Three Sisters Nixtamal Masa Factory Make the Tortillas Behind Portland’s Best Tacos | Eater Portland

"In a small Brentwood‑Darlington storefront I found Three Sisters Nixtamal, established in 2012 by Adriana Azcárate‑Ferbel with her husband Pedro Ferbel‑Azcárate and chef Wendy Downing; they nixtamalize organic white, yellow, blue (and sometimes red) heirloom corn from small growers in Chihuahua and Oaxaca and experiment with local strains, grind it on a lava‑rock‑bladed machine into fragrant, slightly nutty masa, then feed the dough into a conveyor‑belt oven to stamp tortillas from 4‑inch minis to 9‑inch huaraches. They are the only tortilla retailer in the Northwest that transforms organic nixtamalized corn into finished product in‑house, and their tortillas and bulk masa—sold at their retail storefront, Portland Farmers Market, People’s Food Co‑op, and Whole Foods—have noticeably more flavor and nutritional benefits (niacin, folic acid) than industrial, Maseca‑based tortillas. They also offer classes teaching masa shaping and cooking, work with farmers to preserve and revive heirloom strains, and earn praise from both chefs and everyday customers for preserving tradition and bringing respect to the spirit of the corn." - Eater

Google
Fresh Nixtamal tortillas! Picked up 2 packages of 25, blur and yellow. Both were delicious.

Google
The best in the biz! Seriously, the nicest and most welcoming people! I have been using their product for a while and i can contest, these are the best tortillas in the northwest! Please go check them out wherever they are sold!

Google
This are my favorite fresh organic blue corn Tortillas. They have a delicious flavor, good quality, and texture, they bring great flavor to my dishes. Three sisters nixtamal also sells other products like fresh tortilla chips that deserve 10 starts!!!

Google
Literally the nicest people who also make the best masa and tortillas.

Google
Fantastic tortillas made with minimal ingredients, and superb corn pozole too! Definitely worth the trip to their store when they’re on their break from the PSU farmers market. Thank you for providing such delicious ingredients!

Google
The corn tortillas are amazing! The best flavor and texture - I feel lucky to have access to these at my neighborhood New Seasons (edited to note that I discovered these through my Finding New Favorites meal delivery kit, which I also highly recommend).

Google
This spot is an asset to the community of Portland cooks & foodies who all share a common love for fresh masa products. Additional goodies like quality dried chiles aren't easy to come by either! Really glad I know about this place.

Google
I bought blue hominy . The flavor was wonderful . Chewy in a good way. I made pozole and the taste is so much better than canned hominy. Also bought tortillas. Just the right thickness with great flavor

Yelp
I drove from San Francisco to visit family here in Portland and came home with 150 tortillas!! These are seriously the best tortillas I've ever had, the masa flavor comes through nicely and the owners were great people with amazing stories. I just found out I can buy these here at rainbow grocery in San Francisco too. Support local woman run businesses!

Yelp
I've read about Three Sisters and have had tamales and tortillas made with their masa at various restaurants. Last weekend they had a stand at the PSU Farmer's Market and were selling products including their Hominy Grits in both white and yellow varieties. We love grits so I bought a bag of each to try. I will never willingly buy any other grits ever again. These made the most delicious, fresh, corn-y tasting polenta / grits that I have ever made. Crazy good. No need to add anything but salt, though I did put it over the top with some good butter. The difference in flavor with this fresher, stone-ground organic corn is simply mind-blowing. Seek them out and try it, you will never want any other polenta or grits again.

Yelp
BIL asked me to pick up some tortillas for a family meal. He'd ordered them from here. I had no idea that this place existed but it's in my general neighborhood so I got them. Turns out they're great! One big difference between fresh and store-bought seems to be flexibility. Even after heating them up in the over or on the grill, they don't crack or break. And the flavor is more pronounced, yet still doesn't interfere with the filling. And, they seem to last a bit longer in the fridge. We'd do this again. Stack of 50, $13.

Yelp
I love their customer service. The product they offer are so amazing and love the quality. These tortillas taste just like the one my abuela makes. We will be ordering more often.

Yelp
Outstanding corn tortillas -- blue, yellow, and white -- made from stone-ground corn masa and 100% fresh nixtamal. Available at their stand at the Saturday morning Portland Farmers Market at PSU as well as the People's Food Co-op, New Seasons, and Whole Foods. A local company, Three Sisters makes what those who know say are the best organic tortillas in the Pacific NW since they're the only tortilla retailer in the area that uses organic nixtamalized corn. You can taste the difference. Even if you haven't picked up a pack of their actual tortillas at the farmers market or an area store you've probably eaten them at one of the better, higher-end Portland restaurants that serve tortillas. It's always great to come across and support yet another local company that uses traditional methods and organic, non-GMO materials to produce a tasty, high-quality product.

Yelp
This small Portland tortilla maker is a star in its specialty. They take dried yellow, blue and white corn, soak it in water with lime, peal off the "skin" and make it into tortillas - just corn and water - as it has been done for centuries. You can find them on the shelves of local stores and at farmer markets. You can also visit their factory to buy them! They have a few books and other items in their reception area, they can tell you what products are ready to go, and then retrieve them for you. They gave me a little tour and an opportunity to taste some warm tortillas. They occasionally make specials for the markets like an Oaxacan green pepper tortilla with blue corn. If you were having a party at home that needed tortillas, these would be perfect. And they are perfect for everyday eating too. You can fill them with anything - vegies included. Three Sisters Nixtamal is a beautiful small family business bringing Portland fresh tortillas you can love!

Yelp
If you like to make tamales, and you are in the area, this is a place you need to know. There is a world of difference between using maseca and fresh masa. The prices are outrageously good. The staff is friendly. There is really nothing to complain about in the slightest about Three Sisters.
