Okay folks, I read your reviews, and strayed away from the hibachi. Unfortunately, their shabu, not much better per my experience.
-Meat looked (and tasted) like dead carcass. Yes, I know meat is technically dead carcass. But there's a difference between dead carcass that's fresh (pardon my oxymoron) vs. a dead carcass that even a vulture would pass up. I'd have to guess it was our timing - we went in to eat at an usual hour (4:30 - 5pm) so maybe the quality would improve during peak hours and they're churning that meat slicing machine more often. However, the quality we received was dry and tasteless meat (both the lamb and the beef).
-Veggies, also lacking in both variety and quality. You had your standard napa, spinach, corn, bok choy, carrot, tomato and daikon. However, lots of the veggies didn't look all that fresh.
-Regular broth was weak. I think it was diluted too much.
-The udon was decent - hard to mess that up thankfully. Their fish paste, an extra, was also fairly delicious and came in a generous portion, so that was a plus.
Overall, maybe it was just the timing, as most of the reviews for shabu here have been well received. Even so, please don't give your clientele food that has been sitting in your kitchen for a few hours, after probably being prepped the night before - throw it away if it's obvious to the eye. It may not reflect your true quality, and that's not an impression a business would want to give.
