Elegant French-inspired venue with Italian-American dishes, live music

"He parlayed that into the opening of 71above before jumping around to Venice, Orange County, and the heart of Beverly Hills with Tommy’s last year." - Farley Elliott

"Tommy’s Beverly Hills, which took over the former Bouchon space, closed on October 11, 2022. The restaurant featured al fresco dining, live music, attentive service, and Italian-American dishes like squid ink carbonara with uni and bottarga and dry-aged New York steak in a caramelized onion jus." - Jean Trinh

"Velverie’s daytime-oriented approach is said to parallel Vartan Abgaryan’s daytime restaurant Tommy’s Beverly Hills." - Mona Holmes

"I stopped by the new downstairs cafe at Tommy’s Beverly Hills, a mostly al fresco operation with marble tables spread across long, tiled porticos, seats under tan arches with wrapping vines, and a small semi-circular dark green bar inside lit low with lamps and gilded-frame artwork. Owner Tommy Salvatore, long known as the manager of West Hollywood spot Craig’s, greets guests and walks customers through the new 90210 menu while chef Vartan Abgaryan (Yours Truly, Nueva Venice, 71Above) oversees the downstairs kitchen. For now it’s all about lunch (11 a.m.–5 p.m.), with a menu that blends Italian options—spicy meatball starters and cavatelli in a light poblano-coconut cream sauce—with everyday LA staples like a grain bowl, burger, and several salads, plus larger flourishes such as a pan-roasted New York strip and a chicken parm with smoked mozzarella. The second-floor primary dining room, balcony and all, is still a work in progress and expected to open by mid-February with a separate evening menu; the plan is to operate an all-day cafe downstairs and a more robust dinner space upstairs that will attract Beverly Hills diners, Craig’s regulars, celebrities, and others." - Farley Elliott

"I’m intrigued that Tommy Salvatore, who honed high-end hospitality at celebrity spot Craig’s, is partnering with chef Vartan Abgaryan to open his own place in the former Bouchon space at 235 N. Canon Drive in Beverly Hills, where he plans to bring big, bold new life to one of LA’s most valuable restaurant real estate slots." - Matthew Kang
