This place was fantastic! The ramen was the best I've ever had and the service was phenomenal. Our waiter didn't go 10 minutes without checking on us and was very patient while we looked at the menu as it was mostly in Japanese. Everyone was super kind and Toya is a new favorite for my husband and I.

The handmade noodles at Tōya Ramen are next-level—silky, springy, and perfectly textured to soak up every drop of flavor. The garlic karaage is crispy on the outside, juicy and tender inside, each bite is packed with bold garlic umami that lingers just enough to keep you coming back for more. We tried the Shoyu Black—a deeply savory broth with a subtle garlicky kick that clings perfectly to the noodles. The chashu pork was melt-in-your-mouth tender, and the ajitama egg had that ideal creamy center that ramen lovers dream about. If you are craving for a lighter and refresher broth try Shio AL Tartufo! I recommend add additional pork chashu to any of the ramen orders coz they are so delicious!!! Everything is thoughtfully presented, the service is quick and kind, and you can tell there’s serious intention behind each dish. Hands down, this is one of the best ramen spots I’ve experienced in Portland.

Such a great spot to drop by for some late night ramen. Very flavorful broth. Wish they had some more pork options as the chicken wasn’t my favorite. Will definitely be returning.

Went to this place after seeing it touted as the best ramen and in-house noodles in Portland. That was a straight-up lie. The ramen was mid at best. They were out of one of the only 4 options so we got the one the server recommended, New School Shoyu and Shio al Tartufo. The broths were disappointing, little more than what you'd make yourself at home from a powder. The noodles were thin and didn't taste like they were made fresh; I've had better packaged fresh noodles from H Mart. The egg was the star, perfectly jammy but you only get half the egg. We also got 2 drinks, the house POG juice, and a Momotaro. Both drinks were excellent. The service was incredible, honestly better than most places. The atmosphere was nice but very loud. Overall this place was overpriced and disappointing. I would not go back.

Had their special, which was a Tonkotsu Ramen. I usually avoid pork because I’ve gone to other ramen places that make it too fatty or too lean. But this was absolutely perfect pork. It melted in my mouth. The broth was spectacular and the noodles nice and think and chewy. Im doing a lot of talking when the glistening of the broth and pork speaks for itself. ✨

Great noodle bar, both wet and dry, with excellent cocktails and small plates. The service is excellent. It is not cheap however, probably the most we have spent on a noodle based meal.

The miso (vegan consequentially) arguably best vegan ramen in town. I ordered the special which was tonkotsu which was quite good. Noodles made in house in a fancy machine. Service friendly and area well lit.

I recently visited Toya after hearing great things from my partner’s cousin, and it did not disappoint! The interior design is stunning, creating a cozy and inviting atmosphere. The menu offers a wide variety of options, making it tough to choose, but I’m so glad I tried the karaage – easily the best I’ve ever had! The black shoyu ramen was flavorful and satisfying, and their hojicha latte was a perfect, delicious finish. Highly recommend this spot for anyone craving Japanese comfort food with a great vibe!

Definitely a ramen spot to add to the list! I've been here twice now, and neither times have disappointed. Everything from the service to food is immaculate. Both times were with groups of 4-5 people and we didn't have to wait to be seated either times. I have tried the broth and broth-less ramen, both super delicious! However, I will say that I liked the dry ramen better, I like the texture of the noodles. I also tried some of the appetizers: spicy garlicky cucumbers and garlic chicken karaage. The cucumbers were good but the chicken karaage was probably my favorite thing there. It was flavorful and crispy and not too much breading (the way I prefer my fried chicken). The restaurant also has a clean feel to it with large windows which gives it so much natural lighting. I'll definitely be returning next time I crave a bowl of ramen.

When I walked into Toya Ramen, the ambiance immediately sets the stage for a memorable dining experience. The dining area has been reimagined completely since switching over from Danwei Canting, the restaurant that occupied this space. The minimalist decor is accentuated by Japanese touches, and created the perfect balance between modernity and tradition in an intimate setting. I'll start by disclosing that I'm not the biggest ramen fan...I often seek out highly regarded ramen places in town and in my travels and aside from a few experiences, most of the time I just prefer other asian noodle soups over ramen. I'm part Chinese and Vietnamese and I just prefer my noodle soups to have lots of toppings and proteins in them, and that's usually my issue with ramen, since they typically emphasize their broths by not bombarding each bowl with a ton of veggies and meats. Toya Ramen seemed to find a perfect middle ground approach. Since they aren't trying to be a pure authentic Japanese experience, I felt like they aren't trapped by this same Japanese minimalism that I personally don't love. There was far more toppings and protein than you typically see in your bowl which made me happy. What also made me happy was how creative the menu was and how it borrowed elements from Italian (the Carbonaramen caught my eye) , Chinese, and Thai cuisines. Toya Ramen takes great pride in crafting each bowl with precision and care, and uses quality ingredients to create a symphony of flavors. The noodles all appear to be made in house and freshly made. As good as the noodle dishes were, the true stars of the show were the starters. On my two visits, I over ordered and ate maybe 1/2 of their appetizers and nearly all of them blew me away and were so good that before I finished my meal, I texted my circle of friends and told them they had to visit this restaurant and perhaps share an entree just to go extra heavy on the appetizers. The fried rice, wok fried beans, crispy tofu, miso eggplant, karagge, crispy tofu, were all amazing...and even some of the more simple dishes were executed so perfectly that it blew me away despite not being able to hide behind their simplicity. I was saddened that one of my favorites, the pea tips were no longer on the menu as those were probably the best pea tips I've ever eaten. Beyond the food itself, what truly sets Toya Ramen apart is the impeccable service. The staff here are not only knowledgeable about the menu but also passionate about sharing their love for Japanese cuisine with every guest. In conclusion, with its exceptional food, inviting ambiance, and top-notch service, it's no wonder that this new gem has quickly become a new favorite for me. When you consider the price point of Toya and compare it to other ramen restaurants, asian noodle soup places, or even food carts, you'll find that the combination of what they offer is a tier above the competition.

Being a noodle soup fiend, I knew I had to check out Toya as soon as I could! Also being a vegetarian, I appreciated that they had a brothless/dry and broth option for vegans/vegetarians! We were in a hangry mood so we showed up right around opening on a Sunday and honestly...it was busy and bustling so I'd say try to go early, especially if you have a larger group. The inside isn't small per se but it is a quaint little space that can fill up quickly. I loved how bright the entire place is and the bar was beautiful too. Foodwise, my husband got the bone in tonkatsu and the dry soba -- to be fair, he LOVED both and would give this spot a 5/5 hands down. I will say the highlight of my meal was the garlic tofu featuring ota tofu in all it's crispy goodness. I would eat a tub at a time if I could! I also tried the cucumber which was good but needed just a tad more salt/spice/acid -- all of the above. The peanuts in that dish were amazing though sooo still good. I got the spicy miso ramen which is vegan and honestly I found it...not spicy and bit one note. It didn't have a distinct flavor even though it was creamy and rich - couldn't really find depth in this broth. That was the second thing that was a bit odd -- the broth was just THICK. This felt like noodle porridge and not noodle soup. Like usually I'd be slurping up the broth at the end but this was just a porridge consistently, almost like there wasn't enough broth in the bowl. This might be the way they want to serve it though so I'm not quite sure what to make of it. I think if it had been spicy and more flavorful, I would have upped the score to match my husband's 5/5. Drinks wise I had the bento juice box which was super refreshing, highly recommend. And for the n/a drink, my husband had the house orange juice which was honestly AMAZING. Would 10/10 get both again. Our server was nice, but I will say that I was frustrated with waiting 25+ minutes for our food when people who ordered after us were getting multiple dishes. I do wonder if the tonkatsu and tofu both being fried dishes caused a delay but I wanted some food asap and was just getting a bit antsy without even the cucumber being brought out. Overall, a cool addition to the ramen scene and I will go back to try more of their goods including the tofu chawanmushi, the miso eggplant, annnd the mala mazemen.

The garlic karaage is a standout, boasting a perfect balance of crispiness and sauciness, reminiscent of Korean fried chicken. The chicken-based ramen broths are light yet flavorful, providing a satisfying meal. While we didn't get to sample the other more creative noodle options like ramen carbonara, we definitely look forward to trying them next time.

We stopped in soft opening weekend. Love the space and all the natural light for an early dinner. We showed up right when they opened and the staff was ready. Everyone we talked to was lovely and attentive. Loved our cocktails! Norman Osborn was the favorite at the table. To start, we shared the spicy garlicky cucumbers and Hawaiian kanpachi. Highly recommend both of those. Bright, fresh, flavorful, and beautiful! Noodles are a satisfying portion. The creamy Tom Yum and Carbonaramen were fun. Look forward to trying the rest of the menu. Save room for dessert! The black sesame cheesecake is delightful! We will be back soon!

Absolutely delicious! My son recommended this relatively new spot, and they did not disappoint. We just ordered to pick it up, but they were friendly at the door during the wait. It is open and airy inside, very inviting. I got the new school shoyu and my so got the shoyu black. The depth of flavor in the broth was even better than one should expect in a good bowl of Ramen. The broth was also packaged separately in a split level bowl so the other ingredients didn't get soggy. I can't wait to eat there again!

It's about chicken . Karaage chicken was moist inside and crunchy out. Small was quite enough for one person . My Ramen choice was Tom Yum . Spicy and silky smooth . House cocktail was Asian version of a Pisco sour. Classy inside . Well kept decor. And very busy . I had the last seat at the bar. Parking on street is pretty easy .

My friend and I somehow managed to time it perfectly to both walk up to this place at the same time (about 5:45pm) on a Friday evening to discover a handful of empty tables, so we were seated immediately! It wasn't until about 6:30 that we saw people were waiting for a table, but there were still a few seats at the bar open. My friend and I ordered a Kirin, a bento juice box, the crispy gau gee, a bowl of the shio al tartufo, and a bowl of the shio black. My friend said that her bento juice box was fantastic! The crispy gau gee looked so delicious on the menu, and we were not disappointed. You get 5-6 dumplings, more than plenty for two people. The breaded dumpling wrapper is quite big, with a meatball inside that somehow manages to not fall out when you take a bite. The dipping sauce was such a surprise, it looked like soy sauce but it tasted kind of like mustard at the same time! I really want to try it again. My friend's shio black bowl must have been delicious, because she absolutely devoured it! The shio al tartufo bowl that I had, well, at first I thought it was so-so, but once I mixed it up quite a bit more, this deep umami flavor developed that I could not get enough of. The tamago was done so well, with the yolk just slightly runny but not too runny, and the bamboo somehow held its flavor despite being in the mix with everything else. The vibe of this place is upscale, lots of straight lines and clean surfaces, yet still inviting and comfortable. Our server was fantastic, too - I definitely want to come back!

A new, fun ramen spot which I dare say may be my new go to ramen spot?! We had the dumplings which I highly recommend - juicy, savory, and crunchy at the same time. It was delicious! The ramen broth had depth, it was nicely salted, and savory! I loved the noodles - round, thin, chewy, yet bouncy! The cocktails were also fantastic. Our server was quick and organized. This place is perfect for a date night or otherwise. It's bright and airy, yet modern and luxurious. Glad this place opened up!

Some of the best ramen I've had the pleasure of trying here in Portland. Fantastic service as well. The place is new and beautifully decorated. The pork and spam dumpling was so savory, I really enjoyed it! The broth had a nice salty and savoriness to it. Perfect jammy egg, noodles had a nice bite, and the pork belly was tender. This might have to be the new ramen spot for me.

It's very pretty inside and a nice ambiance fitting for a date night or group dinner. prices not cheap but pretty on par with similar spots. its busy there but worth it!

I went with a friend of mine, and we both loved this place! We ordered 4 appetizers and then shared a soupless ramen. All are pictured and labeled below. Food was 9/10, so unique and delicious. I will definitely be back! Beautiful ambiance, I loved the mountain light feature to the right of the bar. High ceilings, and not too noisy for how packed it was. The service was above and beyond, everyone was so kind and checked in on us. I would highly recommend this place. It is moderately priced, so be prepared to spend, but for the quality it is absolutely worth it.

Oh my!! We arrived at 4:30, first in the door and within 20 minutes there were no tables empty on a Sunday afternoon. The vegetarian option of spicy miso ramen was creamy and so tasty. Need a spicier option? Try the Tom Yum! The soulless Ramen was just as tasty! We started with the karrage chicken appetizer and it was so moist! Finished with the peanut butter miso pannecotta and it was to die for!

Tried the New School Shoyu $18 after coming from the convention center. It was the perfect meal after walking a few miles. We started off with the small portion of Garlic Chicken Karaage for $9. It was cooked on point and tasted great. As for the ramen, the broth was so rich and full of flavor. Some of the best ramen I've tasted in Portland. The pork belly was perfectly cooked and soft. You can tell the chefs put plenty of effort into the dish. Will definitely be back.

Shoyu Black ramen stands up to the best ramen anywhere. This is a must viist for PDX ramen lovers. Staff is friendly and knowledgable. I've discovered my first go-to ramen place since moving from NYC 4 years ago.

Top 3 ramen restaurants in town, amazing service and genuine staff, beautiful interior. We got the garlicky karaage (great) and I ordered the shoyu black (even better). I've tried a lot of ramen in Portland and this one is definitely worth a try. My friends had the drinks and the Brazilian Dollar apparently "felt like a day on the beach". Will be returning!

To say this restaurant was delicious is an understatement. It started off with a warm welcome to the stunningly designed space with beautiful symmetry, high ceilings and great light. What followed was a feast for the senses. We had to chawanmushi which was silky and cool, next came the spicy cucumber and peanuts in the most insanely tasty sauce (I ordered a side of plain noodles to soak up the sauce), next was the vegan soup less ramen which had fantastic toothsome noodles, next was the most moist pork chop with two dipping sauces. It's probably the best pork tonkatsu I've ever tried. We rounded off the meal with the black sesame cheesecake- make sure you save some room. Go here. You won't be disappointed.

My wife and I had dinner at TOYA last evening. Pretty crowded for a new place. We sat at the bar. No idea what to order so we said let the chef pick. That was a brilliant move. We had some appetizers and salad and then Raman. Everything was so good. Great flavors and enjoyable textures. We were at the bar and could see the kitchen and watch as the meals were prepared. They were so meticulous as each was finished. I can see us eating there quite often and trying the many dishes. And service? OMG. Each dish was explained and we were so happy. Treated like royalty. We saw all guests served he same way. 5 stars is not enough!!

Went with three friends. The food itself was pretty tasty, but very expensive for ramen. Possibly the most i've ever spent on ramen. Wasn't planning on writing a review but the second day all four of us came down with food poisoning (headaches, diarrhea, vomit etc.). I don't normally blame a single experience for food poisoning as it's hard to pinpoint exactly where you got sick, but this was the only meal we shared together. On a positive note the ambiance was really nice and service was pretty good, but not enough to overcome the price / potential food poisoning risk
