debut in Spring Valley. Located at 6239 S. Rainbow Blvd., the built-from-scratch, 4,122-square-foot restaurant will include an outdoor patio and a drive-thru, and sits across Rainbow from Scooter’s Pub and a short distance from Archi’s Thai Bistro. With a reported construction budget of $750,000, the chain — best known for its thinly sliced pastrami served on a French roll with mustard and pickle and dipped in the house recipe au jus — plans to offer pastrami dip sandwiches, chili fries (served with tomato and pickle), hot dogs, roast beef dips, burgers, cold sandwiches, fries with gravy, and onion rings. The Hat currently operates 11 West Coast restaurants, including the legendary 68-year-old walk-up Alhambra location, and future opening hours or an estimated debut date for this Spring Valley spot have not been announced." - Bradley Martin

Yelp
I've been eating at The Hat for "60+years! and Can't Wait for the Opening! here in Las Vega! I'm only 3-min away! Their Pastrami Is The Most Incredible Sandwich You've EVER HAD!! I Pray I'm Customer #1 I was in the US Navy, Aboard the USS Kitty Hawk, and in 1965, we were just entering Viet-Nam Waters! 5- of my shipmates and I were on the flight deck, laying in the forward nets reminiscing about what we miss from home! I'm just short of 80-yrs old, and I'll be there 2-times a week! Thank You and God Bless to Success!....,Think I Need a Gift Card?........meh!.....Enjoy People!...TommyG.
