A Critic Thinks Logan Square’s Twain ‘Confounds and Surpasses Expectations’ | Eater Chicago

"Chef Tim Graham reimagines Midwestern comfort cooking by mining community cookbooks from his hometown in Columbia, Missouri, producing a menu that deliberately confounds and delights. Playful, nostalgic concepts are refined into surprising compositions: ants on a log is elevated with duck liver mousse and bourbon-preserved cherries; bone marrow is described as pleasurable when paired with sloppy-joe sauce on bread; a tower of meatloaf arrives with nori-seasoned onion rings and glazed eel alongside red miso–whipped mashed potatoes. Simpler items, like an iceberg wedge topped with a thick “bacon steak,” sit alongside herb-scented dumplings larded with crispy chicken skin and a chicken-fat roux. Desserts continue the same bold approach—most notably an intensely bittersweet mud pie—and cocktails skew inventive and off-script, including a gin-based “Shrimp Cocktail” garnished with a whole shrimp." - Jeffy Mai

Absolutely stellar. Best Brisket sandwich I've ever had. Isabella our bartender was an absolute delight; she made our visit so much fun. Great downtown location, close to everything.

Colleague and I came here for lunch and a few things stood out to me. Allie's service was amazing, friendly and positive attitude. I ordered the full rack of ribs with KC Sauce and the Mamoot sauce, and both were amazing. The meat was tender and juicy and not overcooked. Finally, they have sweet tea!! As a Southern boy its been hard living here where no one has sweet tea. A BBQ spot with Sweet tea is perfection. Also today is the first day of their Holiday menu and the restaurant was very festive and I appreciate that.

Niko Phillips was bartending tonight when we stopped in for dinner. We're traveling and wanted BBQ for dinner. Niko greeted us with an amazing smile the minute we walked in the door. He made great recommendations for both our dinner and cocktails, and he definitely knows the product! We had ribs, brisket and sausage, and we were definitely not hungry when we finished! While the food and drink were top notch and deserve 5 Stars, Niko definitely made us feel welcome, gave us some local history on the establishment, and made our dining experience over the top! I'd give him a 10 Star rating if it were available. Thanks Niko! Next time we head out your way, we'll be back to see you! PS Go Lions!

This is my first time being here. It is such a CUTE place! Not to mention the bartender knows exactly what she was doing. I LOVE IT! We went out to this place on a Tuesday night, which wasn't so busy that night. We had a small group here and it felt like a private party. If you haven't been to this place, you should definitely visit. You won't be disappointed.

Twains Holiday Hideaway is back and it is amazing! I went after work to check out the decorations and get a snack and I was stunned at the transformation the place had. Leyla at the bar served me with a smile and had the best knowledge of the event, she was super helpful! I ended up getting the "Airport Chex Mix" and the Crispy Pork Rinds. Both were so good and paired perfectly with a beer and I bet with the specialty cocktails but I did not get the chance. Will definitely be back! Merry Christmas (in July)!

Twain's Taproom was the last and the favorite stop on a Crew Pub Crawl through the COMO downtown district. The venue is so cozy and cool. The food and drinks were amazing. The staff was quick and friendly! Big shout out to Maddie for helping me set up the event and for helping me take great care of my customers.

Really enjoyed the drinks and the Christmas in July theme was the best. Leyla and Jacob were great with my co-worker and myself.

Yelp
What a delightful surprise to be found at a treasure of a hotel. Twain's Christmas in July motif you cannot help but to smile. Our host was Leyla knowledgeable, pleasant and a good conversationalist- she has a future in what ever that young woman decides to do. Did not do food yet its bound to be very good. The bar selection was ample . I suggest Uncle Nearest bourbon to the choices. Classic holiday music was playing I caught myself singing along. My wife shhhd me. Caught her a little later humming away Enjoy

Yelp
Every time we visit CoMo we stop in here - we stay at The Tiger and then just walk down and have a nightcap after dinner. They make remarkable cocktails and while the night we were in there, Saturday Feb 8th, it was pretty loud with lots of people present - the other time we were there it was very chill and we saw at the bar and chatted with the bartender and he showed us how to smoke cocktails properly. Very cool. Their take on the Old Fashioned is one of the best I have ever had.

Yelp
Ordered brisket sandwich with coleslaw. Slab of ribs with baked beans, coleslaw & potato salad & but only one side of coleslaw was available. We were offered potatoes & cornbread instead. The meal was terrible. Ribs tough & tasteless; did not resemble online photographs. BBQ sauce was lumpy & not good. Coleslaw was bland & watery. Potato salad was bland. Baked beans were okay. Bartender/server watched us "not" eat but asked no questions. I agree with another review...it's a bar not a restaurant..drink but don't eat.

Yelp
What a fun spot! I sat here with several others who were staying at the hotel, and I love a good hotel bar. This one just has such a unique spin to it. To be fair, Missouri wine isn't my favorite tasting wine, but the one I had wasn't terrible. Next time I visit, I am going to have to try their food. The only thing I would suggest would be to train the bartender on what is considered a dry red wine because the one I was given definitely wasn't dry, but that's okay!

Yelp
We love the vibe of this place. Best bbq is Columbia! The bartenders are always friendly and make a great cocktail! Great selection of local beers too.

Yelp
Had to return to try the bbq. Had the turkey sandwich with baked beans and my date had the brisket sandwich with the mac. Everything was very rich and flavorful, we really enjoyed! Bartender/server was super friendly, almost bubbly and made us feel very welcome. For drinks I had an IPA and my date enjoyed a Bloody Mary. Very small space and very loud, made conversation very difficult but otherwise a terrific evening.

Yelp
One of my favorite bars in Columbia! It's an elegant cozy, vibe away from all the college bars in the area. The drinks are great & always have had wonderful service from the bartenders. Perfect for date night or after work cocktails!

Yelp
Very small, but elegant. They serve Missouri craft beers, wines, and spirits, only. And that's just fine by me as I prefer to drink local. They don't serve flights, and I hope they eventually change their minds about that. They offer a meat/fruit/cheese plate to complement the wonderful drinks. Will definitely return. An update: A couple of weeks later, they now have flights! Life is good!

Yelp
Great BBQ! Great service! Great beer! Great bourbon! Very cool place. Very small but super inviting. When we are back in town we will come back. Our server Conner was out of this world.

Yelp
Walked in the door, greeted with a smile, asked if they were still taking food orders at 7:30 PM, they said absolutely. I sat down, asked for a recommendation, was told to try the brisket sandwich. I added cole slaw and I don't regret any of it! I was told the food would "change my life"...it was great. I started with the cole slaw, amazing! Nice balance of vinegar to mayo ratio, with just the right amount of pepper to wetness...best I've ever had! Now, the brisket sandwich (paired nicely with the wheat beer that was recommended as well). I also asked for a side of KC and STL bbq sauce to try. The brisket was amazing, smokey, tender, even a few pieces that were more done than the rest had a complimentary char flavor to them. I thought the sandwich was on a brioche roll, but I was happily corrected and told it was a Japanese milk bread roll made "in house". I wish I wasn't just passing through; what this place lacks in size, its personality and food make up for it hand over fist; great ambiance! Oh yea, the sauce comparison, I liked the STL sauce just a little better. 100% recommend if you're ever in Columbia, MO!

Yelp
Great vibe in a fantastic historic location. Unfortunately the service was extremely slow and poor. The lone bartender was overwhelmed and spent more time flirting with the customers. The bar and tables were filthy, unclean, and littered with empty glasses with only 9 people in the bar. I had such high hopes, but left disappointed.

Hanna W.

Yelp
I love that they serve Missouri beers and spirits! The bartenders were friendly and sociable!! Very fun time.

Ron W.

Yelp
Worst bar experience in my 33 years since turning 21. One bartender working and was extremely overwhelmed and seemed to have no sense of urgency. There were about 5 people in the bar when we arrived. Ordered a cocktail from the menu and the bartender said it would take a few minutes to make. The Mizzou basketball game ended and the place started filling up. The bartender continued taking orders and making drinks for other customers. He apologized at least 3 times every when he walked by our table to deliver drinks to other customers that arrived after us. Finally got a drink 25 minutes later. The service certainly does not justify the steep pricing. The Tiger Hotel can do better than this.

Rich M.

Yelp
Bar is a tap room but offers select list of cocktails. I ordered a Finn's Lemonade. Drink was great, refreshing. However, it took 30 minutes to get my drink. One bar tender for about 30 customers. We visited bar after Mizzou basketball game. Not prepared with enough staff.
