A good friend of mine told me about this place that has been her go-to favorite Thai place in New York. Mama Pam herself has moved to Las Vegas, and while I'm sure she is missed in New York, I hope she will be well-loved in her new Vegas location at Green Valley Parkway.
The place itself is unassuming, simple clean tables with minimal decor. That's probably because the food speaks for itself -- everything we had, from the fresh chicken larb salad, to the beef and ball noodle soup, and the anchovy fried rice was excellent. The broth was deeply flavored and soul-satisfying, and the salad provided a fresh flavor contrast to the richness of the soup and the meat. The anchovy rice is so much more than anchovy -- it is a melange of salted baby shrimp, rice tossed in shrimp paste, fried chicken strips, egg, green onions, red onions, chilies, and cilantro. Mix well for the perfectly balanced bite. We went there for the ox-tail soup, which sadly, is so popular that they ran out of it even before lunch service started. Mama Pam, who is so friendly and accommodating, says best to call ahead so she can make it fresh for you as it is the kind of soup that takes days to make to build flavor. The sticky rice with durian was a delight -- I think I might like it more than the mango version.
