The Pullman

An exceptional dining experience from start to finish. We began with the Brussels sprouts, which were absolutely delicious and set the tone for the meal. My husband ordered the pomegranate braised pork shoulder—rich, tender, and full of flavor. I had the Wagyu sirloin, and it was perfectly prepared and cooked to perfection. Every dish was thoughtful, beautifully executed, and memorable. The Pullman is a must-visit when in Glenwood Springs.

Took our 1 year old with us and we had a great time. We went towards their closing time so we got a nice corner half booth. Food was sooooo good. I love gnocchi now every dish we ordered, had it and I honestly was happy about that and the flavors of all dishes was so different making it a yummy ans fun experience:) cool to find out the owner is also the chef, so I am sure they take a lot of pride in the quality of their food. Thanks for the experience, worth the wait.

Farm to market style restaurant, very good restaurant. Love the interior/decor and lighting; it’s a very comfortable setting. The food was delicious; the butternut squash soup was so very good and the meat was tender with the right amount of flavor. I’d come back again and again, 5/5 would recommend

This place deserves at least four stars based on the food alone but is being downgraded for two factors. It was so loud that you had to raise your voice to be heard which of course makes it louder yet, to the point where it diminishes your enjoyment of the food. Secondly the sauces were great but too salty by half which also diminishes them. Cocktails were good, gin martini order and delivered dry, Negroni balanced and round. The wine list is spare,only one selection, both glass and bottle, per type but adequate. We had the pinot noir and the zinfandel both adequate. The menu is also spare but there is something for everyone. I had the pork chop. Tender, hint of the grill, very well sauced. Also ordered the Roast Chicken, also moist tender and very flavorful. Skin properly chared,charged, sauced deliciously with caveat. Coffee followed. All said we will go back endure the sound because the food warrants it.

No notes! Our experience at The Pullman was *chef's kiss* perfection. I was admittedly nervous about finding gluten free options since the menu doesn't clearly indicate which items are gf, but it was as simple as telling our waitress about the need, and the kitchen made it work. For appetizers, the deviled eggs and mussels are a must. And for my main, I ordered the special, which was a scallops dish. I'd rank it in the top ten meals I have ever eaten- absolutely amazing! Service-wise, all the staff were very courteous and let us stay a bit beyond their closing time, never making us feel rushed. Overall, we had a lovely time and the food did not disappoint!

What a great restaurant! We were passing though town looking for a nice dinner, when a local recommended this place. Martin our bar tender provided great service and drinks, our food and desert was amazingly great. If you're in the area its a great choice!

Far and away the best restaurant in the area. They take care with preparation and presentation. Lots of subtle flavors. Great friendly service. Cute location right next to the river and train station. The deviled eggs were so good.

Every time we come to Glenwood Spring we make it a point to have dinner atleast once at The Pullman. We have loved every single meal we have had here. In the summer days we love sitting on the patio with our dog sipping on those delicious Strawberry Fields drinks they had in the summer. Thank you Pullman for the good memories and food.

From start to finish, The Pullman, exceeded our expectations. Having read a handful of previous Yelp reviews, we knew we just had to try it and are ever so happy that we did! We started off with ham and cheese Coquettas and a couple of Bacon Pickled Deviled Eggs. Absolutely tasty! Our entrees were the Grilled Chicken Salad and Steak Salad (medium cook, no Blue Cheese with vinaigrette dressing). We added a side of Butter Squash Risotto and Mac & Cheese. Super yummy! We then finished off our meals with an order of Ricotta Donuts and Chocolate Pie with creamy peanut butter. Divinely delicious! The restaurant was clean and cozy with lovely lighting. We had made a reservation a couple of days in advance, so when we entered the restaurant, we were promptly greeted by name at the front door. We were also informed that the kitchen closes at 9pm. That gave us the heads up to be considerate of the time to ensure we were able to try the things top of our list. Jake, our server, was attentive and kind. We will definitely stop by again when we're in town next! Thank you!

We didn't know if they would seat us since it was 30 min before closing. Not only did they seat us immediately, they welcomed us warmly and made us feel at home. The restaurant was bustling with big and small groups. The seating was spacious and comfortable. The food was great. I ordered the picked deviled egg coz I heard so much about it. It's really good. I understand they change their menus frequently, so we didn't have the port shoulder but there was the porchetta served on grits. It was very tender and delicious. I ordered the steak salad, which was excellent and filling. We also ordered pierogis and wagyu burger. The servings are not huge, so if you have one or three hangry teen boys who have skied the whole day, then please order more sides or dishes or courses. We had to add another order of wagyu burger at the end of dinner since the hangry boys were still hungry. Even though the kitchen was closed, the chef agreed to make it for us. Thank you to our amazing server and chef for saving us from a night of hangriness. We decided to forgo dessert since it was getting late and they gave us a really lovely pomegranate sherbet. Overall a great experience! Love the food and the service. I would highly recommend!

A must try and you are in the area!!! We bought some family and friends here in the way through Glenwood and enjoyed it so much we came back the next night! The food is absolute perfection and the cocktails are very creative. We tried most items currently on the menu from apps to main courses to desserts and everything was amazing! The staff are all super knowledgeable and friendly and the atmosphere is laid back and inviting. We will absolutely be back!

A great atmosphere. Great waitress. All the food we got was really great, except the Bison my husband ordered was just ok. Wasn't bad. But wasn't spectacular. The Pan Seared Scallops were outstanding.

Stopped in for a quick bite while out shopping in Glenwood. Got right in at the bar and our bartender was super helpful in selecting a cocktail and dinner. We got the oysters of the day and the steak salad. Steak salad was unique and topped with shoestring French fries. I got the grass is greener which was a lemongrass infused vodka with Aperol, genepy, and lemon simple syrup. Continuously impressed with Glenwood springs and their dining selections!

A great place for a meal in town! Such a fun pub vibe here with great service! They were super busy on a Thursday night so we sat at the bar and were taken care of immediately. The pickled deviled eggs were delish and a great light starter. The special was a sirloin served on a bed of faro and it was great! We also had the steak salad which I highly recommend if you like blue cheese. It comes with steak, greens, bacon, blue cheese, grilled onions, fries ,and blue cheese dressing. Overall a great experience.

This place was very enjoyable. It had unique items on the menu like octopus and elk. It was very good, but it was hit and miss with their dishes. The chicken wasn't seasoned very well. However, the elk bolognese was very rich and seasoned perfectly. The gnocchi should be 50% the size in my opinion.

The menu is seasonal and picked by the Chef. We were lucky to get to try their new winter seasonal menu! The portions were very generous. We walked in without a resy it's pretty casual inside. We were pleasantly surprised by both the service and the food here! chicken liver pate: my fav dish, it's an shareable appetizer. The sliced bread has a perfect char taste, and the pate paired well with the shallots and jam on top. Steak Salad: I'm not a big fan of salads but this one left me wanting more this is my second fav dish. The pork belly were so crispy and the steak was cooked to a perfect medium rare. The greens were well seasoned yet not overly done and even topped with fries!

Update: another fabulous meal at the Pullman! We started with the fried pork rinds, a surprisingly excellent choice, followed by the salmon and the fettuccine entrees and the ricotta doughnuts. All truly wonderful. Friendly and attentive service in a comfortable dining room. Will definitely be back!

Charming restaurant in the center of Glenwood Springs. The food was excellent! I had the steak salad - perfect slices of steak and delicious greens. Service was also great.

A restaurant that's been on my list many times when I've visited Glenwood Springs! The staff are incredible...they clearly care so much that you are satisfied from both the food/drinks and the incredible service!

I came here for my 30th birthday weekend and it was so good!! Technically we were supposed to visit in January but had to postpone due to weather, so we moved our trip to March and left that information in the reservation notes. From the moment we got there, all of the staff were so friendly, kind and attentive. As soon as we sat, we were presented with two comped appetizers of pork rinds and chicken pate - the pickled onions and blueberry jam of the pate was delicious! For drinks, I got the godfather which was super unique and had a delicious cherry foam. Our group of four split additional appetizers of the beets and Brussels sprouts and both were delicious (the figs in the beet plate were a little chewy for me). Each of us also had one pickled deviled egg with bacon and they were delicious! For entrees, my husband and I split the elk bolognese, grilled octopus and side of potato gratin. The elk bolognese was absolutely delicious; the ricotta dumplings were like eating a pillow. The addition of balsamic and sliced fennel was a super unique addition to the plate. Our server was so nice and was constantly checking on us and super friendly. Would 10/10 come back here when visiting from Denver.

Came for a nice dinner during a weekend getaway from Denver. I was very happy to get a reservation at 4:30pm as the restaurant was completely booked on Saturday night (a great sign to start) The Pullman is easy to get to with street parking nearby. The host and hostess were very friendly and got us seated. We were very lucky to have Bridget R. as our server. She did an incredible job of taking care of us from start to finish. We appreciated her suggestions for food and drinks. To start I had the house oldy with Woody Creek, bitters and pistachio. It was well mixed and I'd even for an extra shot of bourbon next time. For appetizers we tried the foie grad creme brulee with toasted bread. My wife really loved it. I thought it was good and enjoyed the pear compote served alongside. It is very rich and something I have not seen before. They also had a scallop appetizer special which was divine. It was cooked perfectly and served in the scallop shell. I even took some of the salt the shell rested on to add more flavor- yum! For entrees my wife had the elk Bolognese with ricotta dumplings, fennel, balsamic vinegar and parm. The dumplings were light and fluffy without falling apart and cooked perfectly. The elk bolognese was not gamy and seasoned very well. This is something I would go back for time and time again. My entrée was a special steak cooked medium (chef's suggestion) with sweet potatoes, roasted brussel sprouts, a miso butter and marinated in sake (I believe but can't recall exactly) The server recommended this and it was SO worth it. The steak was cooked perfectly and everything was in harmony. Would definitely get this again. We were too full for dessert but the offerings looked fantastic. Will definitely book the Pullman the next time we venture to Glenwood Springs.

Wow. The Pullman is one of the best restaurants I've ever been to. The food was out-of-this-world. Highly recover the deviled eggs, the chicken plate, and the burrata. The service was impeccable. We had a super sweet waitress who was very attentive. Only downside was we sat next to a women who felt better about her self by treating the waitress poorly. Hats off to the chefs, the owner, and the waitstaff. AMAZING JOB!

i haven't looked at the yelp reviews for the pullman but i have seen people rave about this restaurant on eater and reddit. i've eaten here 3-4 times over the years, but this last time was super memorable and i felt guilty that i hadn't reviewed it yet. our server was travis m and what a meal we enjoyed. every aspect was perfect. he advised us on drinks, salads, appetizers, dessert, and entrees. we recommend the bacon pickled deviled eggs, the red pepper bisque, 12 hour braised berkshire pork shoulder with olathe corn grits and palisade peach. the wild onion fettuccini was amazing. we had olive oil cake with crem fresh and rhubarb strawberry compote, just yum! travis was the best server we've had in years. he sent us on our way with coffee to go (unrequested) because he knew we had to drive for a few hours. this was an excellent end to our 3 day weekend. thank you!

Went for dinner on a Saturday night for my 40th. The food was amazing!! I highly recommend the pork shoulder, so well made! The other entrees my party had were delicious too. The flavors were all on point. We also got 2 dessert, the strawberry rhubarb crumble with basil, ice cream, and the chocolate peanut butter pie. Both like nothing we had ever had before! My friend had 2 margaritas and they were very well made and spot on with consistency from the 1st to the last. The staff was all very easy going and didn't seem rushed like some places can get on a busy night. I also appreciated the spacing between the tables being so generous, it made our dinner more intimate and enjoyable to not be super close to the other tables. Lovely supper and can't wait to go back on next visit to Glenwood!

The food and service were amazing. Definitely the best restaurant in Glenwood. We started with the mezcal fruity drink and the spicy coconut marg. The spicy coconut marg was definitely spicy and the coconut was a nice flavor. Really wonderful drink. The mezcal one also had a nice balance of fruit and Smokey flavor. We started with the shaved Foie. The texture was really cool and I loved how the Foie flavor was super strong but definitely complimented the dish. There were frozen grapes as well which was so refreshing for a hot summer day. For our shared entrees we had the chicken and the summer corn agnolotti. The chicken was so juicy and flavorful and the hummus and sauce were really wonderful with the meat. We also had the summer corn agnolotti. They were filled wonderfully and I loved all the vegetables. A really great summer dish. I personally thought the pasta was a bit hard, but also I'm not a pasta expert so maybe this type of pasta is supposed to be a bit more tough? We also had the gin sour drink which was unique and delicious. For dessert we had the donuts with peach sauce. I personally thought the peach sauce was a bit sour but the donuts were great. Our server was friendly and the decor was cool. Also the bathroom was clean.

amazing saturday night dinner for two. we ordered the chicken fried beets (with kewpie honey), pierogi (vegetarian, filled with truffle potato), and steak salad (generous portion of steak cooked to your preference, blue cheese dressing, caramelized onion, and pork belly), finished with pistachio tiramisu and accompanied with two glasses of wine. that was all for around $100 before tip ! very good service, nice waiter who wasn't overbearing. it's a chill place and as relaxed or nice as you'd like to make your night. they had yummy sounding specials (blue fin tuna) and a lot of rotating items. i can't wait to come again ! it's also right across the street from the denver (now named the maxwell anderson hotel) and across the bridge from the glenwood hot springs. plenty of street parking and close to downtown to check out the other stops. please come here when you're in town !

Food. Best food I've had in a really long time. Interesting. Unexpected flavors together, that all worked. Very well prepared. If you watch any of the food competition shows - the menu/recipes are worthy of the creativity need to be a winner. We had 2 apps. Both were really tasty. Who would think of 'bruleeing' foie gras? Hanger steak. Perfectly cooked. Paired w a potato something that was delicious. Old fashioned ... delicious. (Good bartender ). Whole thing was a lovely surprise and treat to my taste buds. Definitely going back if I get back to Glenwood Springs. Service - it was upper end of good. Ambiance- I liked it. It's a big space. Lots of windows. You didn't feel like you were on top of the next party.

The Pullman never fails to satisfy. Quality ingredients, attention to detail, inspired recipes and great service. Been coming here for years. Continues to be one of my all time favorite restaurants. Well done!

We were pleasantly surprised with the quality of food here. Everything we've tried was on pair with the best places we've dined at during our travels. We've started with pate and pickled deviled eggs - both impressive. Pate was absolutely fantastic. One of us had an order of pierogi and the other a steak salad. Highly recommend both. The place is lively and hip with friendly attentive staff. They seem to be able to accommodate large groups. Ample seating indoor and outdoor.

My wife and I keep a food diary of the best meals we've had in our 49 years together. We just added The Pullman. We're old so we like to split dishes; they did not charge extra. Started with the pickled deviled egg and bacon. Ordered a cianfotta which we had to look up online to find it's a summer vegetable stew. The parmesane broth brought it together perfectly. Veggies still had a fresh crunch. The special of sea bass was blackened beautifully paired with cooked baby carrots. We couldn't resist the butterscotch rum caramel desert that finished the meal delightfully. Must add that my wife ordered a martini with her favorite vodka, but the server recommended their small batch locally distilled Woody Creek. She was not disappointed. We will make The Pullman a regular stop. Service was smart and fast. $$$

Wow, what a gem! We lucked out and walked up early evening - got sat right away, this is real food! Everything was delicious and great service. Fun atmosphere, clearly a local favorite. The food is scratch and authentic great taste! I highly recommend the sorbet for desert if they have it! Amazing.

The Pullman can simply mean a railroad car. But as I deep dive, this Anglo-Saxon surname is derived from the French word "poulain" which translates to little animal or a young horse. How could this be relevant? The GWS Train station is across street where the California Zephyr makes a pit stop from Chicago to San Francisco in 52 leisure hours. Parking can be bit tricky, you can go east there's free overnight parking on 7th Street. Dinner hours only from 4:30pm - 9pm it was super busy on a Saturday night even at 8pm so reservation is a must. The atmosphere is casual but every plate of food had this fine dine energy on it, it was divine. This is my favorite place right now in Colorado. In a last day on earth scenario, I would ride the zephyr up from Union Station to arrive at GWS station. Soak in the sun at GW Hot Springs, cross over the Glenwood Walking Bridge, and end up at The Pullman for the last supper. My order would go something like this: Beet soup / salad chicken liver pate bacon pickled deviled eggs shaved foie gras "pb&j" * (this is my favorite dish of all time) 6 oz colorado wagyu burger* butterscotch budino brown butter old fashioned - sip on a few of these and ride into the sunset like Doc Holliday.

I would literally come to Colorado to savor every bite this restaurant offers for dinner every single day of my life if I could. Not only did the entrees blow my mind, but the desserts rocked my world. I had the lemon sorbet (trust me, it's much more intriquite than it sounds but I don't want to spoil the surprise) and the brownie, which hit the spot. Eggplant CannelloniGrass Fed Burger

Trendy little spot to dine while in the GS! We stopped by here for dinner on a Wednesday night and they got us in right away although the host made it seem like we needed reservations. My friend and I were hungry and the small plates/apps were looking particularly delicious so we decided to go that route. Spoiler: small plates are the way to go and five appetizers was too much for two hungry girls. Faves of the night were the pork belly, deviled eggs and pierogies. The celery roots tots and tempura mushrooms were good and I appreciate the innovative thinking but the execution fell flat. Service was top notch too which is always an added bonus in smaller mountain towns.

This place is always on point with service and food. We are a family of five with three small kids. They are very accommodating. The food is amazing and unique. We came here last year and it was just as good this year.

This is one of my top three favorite restaurants in the WORLD--and I am a foodie who has been many places in the world. If you live within three hours of this place, do yourself a favor and come see how it's done!

Incredible! Every time I come into town I have to eat here. The menu is fun, with many unique flavor profiles. It's hard to choose. Most recently I got the scallops with bacon risotto, the scallops were tender, flavorful and cooked to perfection. The drinks are tasty and rotate so each time you come you get to try something new. The atmosphere is lovely. This is my favorite restaurant in Glenwood Springs.

Cute and trendy restaurant. We started with the deviled eggs, yummy, and oysters, honestly some of the smallest oysters I've ever seen and definitely not worth $4 a piece. Then I had the wild onion fettuccine, it was good, not something I'd necessarily feel the need to order again, and Gage got the steak salad, very yummy. We ended up getting some pork rinds too and they were pretty good, once again I wouldn't feel the need to order them again. We enjoyed our cocktails and would likely come back.

We had a very fun dinner here after exploring glenwood springs. Tried the pate, squid ink pasta, and steak salad. Service was excellent. Best part is they have a dog friendly patio, and brought out water for our pup. Patio overlooks the mountains, which is really pretty and relaxing

The Pullman is a great place to dine with friends. I grew up in South Louisiana so Colorado is not my natural habitat. Luckily for me, I made friends with some locals when I was in town for work and they invited me to dinner here. What a great choice. Located in downtown Glennwood Springs, my one complaint would be the lack of parking. I found a pay lot a few blocks away which worked out, but if the weather is poor, come prepared to walk. The experience made that a minor hiccup so on to the review. This is a hip and modern place and was crowded when we visited. Despite that, our table had an intimate feel and the conversation was private and easy to hear. This is a major plus in a busy restaurant especially when you are like me and can't hear well in loud environments. The selection of beers and cocktails was excellent. If you are into fancy cocktails, you are in luck. If you are into super bitter IPAs, you are in luck too. Our food was excellent. The culotte steak was my choice. It was exactly what I wanted. Rich in flavor and cooked perfectly. I am too unrefined and could not begin to even pronounce the sides it came with but they were delicious. The prices were very reasonable. I expected to pay much more because of the area and quality. I you are in GWS, you must visit The Pullman.

Yum. I wanted to make a meal out of the snacks and small plates, buuuut I also wanted the salads, pasta, and possibly a main dish....and a desert. My eyes were bigger than my stomach, but no regrets! We had the pork rinds, bone marrow, deviled eggs, fettuccine, and gnocchi. All bangers! Drinks were top notch. I highly recommend sitting at the bar!

This was our 10th winter visiting Glenwood Springs, and we've eaten at the Pullman on nearly every visit. Unfortunately, that means we've watched the quality of food and service slowly degrade over time, enough so that we collectively decided after this meal that we would not go again next year. I ordered the burger, medium, and it came out well done, with a soft, soggy and bland bun. The server came by every two minutes to ask for our order, even though we told her we wanted some time to enjoy our $18 cocktails. The same thing happened last year, so clearly they're eager to turn over tables. The noise level meant we could hear maybe half (or less) of whatever the server told us. All this with ever-increasing prices (including 3.5% surcharge for the kitchen staff). I'm willing to pay premium prices, as long as the quality of food and service warrant it. The Pullman no longer does it for us. Hopefully your experience is different.

Fantastic meal with excellent service and atmosphere. A real highlight experience. They were fully booked and managed to get out orders relatively quickly. The bone marrow appetizer was delicious.

Casual and friendly, jam packed with skiers, hikers, happy hour drinkers, and families. We started with the chicken liver pate and blueberry compote on grilled toast. The pate comes in a little glass pot, covered with a layer of compote and pickled onions. Delicious! We had the kale and chicken salad with olives and pine nuts and a light yogurt dressing, and the pork shoulder, which arrived on a bed of hominy and spinach and other vegetables. I've been to this sort of place in other ski towns and it's always fun. But Pullmans is really warm and friendly with white lights strung across the room and really really good food. Definitely make a reservation and leave time to find a parking spot - it's right in town!

My husband and I just got into town and decided to eat here. It was an amazing experience. We had the best service and the most delicious food! We highly recommend these oysters from Washington and this soup especially

I don't know who these folks are who think this menu is so great. When you have to ask what hell something is you don't want to try it we spent 75.00 for the gnocchi (pasty and like glue, burned on the bottom) salad??, too much blueberry Jam on top of the chicken liver pate', sour cream splated on top of the pierogi, making some not appealing, on the side would make this dish more successful. The menu was too inventive, nothing here for kids or folks looking for a "regular" choice of a meal. Go for the burger and fries. Other than that: the wait staff was very pleasant and attentive.

This restaurant always has great food & service. We started with the Blue cheese & house chips , Elk Bolognese, & Salted Caramel pie. All so good! Our server was great. Just wish I could remember her name. Enjoyed!

Most exquisite dinner in Glenwood Springs. Would return for our fabulous server Chad, salmon crudo [not pictured], and ALL the desserts. We came in close to closing mid week. Quiet dinner. Great drinks - Manhattan was made to perfection.

Had an amazing dinner at the Pullman while visiting Glenwood. The atmosphere in the restaurant was warm and inviting and was packed for a Saturday night (reservations recommended). The food was phenomenal. We ordered the house truffle fries as an app and they were delicious. The Elk Bolognese was the perfect amount of elk flavor without being overpowering. The Squash Agnolotti was rich in flavor without being too busy with all the ingredients. We ordered the Butterscotch Budino to go and it was a perfect end to a perfect meal. Service was exceptional. Shout-out to Janey for being so attentive and making our night special.

We received a warm and friendly greeting on a Sunday evening just before 5 pm and were given a choice of a high top by a window or a corner table. We chose the high top. Hubby started with the house salad and I had the soup of the day - butternut squash bisque with a crispy Brussels sprouts topping. Both were very good. I had the pierogies with caramelized onions and crème fraiche - also very good. Hubby had the special short ribs served with mashed potatoes with balsamic reduction and veggies and loved every bite. Service throughout was attentive. Only complaint was that the music was a bit loud but realized (a bit too late) that our table was right underneath a speaker.

Back for our yearly pilgrimage to Glenwood springs and had to stop in at the Pullman for another great meal. Finally tried their roasted half chicken, and although not my favorite dish on the menu the chicken was cooked well, juicy, and sides were tasty. Also tried their sausage appetizer with polenta and it was excellent with the chutney they served it with. My personal favorite is still the pork shoulder as it works very well with the sides and salad. I think for the quality and price of their dishes that the Pullman is one of the best restaurants in Glenwood.
