And while the server might seem overwhelmed, the feeling of eating in a room straight out of the French countryside makes up for any awkwardness. You just can’t beat cutting into foie gras-stuffed Texas quail while staring at museum-quality works of art (La Colombe d’Or houses an extensive art collection). Salad Maison Light, simple, and with a little bit of crispy pork lardons—this salad is great for keeping your palate refreshed between bites. Half Chicken Served in a pool of parmesan jus, this chicken is perfectly moist. It had to have been conceived by someone thinking, “How would a perfect roast chicken taste without actually roasting it?” And, the smashed potatoes on the side soak up extra jus for an almost too-powerful bite. Cauliflower Escalope While we love the vadouvan curry flavors in this dish, during one visit the cauliflower and chickpeas were slightly underdone, which made it difficult to enjoy. Gnocchi Parisienne We would snack on these crispy parmesan-stuffed gnocchi nuggets as though they were popcorn, especially with a glass of champagne on the side.
