How to Eat Through Orange County in 24 Hours | Eater LA

"For a livelier chef’s-table experience I opt for the 18-seat “culinary theater” at Trust, where Mad Hatter-esque chef Justin Werner starts a meal by having hot brioche pulled from the oven and tossed directly onto diners’ plates while he talks through each dish with tales of his travels, his mom’s lackluster cooking, and his life in the kitchen; wines are thoughtfully selected by laid-back sommelier Jason Scarborough, with a nod toward female-owned vineyards and underappreciated terroirs." - Jenn Tanaka

Trust in Santa Ana offers a truly unforgettable dining experience. This intimate restaurant seats about 16 guests at a time, creating a cozy and interactive atmosphere. The chefs prepare each of the 12 courses right in front of you, turning the meal into a an interactive culinary experience. Every dish I tried was delicious, with fresh ingredients sourced directly from the local farmers market. I loved seeing the care and creativity that went into each plate, it made the experience feel personal and special. It was definitely a unique night out, though I do wish that we didn’t have to share plates, and that each person received their own individual serving for those moments. Still, the flavors and presentation were amazing, and the passion of the chefs truly shined through.

Good. Not great. For the entry price it’s not excellent. I’ve been too many other multicourse meal restaurants that have been less expensive better service. This place has excellent courses, but not the best . It does seem rushed. They keep the food coming and coming can’t enjoy your meal. The drinks are poured sloppily spilling wine all over the table. They invite you to visit the bar/restaurant next-door, which has terrible service if you’re not a member. It was a fun experience, but I would not be back nor would I recommend.

Worth every penny! Food was out of my comfort zone but if you're ever going to try things out of your comfort zone, this is the place! Service was impeccable and wine pairings were on point. Highly recommend.

You should consider your reservation to Trust as a dinner show starring master chef Justin, sous chef Kyle, wine expert Trish and Jared, the man that makes things happen. This 13 course dinner show included the absolute best bread in town, duck, steak and ravioli amongst others, finished with three different desserts. Chef Justin told story with each course served, the wine was not just served, Trish gifted with love. So did the deserts, you can tell that Kyle had poured his heart and soul into the sweets. Be on time for your reservation and bring a hungry appetite. It is worth it.

Chef Kyle and Kyle never disappoints! Their energy comes through in their description of the night's dinner adventure, their cooking, and the presentation. Wine pairings are always on point with vivid descriptions of the origins of the wine and why the pairing was made. Make sure you bring a good appetite and good friends to share.

Our first time for this incredible dining experience. Wonderfully paired wines with each course. I don't think I have the words to do it justice. Go! Get a reservation. And then, get another reservation.

I’ve had the opportunity to visit TRUST twice and was blown away each time. The entire experience is thought through and designed for each guest to blown away. The wine pairings were such a wonderful touch. The food is next level and something to be savored. You can feel the love and passion from everyone on the staff. If you’ve been thinking of visiting, stop thinking and make the reservation. You won’t be disappointed!

Hands down a true culinary journey through food and storytelling, Chef Kyle McClelland's experience and artistry shine throughout the evening. From delicate scallops and imported French prawns to salsify and swordfish, he treated each course with refinement and intriguing flavor profiles. And caviar!--Need I say more?! Our favorites included the handmade pasta stuffed with short rib and the lamb chops, which were altogether astounding at just how tender, non-gamey and delectable they were. The desserts were like little streams of consciousness entering your mouth with every bite. The Kouign-Amann was the best pastry we've had since visiting France. This intimate 18-seater restaurant gives you direct access to speak with the chefs and watch some of the kitchen magic. The wine parings are on point. The atmosphere is inviting and enthralling. Don't forgo visiting DTTN 2.0 next door either before or after your meal (entrance is included with the purchase of your meal at TRUST). The cocktails are superb and owner/operator Jason Quinn is on hand to exceed your expectations of service. "In food we TRUST."
