Tutore Italian Cooking School in Avondale Will Close After Two Years | Eater Chicago

"Opened in April 2023 in Avondale, the school quickly found its niche teaching Italian cuisine beyond red-sauce Italian-American fare, with packed weekend classes and frequent collaborations with visiting chefs such as John Manion of Brasero and El Che. It was founded by veteran Chicago chef Dean Zanella (whose résumé includes 312 Chicago and Rhapsody) and chef James De Marte—whose previous restaurant, Pisolino, had pivoted to a market during the pandemic—and joined by pastry chef Mollie Mettelka. Despite strong demand and healthy finances (“my accountant asks if we’re printing money”), the owners decided to close because Zanella wants more time with his young twin daughters and could not sustain the weekend coverage the business required. The operation will exit by the end of June to allow a new operator to set up by July 1; followers are advised to monitor the website and Instagram for flash sales, last-minute classes and products, and Mettelka has plans for the space with more details expected in the coming weeks." - Ashok Selvam

Tutore Italian Cooking School is coming to Avondale | Eater Chicago

"Two veteran chefs — one a longtime neighborhood restaurateur and the other recently helming a high-profile steakhouse kitchen — are opening a hands-on cooking school in Avondale inside a former restaurant space. The program draws on roughly 80 years of combined restaurant experience and aims to preserve family Italian cooking traditions by teaching approachable techniques (the first classes focus on gnocchi and risotto, with weekend sessions on slow-braising meats). Weekend and weeknight offerings will include both recreational courses and continuing-education-style nights for working chefs (a charcuterie class is planned), instructors drawn from well-known local kitchens, and discounted imported olive oils and vinegars and other ingredients sourced through a local grocery partner. My wife and I came for a date night and boys I guarantee you it will make the missus happy. Can confirm BYOB. They sell really good quality wine at a really good price. Dean and Jeff run a tight and solid ship here. Delicious food and learnt a lot. Highly recommend.

Tutore, Italian Cooking School, was an amazing experience! Hats off to the staff (Dean, James and Mollie). They were so friendly and gave great advice and good directions. The step by step instructions were simple to follow and the prep time didn't take long at all in getting the food together. You really learn a new skill in making pasta and cooking tomatoes and will be applying that new skill at home indeed. Tutore was a joy to visit and keep up the fantastic work!

I absolutely loved my experience here. The Chef and the Chef (winner of master chef) were phenomenal, helpfully explaining everything we did together, all hands on, and they helped me with cooking skills when I looked like a child. I will definitely be back here for all their knowledge. I can’t recommend them enough. LGBT friendly and please please please go get taught how to cook PERFECT Italian food. Farm fresh, organic, and absolutely delicious food. You can’t go wrong

We had a blast and ate like kings during our Tutore Pasta Class!! Bravissimo! Thank you Mollie, James, and Dean for hosting such a great experience! The pacing and instruction were on point. Never felt rushed, lost, or hungry ... Loved being able to ask questions about the class and Italian cooking in general without interrupting the rest of the students or instruction! And lets not forget about the result. OMFG. We made Tortellini! and they didnt look like blobs of pasta! Not only were the recipes absolutely delicious they were remarkably approachable -- enough that they will transfer back to the home chef without any problem. Don't wait, make that class reservation today!

I participated in a hands-on cooking lesson today. We prepared 7 Italian, Venetian appetizers known as cichetti. The 2 owners, Dean and James, had prepped all the ingredients, provided the recipes and helped with cooking techniques. They were extremely organized. We then indulged in our culinary delights and we're given to- go boxes for any leftovers. I highly recommend Tutore Cooking School. It may be a little pricey, but we'll worth the money and time.
