Chef Interview: Paul Day, Sansho, Prague, Czech Republic

"I opened this butcher’s shop seven years ago (almost two years after Sansho) so I could source all the meat for both the shop and the restaurant, knowing its provenance and being assured of the quality. When I opened, no other butcher was sourcing animals directly from the producer, and over the years we’ve worked with farmers and owners of smallholdings who tend to rear breeds native to Middle Europe, like the Prestice Black-Pied pig. In 2017, with the advice and encouragement of the Czech National Veterinary Service, we became a fully certified bio/organic butchery—the first and only one in the Czech Republic—and it remains one of my proudest achievements. We also recently enlarged the shop to add more preparation and storage areas, and created space for some tables where people can enjoy dishes such as homemade hotdogs, kimchi buns and Scotch eggs. In time we would like to produce our own cured meat and charcuterie too; it’s still a work in progress." - The MICHELIN Guide Nordic Editorial Team

Places like this are one of many reasons I simply can’t get enough of Prague. You walk inside this off-beat butcher shop and you’re welcomed by a nice selection of quality aged steaks and other tantalising products. They will cook you a fresh burger or pork sandwich on the spot snd serve it to uou inside a delicious brioche bun. My pork and kimchi sandwich was very nice! On saturdays you can also drop in for sausages and posecco. What’s not to love?!? ❤️❤️❤️

The meat on display is open air and I saw large flies crawling inside a chicken carcass and other meat as pictured. Flies regurgitate and lay maggots on raw meat, which is a health hazard. I am willing to remove this review once the display fridge is no longer open to flies. perhaps a sliding window or a plastic cover or something.

This shop is a gem in Czech. They have different kinds of meat including pork, beef, chicken and lamb. The chef of the shop was very kind and friendly and he was ready to describe what they have with a relaxed and happy face. The other staff were also very kind. They also have different kinds of food including some prepared snacks like scotched eggs plus different varieties of burgers, sandwiches and donuts. The burger was the yummiest and juicy. If you are in Czech or going to visit you can directly message them and prebook any meat. We ordered a whole lamb and the prices are also reasonable.

Amazing little shop. Off the beaten path. Meat selection was remarkable. Fresh from a local farm. And the lunch was unbelievably tasty. (And the Mrs had Prosecco :-) The staff were so friendly and helpful.

Very lovely experience! 🥩 This is the place for every and each healthy lifestyle loving individual. No trendy toxic stuff, but the grass-fed organic meat and products in bio quality. And the staff is very friendly czech-english speaking. You can taste anything on the spot - burgers, pulled pork, beef broth etc. Just go there and be happy! 🐂🐄🐖🍀

Best food I ate in 7 days of my Prague vacation. Pulled pork bun and venison cheese slider really are excellent. The offer of cold juices and tap beer was enough for a hot afternoon. The waiter from England was especially nice, he seemed like a type of guy I'd like to have a casual beer with. Big greetings!

Little corner created by a Michelin star chef. Is a must-visit. My favorite: pulled pork sandwich and Scottish egg 🥚❤️❤️❤️A true gem for meat lovers! Highly recommend ❤️

This ravishing butchery is a sheer display of farm to fork concept that presents bountiful selection of meats and offers great food options as it doubled up as a bistro (service is excellent too). Bring out the inner primal in you, if you are meat lovers and indulgence yourself with Czech Aberdeen bred prime cuts that have been aged for at least 45 - 60 days. Explore their selection of charcuteries, from smoked turkey legs to dried sausages. When you are there, be sure to order the succulent and tasty pulled pork burger or their signature meat loaf burger that are so good that you probably might just order more to savor. By the way, they serve draft beers too (wines are available as well). Truly a happy meal indeed that is fit for anyone hungry. ***Latest*** We bought their 45 days dry aged Czech Aberdeen Cattle T-Bone Steak and we cooked it medium rare. The steak itself it is nicely aged and the flavors comes through pleasantly. The beefiness can be taste from both the sirloin and tenderloin with each sides offering different characteristics. Sirloin side of the T-bone, gives off a nice blue cheese flavor on the sirloin fats, which acts as a good flavors. The tenderloin side, was simply soft and tender. Definitely a brilliant cut, if you are eyeing for a nice steak dinner for a perfect date night.
