Okay, been wanting to try Andy Husbands Smoke Shop, and felt fortunate that he put one in Woburn. (I live a short distance in Stoneham)
I purposely went in the middle of a rainy day on Thursday afternoon at 3:45. I sat at the Bar, practically no one else in the Restuarant.
Having lived in Grand Prairie, and Arlington Texas in the 1980's, I knew exactly what I wanted, and how Barbecue should taste.
I was so looking forward to eating delicious Texas Brisket. Unfortunately, the Texas Brisket was pinkish raw, fatty and runny. Not one hint of smoke. The Pit beans came in a ceramic cup, filled with sauce, very few beans to be found?? (is there a shortage of beans?)
The kind Bartender got the Manager, and I showed her the raw, pink, runny meat. I told her I knew what Barbecue is supposed to be because I lived in Texas. She immediately got defensive, (almost as though she took it personally) I insisted there wasn't even a hint of smoke flavor, and the pink, woefully undercooked meat would give me diarrhea.
She took my plate away, and I settled on a simple beef Hotdog.
The Waitress Shaina was very kind and apologetic which I told her it's not her fault.
To the Owner Andy Husbands: Dude, you're on the freakin' Food Network as a Judge, you wrote a couple of Books on Barbecue, yet you cannot produce a simple dish called Texas Beef Brisket??
My unsolicited advise to you is concentrate on getting the basics correct before you open up anymore Barbecue joints.
Shaina, the Bartender and I assume the rest of your Staff are efficient, but your Barbecue is just plain awful.
You need to fix this or you will just be another failed Restauranteur who writes fictional books and appears on T.V.
Thank-you.
