Every time I visit the Roaring Fork Valley I make a point to visit The Pullman. The food is extraordinary, and the presentation is stunning. The menu changes regularly. They have classic dishes that stick around, and every time I dine, there's exciting new specials on the menu. The menu changes seasonally, and demonstrates remarkable creativity with both ordinary and unusual ingredients. For the snack menu, the bacon pickled deviled eggs | maple gastrique and chicken liver pate | blueberry preserves with grilled bread are outstanding. The soups are delicious, and the large plates are so enticing it's a struggle to choose what to order. They make delightful craft cocktails, and if you want something non-alcoholic, you can't go wrong with the fresh lemonade. The ambiance has a modern feel in a beautiful old building, and the staff are friendly, knowledgeable, and provide over-the-top service. It appears to be a good place to work, as I've noticed staff stick around as the years go by. On top of all this, the prices are great for the quality of the meal and the overall experience. After dinner, boost your digestion with a scenic stroll along the river, which is pretty day and night. Admire the architecture and if you're lucky the old-fashioned train might appear with its historic nostalgia. I've always found parking within a few blocks, and the area is so pretty I like to walk around and check out the shops anyway.
