Denver-based Infinite Monkey Theorem has now opened a satellite tasting room in Fort Collins, featuring locally produced wines using grapes from the Colorado western slope. Our group sampled the Chardonnay, Merlot, and Cabernet Franc. I drink a lot of wine of various quality levels, from high end to box; and I was pleasantly surprised at these wines. I don't have the expertise of a sommelier, and no sommelier would call these excellent wines; but I found them to be surprisingly well balanced and enjoyable. They were simple and a little on the sweet side, but I'd be glad to enjoy a glass of any one of the three (I particularly like the Cabernet Franc).
The tasting room is tiny (essentially a railroad box car), but it's comfortable and a nice alternative to all of the craft brewers and distillers in the area.
