Stefano Diaz Is Building a Better Butcher Shop | Bon Appétit

"Started as a mobile butchery in 2018 and opened a brick-and-mortar location in January 2021, this Kingston butcher shop was built deliberately to model a safer, more inclusive workplace. The owner—who trained in seam butchery and rose to head butcher at a previous local shop—prioritizes reasonable hours and clear boundaries, close relationships with local farmers (including regular communication about animal health and mental well-being), and serving the neighborhood’s diverse population by accepting EBT. The shop emphasizes relationship-building, aims to welcome queer customers and other often-marginalized community members, and seeks to be a neighborhood anchor where staff genuinely connect with regulars." - BySara B. Passing through Kingston for the first time and we just came across this establishment on a quiet road. The sign said meat so naturally, I had to check it out haha. The staff were super friendly and the meat was banging. You don’t find many places like this where I’m from in NYC (reasonably priced too). We got a turkey and roast beef sandwich for lunch. They threw in some jerky for us to try which was very good!! I’ve only had classic store bought in a bag jerky so this quality difference was a first for me. The roast beef was superior and we ended up going back in for a 2nd sandwich to take on the road. If I’m ever back in the area, I’m 100% stopping by again. Thank you guys!

I cannot say enough good things about The Meat Wagon!!! Everything is tasteful and fresh, from the decor to the staff but, most importantly, the food. Nothing here will disappoint and if you're like me, nothing is better than having a good butcher to rely on. Stefano, the owner, is that man! The meat wagon has something for everyone. Locally sourced yogurts, cheeses, kimchi, eggs, sauerkraut, grains, broths, and of course, an amazing variety of fresh and frozen meats of all kinds cut however you need it. They even wholesale ground beef!!! Seriously, check them out today. You wont regret it.

Quite honestly the best steak I’ve ever had. Picked up bones from the freezer and they made the best bone broth I’ve ever made too. Whole animal butchering so if you’re looking for something specific just ask and they will likely have it and cut it to your specs right then. Amazing, special, and worth the price.

Went to the Meat Wagon for the first time last week and couldn't wait to get home to try the meat I bought. (I googled grass fed meat near me and was pleasantly surprised to find one in Kingston which is about 20 minutes from me) Each day I cooked a different diner, I was not disappointed! From the chickens to the steak to the eggs & meatballs...all amazing. Staff was so friendly and helpful. It is so nice to be able to get fresh meat from local farms all in one place. I'm hoping they will open one up in Highland eventually so I can go everyday : )

Stefano and co. have done the Kingston Community a GREAT service by providing us with high quality, ethically raised, TASTY meat. Everyone there is super friendly, knowledgeable, personable. Get away from factory farms. Get yourself to the Meat Wagon!

Just tried the chicken schwarma sausages - baked them in a cast iron skillet - ate them with some baguette from Cheese Louise and dipped it in Schwarma bbq sauce - a WINNER! Juicy without the sauce. Delicious. Nice change of pace.

They best cuts of meat from here to the New York City line! I have used many custom butcher shop products in the past but the Meat Wagon is by far the best! I ordered a whole filet mignon and it was extraordinary! So tender and tasty! The best ever! Thank you to Stephano and the friendly knowledgeable staff! You made another holiday a huge success! Regards!

Yelp
Growing up in New York City, I have had some excellent pastrami in my life. I just had the pastrami from The Meat Wagon Mobile Butchery for the first time, and I can tell you it is the best pastrami I've ever had. it was cooked and seasoned perfectly, with a generous amount of fat and no nerve or grizzle at all. It was tender and delicious. It was so delicious that I ate it all before I remembered to take a picture! The best part was that all the cold cuts are made in-house, so no preservatives or additives or artificial ingredients. The staff seemed really nice too. I definitely recommend this joint!

Yelp
This is the best meat you can buy and great customer service to boot. I wish there was one in every neighborhood. I've been a patron for years and keep coming back because it just doesn't get better.

Yelp
I stopped by yesterday. I've been following Meat Wagon on instagram and was dying to try the rotisserie chicken and the meats. On my way out the door, after my purchase, I noticed a cease fire now sign. If I saw this on my way in, I would have left. "Cease fire now" is anti-Semitic. As a Jewish person, I would be happy to stop by and educate you on why it is anti-Semitic. Until it's down, I won't be back. Plus the chicken was undercooked For $26.

Yelp
I ordered a brisket for the first time and it turned out wonderful with their advice on how to cook it.
