Three Little Pigs is a long-standing BBQ joint in East Memphis on Quince Road. I have eaten here a few times, but decided tonight to eat it to review it. My meal would be a standard BBQ spot meal for me: a pork sandwich topped with slaw and hot sauce, beans on the side.
The beans were quite tasty. There was pork in the beans, which is something I prefer. There was no tartiness to the side dish, and in fact, there was some nice spice to it. Many times, bbq spots ignore the beans and focus entirely on the meat. I think Three Little Pigs has done a nice job on the beans, though.
The bun was toasted. There's nothing wrong in my opinion with a toasted bun. It's pretty hard to screw up a bun on a BBQ sandwich.
The slaw was mass-produced, or at least it tasted that way. This was disappointing. I know it's much easier to order a barrel of Sysco slaw, but it doesn't taste very good. It may have been a tub of slaw from Kroger. I expected better.
The hot sauce was excellent. It was clearly made in the store or somewhere very close by. There were red pepper flakes floating throughout the spicy red sauce, and it added a much-needed boost to the pork.
Which brings me to the meat. Sigh. It was flavorless, dry, and was likely cooked 18 hours or more before the meat was served to me. I was extremely disappointed in the meat, especially when seeing stacks and stacks of wood sitting by the front door of the restaurant.This spot has the ability to be a truly amazing BBQ spot. It's got history; it's got location (right next to a bowling alley), it's got a plethora of ceramic pigs for decorations ... what it doesn't have (or at least did not have tonight) is smoke-infused, tasty and moist pulled/chopped pork.
I'm beginning to think there is no excellent place to get pork inside the me city limits of Memphis other than Payne's. I will continue looking (unless someone wants to kindly email me the name of a better spot).
I do not think I will come back to Three Little Pigs, unless it is to try their breakfast. I may come for the beans. I doubt I will come back for the pork.
Three stars, mostly for the beans and hot sauce.
