8 Restaurants Putting Fusion Food Back on the Map

"A One‑MICHELIN‑Star restaurant that skillfully blends Tokyo‑style, traditional Nara, and contemporary Spanish cuisines, TOKi offers a seasonal tasting menu from Chef Yutaka Hasegawa. Dishes include “Primavera,” combining raw bonito, potato salad, and snow pea sauce, and Bacalao pilpil Yuzaki Nebuka, where confit cod in a light pilpil is paired with the traditional vegetable cooked lightly to draw out its sweetness and delicacy. Dessert is a tarta de Santiago marrying almond paste, licorice mousse, caramel ice cream, and Nara chestnuts presented two ways—whole and finely grated into powder." - The MICHELIN Guide

"Tucked away in a corner of a showroom highlighting the attractions of Nara Prefecture, TOKi is supervised by akordu, a Nara restaurant that interprets the ingredients of the ancient capital through the lens of modern Spanish cuisine. TOKi thus serves as a link connecting Nara, Tokyo and Spain. The menu is pleated like an accordion, suggesting an old folding-book, and filled with poetic dish names to stoke the imagination. This is light, creative fare; a magic lantern casting images of the scenery and seasons of Japan." - Michelin Inspector

A very creative modern Spanish restaurant in the edge of Ginza. The roots of Toki goes to the destiny restaurant Akordu in Nara. This restaurant’s uses foods produced in Nara and arranged it into a magical Spanish food. I think the level of fusion is such that this is in sense not really Spanish, but really a modern yet folklore like cooking. Every dish is something new, yet something nostalgic. And more than everything, it tastes good in the way as if you are traveling in Nara or Spain, on the terra. The restaurant also has a bar, where you can enjoy pinchos. Both restaurant and bar is well connected inside the space and felt like I was in well crafted spaceship in a sense. Last but not least, the quality of service…. Such a warm, welcoming style. I just keep coming back here, really.

The dishes subtlety remind you of the changing seasons of Japan. Drawing both inspiration and ingredients from the bounties of this land, they write you a haiku of flavors. 10/10, an elevating experience

Had the opportunity to dine at TOKi right before their winter holiday closure this December and what an amazing meal we had! Since I’m living in Europe it wasn’t easy for me to get a reservation online so I decided to contact them directly and they were super nice to accomodate my request for a table. We had a fantastic tasting menu which perfectly combined Spanish and Japanese culinary traditions, and the fact that they’re using ingredients from Nara made the experience even more interesting. We also tried some very good Spanish wines that went really well with our dinner. Great service, even if we had some difficulties due to the language barrier, in the end we got to understand everything. Michelin star is well deserved, would be back for sure!

The food was super delicious, light, and creative. There was also an English description of the dishes on paper. The value for money was sensational, especially compared to what we’re used to in Germany or Italy.

Great Spanish fusion foods but hidden on the second floor. You can walk in anytime if it is bar section. Amazing quality of fish with Nara twist. Highly recommend.
