A Michelin-Caliber Tasting Menu Is Hidden At Uberto in Gay, Georgia | Eater Atlanta

"An hour-and-a-half south of Atlanta, in the tiny town of Gay, a fine-dining restaurant is tucked within a sustainable farm of cucumbers and fairy tomatoes and a luxury cabin resort. Kara Hidinger and Ryan Smith of Michelin-starred Staplehouse brought their dinner tasting menu here, and the seasonal $255 lineup delivers: green curry noodles clear as glass arrive in a transparent herb-laced broth; venison prosciutto comes on a board strewn with antlers and conifer leaves like a deer had just grazed. The $125 wine pairings focus on biodynamic and sustainable producers—the 2021 Stefan Vetter Sylvaner with beef tartare is excellent, pulling on the dish’s garlic and onion notes—and the negroni with gin, red vermouth, and tawny port is a must, the port adding a warm complexity. A locally sourced strip loin with aji dulce, burdock, and fermented potato bread was another standout. Hidinger says this is the kind of dining they’d envisioned, pulling from surrounding nature with creative freedom that shows in dry-aging techniques and clarified broths, all set on an art-filled property founded by the Duke and Duchess Visconti di Modrone and dotted with pricey cabins starting at $2,700 a night. Newly opened Uberto Restaurant is a project of Michelin starred Chef Ryan Smith of Staplehouse fame. This truly farm to table kitchen is actually on the Quercus farm, a luxury lodge resort with a comprehensive well managed garden planted exclusively for supplying the restaurant and guests of the lodge. Chef Ryan is pushing the envelope in this new project. Every dish was not only delicious, but truly unique - a major accomplishment in the largely derivative world of fine dining. If you enjoy fine dining but feel there is nothing much new to discover, head down to Uberto to be reacquainted with innovation and supremely balanced cooking.

What an absolutely delightful experience. Ryan Smith is absolutely at the peak of his skills. The closest thing to experiences like Noma and Alinea I’ve ever had in the state of GA. The service was spectacular. Absolutely worth the drive. Unquestionably one of the best meals I’ve ever had.
