Trigo

"It has always been said that wheat (“trigo” in Spanish) is the gold of Castille, hence its historical importance to the region. The restaurant, located just a few steps from the cathedral, reflects the strong passion that chef Víctor Martín has for his cuisine. Alongside his wife Noemí Martínez, a renowned sommelier who runs the dining room, he focuses on creative and contemporary cooking with strong roots in tradition, and is based on his relationship with small suppliers and their superb local produce and ingredients (vegetables from Tudela de Duero, pigeon from Tierra de Campos, chestnuts from Cacabelos etc). Not forgetting traditional pork products from his native León and the occasional seasonal fish dish. Allow the kitchen to treat you to their flights of fancy, accompanied by a wine from the splendid cellar." - Michelin Inspector

There are three choices in the menu, we chose the middle option, I was expecting a bit more chic dishes to make with local meat and vegetables options, like asparagus which in the season now, maybe not in this option. We all felt the service was a bit rush and pushy, after we expressed it, finally slow down at a pleasant pace. We wanted more bread to eat with the cheese dish, but there is no one to notice us and we tried get someone’s attention, was still not successful, so we finally had the cheese without bread. Must be my expectation too high for a Michelin restaurant. Overall, great richness food, hit all channels! Enjoy a lot anyway ❤️😊

The luncheon here brought a series of mavelous, refined dishes, accompanied by a selection of excellent wines. Attentive service under the watchful eye of the proprietress. The restaurant has a generous, welcoming atmosphere and a great quality/price ratio. A most highly recommended restaurant for an optimal culinary experience in Valladolid.

It pains me to write this review. The staff were very nice throughout. Incredibly friendly and even the chef came out to serve and explain some of the dishes which was a very nice touch. That being said, the experience was a huge disappointment. The restaurant prides itself on being able to cater to virtually all dietary restrictions. I explained as part of the booking that my partner is a pescatarian which was also confirmed at the table with our waitress when we arrived - the first bite she received contained ham. We subsequently explained it again to yet another person and from then on it seemed to have gone much more smoothly as far as no-meat is concerned. We also ordered wine pairings with our lunch which mostly worked ok but there was a huge disparity between when the food arrived and when the pairings were poured (5 mins + of the food sitting on our table getting cold while we waited for the pairings). Finally, there is the quality of the dishes. This place had arguably the worst thing I ever put in my mouth which was one of the small bites to start with (I forget what it was because it truly didn’t taste like human food but it was a round, dark gel-like ball), it tasted like cement - honestly hideous. The meat in the tortellini as well as the fish were both massively overcooked, it just didn’t work. The only thing that actually worked great was the cheese plate which had great garnishes paired with each cheese and the dessert. Overall, wouldn’t recommend, it is nowhere near Michelin quality and Michelin should be embarrassed about awarding any distinction to this place.

was a good moment overall It was a set menu for 55 euro Pastela de Paloma and tarteleta de atun were good but overall aperativos were rather disappointing which is not very engaging for the start of a dinner. The first dish was not really better but it all started with the langoustine and then it was really excellent. Staff is extremely nice and service is good. Even with limited Spanish we come to share on bodega Alberto that we had visited the same day and we had the opportunity to taste the DORADO. It was great !! Thank you for that. Prices are ok for wine, coffee or water but I found just incredible that you have to pay for bread: 4euro per pax. Music was super painful for me

Great food... One of the best wine pairings I've experienced

Incredible experience. Great price and awesome staff. Food is very tasty and goes well together with the wines. Chefs are creative and able to cater to special needs too (lactose intolerance, allergies). If you are here to experience the food and have an unforgettable meal, make sure to make a reservation.

Great experience and even better staff.

Very fancy and beautiful restaurant. Friendly and professional staff. Affordable prices. Nevertheless we were overall disappointed by the food; too many mixed tastes, and too many dishes for our taste. A bit of simplicity would have made much worth the cooking team effort.

Yelp
One of the best dining experiences I've had in Spain (or the world, for that matter). This small, elegant restaurant is tucked away on a quiet side street in Valladolid. If you were not looking for it, you might pass it by completely. The interior is equally unassuming, with simple, modern (yet comfortable!) decor, a warm palette of golds and browns and gentle ambient lighting. The most dramatic decor element is provided by individually vased tufts of moss placed at the corner of each table. When we were there (around 9:30 PM on a Thursday), the restaurant was nearly empty. In other places this might make for a slightly awkward or isolated dining experience, but at Trigo it felt exclusive and pampering. Trigo's menu evolves with the season and their winter selections were outstanding--from the orange-pumpkin starter to the amazing mushroom and truffle pasta (my favorite course!), to the entrees (I tried the rabbit, which was tender and hearty and not at all gamey), and even the wine (a clean Ribeiro from Galicia). The service was also excellent and very friendly and after our dinner we stayed to chat with the chef and his wife for a few minutes. Dining at Trigo was the highlight of our trip to Valladolid and I am very tempted to return just to experience Trigo one. more. time.
