When he opened the Wise Ox in North Park, he shined a light on the dying art of butchery and made it easier for San Diegans to get their hands on a variety of meats he uses at his own restaurants and more: top-notch meat sandwiches and burgers. The daily menu selection features two main burgers including a double cheeseburger with two ground chuck patties, Thousand Island dressing, lettuce, and pickles. There’s also a statement-making dry-aged burger accompanied by house-cured bacon, melted havarti, mayonnaise, mustard, and pickles. "Reopening Wednesday, September 16 after a short revamp is The Wise Ox Butcher & Eatery, which replaces The Heart & Trotter on El Cajon Boulevard. Now under the Trust Restaurant Group umbrella, the shop will be open from 10 a.m. to 7 p.m. Tuesday through Saturday. Stocking a full range of meats, from prime beef to heritage pork and free range chicken, the butchery will also feature marinated meat and fresh sausages. A monthly butcher box option, available at a lower membership rate, will include over 10 pounds of meat from a rotating selection of cuts. Gourmet market goods and prepared food will also be available, from bottles of wine and beer to fresh pasta and sauce, chicken salad, housemade bread and butter pickles, and the popular chicken liver mousse off the Trust menu.
