Mixed feelings about this place - the interior is trendy and beautiful and the service is friendly and fast. Appetizers were solid, but half of our party left dissatisfied with the mains they had ordered.
We stopped in around 8pm on a weeknight and the place was pretty empty. (To be fair, Tonkotsu does close at 9pm on weeknights.) We ordered the wings and edamame to start - the wings were pretty tasty and had decent crunch; the edamame was fresh, but was salted with table salt rather than flaky salt and could have used more salt in general. One of our party ordered a torikatsu curry rice bowl at a ramen shop (which was probably her mistake) - we knew she wasn't enjoying it when we asked if the deep-fried meat was crispy and she responded, "I'm not sure." The curry was also a little too sweet, even for Japanese curry.
Onto the ramen: since our mains and appetizers all came out at the same time, it's possible that the noodles in the Tonkotsu ramen overcooked in the time it took me to eat two chicken wings. But they just didn't have that chew that I enjoy in my ramen noodles - they weren't quite mushy, but were very, very soft. (This is partially my preference: in general, I enjoy thick, textured noodles over thin, straight ones.) I can usually polish off a whole bowl of ramen, but at Tonkotsu, I ended up leaving half the bowl behind. I did enjoy the pork belly, the broth, and the soft-boiled egg, and also did hear from another member of my party that the Tantanmen was good.
All in all, I'd say Tonkotsu is worth a shot - it's not my favorite ramen place in SLC/Murray, but the interior is really beautiful and service is great. Though it's not high on my list of places to revisit, if they offered thick chewy noodles for their ramen, I'd give them another try.
