Well, you know what they say about the best laid plans.
Despite making a plan to check out The Switchboard, and actually sticking to it, I still managed to mess up. Not that my experience was at all bad, obviously. It's just that if I had done the proper research, instead of deciding deciding purely based on convenience, this might have been even better! At the very least, I would've discovered how much they have to offer...which, to be honest, is far more than I expected!
At a glance, if you walked in from the street, The Switchboard might look a lot like any other cute coffee shop out there. However, if you venture through the doorway on the side (or come in that way), you'll see they're actually a full restaurant/bar that's attached to The Fin hotel next door. The lounge area has a relaxed vibe with an interesting cocktail menu, but what really stands out is their Hawaiian inspired food menu. Whether you're coming in for brunch, dinner, or anything in between, they have so many enticing things to choose from!

Honestly, my picture didn't do this justice. The (King's Hawaiian?) bun was super soft and flavorful, but the omelet was what really impressed. It's simple, but so tasty with the melted cheese and the aioli. Another piece of bacon would've been great, but that applies to everything!

Maybe I'm too used to Bay Area prices, but this didn't seem bad for $4. Not to mention the fact that this was also really good! The rice was tender, the SPAM was decently thick and juicy, and I loved that it came with a side of kimchi aioli!
While the food was certainly fantastic, the service here isn't far behind. The two workers working on the coffee side were both super friendly and more than happy to help the two people ahead of me with their questions. What's more, after ordering the musubi and sandwich, I also asked for a house coffee...without realizing that the sandwich already includes one. They easily could've tacked on another one and made a few extra bucks, and it would've been my fault for not paying attention, but the girl working the register made sure I didn't end up with two. Easy to say that she did the right/obvious thing, but it doesn't mean it's any less appreciated!
As much as I enjoyed my breakfast (and the coffee, which was quite delicious), I can't help but wonder how much better it could've been. Had I known they had so many intriguing dishes to offer, I definitely would've planned to snag a seat outside to eat instead of just grabbing food to go. I mean, if their SPAM musubi and breakfast sandwich were this good, I can only wonder how good the likes of their Korean Loco Moco, Korean Fried Chicken & Waffles, Kahlua Pork Fries, and K-Pop Spicy Fried Chicken Sandwich might be. I guess I just have that much more of a compelling reason to come back to Oceanside...and The Switchboard!
