"A contemporary restaurant with an open-view kitchen, two counters and a Japanese ambience that is far from lacking in personality. Its meticulous, constantly evolving cuisine could be described by quoting the Greek philosopher Heracles: “No man ever steps in the same river twice”. In his restaurant, which shares the nickname given to him by his grandfather when he was a boy (“Hugochan”, or “little Hugo”), chef Hugo Muñoz conjures up Japanese cuisine (on an à la carte and a personalised Omakase menu) in which seasonal ingredients take centre stage, incorporating enjoyable influences from other cultures and with a nod to iconic Madrid dishes (such as the tripe gyozas “a la madrileña” and his version of “Soldaditos de Pavía”) and other legendary chefs (Martín Berasategui, Joël Robuchon etc). One of the nicest meals I've ever had, easily better than most Michelin-star restaurants, no matter how many stars. The dishes were inventive without being silly, and celebrated both Spanish and Japanese cuisine. The service was smooth and efficient (the latter being particularly appreciated, as I was dining solo). If all I'd had were the cocktails, while enjoying the setting (including an interesting collection of books at the end of the bar) and the music, I'd have had a great time. But the food was absolutely delicious.

Spectacular experience! The food was amazing, and the chef was always present, explaining each dish with enthusiasm and warmth. The entire staff was incredibly friendly and welcoming. The ensaladilla rusa was outstanding, and the gyoza—wow! As the chef described, it’s “Madrid in a Japanese gyoza”—an absolute must-try. Everything was fresh, flavorful, and perfectly executed. One of the best spots I’ve been to so far—perfect for special occasions with its great ambiance and spacious setting!

Food is great, although pricey. Omakase experience is out of this world. I had planned to go back for a 2nd time, however they now have a ridiculous cancellation policy of 80 euros per person if reservation is not cancelled at least 72 hours before. I got sick with severe vomiting about 1-2 days before my reservation and they didn’t care, they just wanted to charge me 400 euros (5 people x 80), which i manage to cancel through my credit card. Therefore i will never try to go back to this restaurant. There are so many good restaurant options in Madrid, why bother reserving here.

Been there several times already, they never disappoint me! The first couple of times I was there, I had the Omasake menu, enough to leave you full, and to give you a good idea of the philosophy behind Hugo Munoz cuisine. When I go back now, I always trust them with their dishes of choice. I am gluten intolerant and now pregnant, and this is one of the few places where I completely feel I am not missing out anything (I know who is gluten intolerant can understand me on this!). The quality of the fish is impeccable, and the research behind each product is to respect. Bills are always very clear, even with the Omasake, they give you a per dish breakdown of the cost, which is something I really appreciate. Also, great selection of wines and cocktails! BRAVI!

Ugo Chan is a charming fusion Japanese/spanish restaurant. The service is upscale the wine list is a wine book. The omikase is the way to enjoy the chef ideas. Beautiful and flavorful food. I really enjoyed and recommended for all foodies

If you’re reading this review, deciding which Michelin star restaurant you should try on your trip to Spain, constrained by limited time and $$$, I recommend adding Ugo Chan to your list. Madrid was the last stop of our Spain trip and by that point we were “all tapas out” and really needed a good fusion restaurant. Ugo Chan was just spectacular, every dish was bursting with flavor and freshness. We had the omakase menu and they were kind enough to accommodate to one of our party that didn’t eat raw fish by providing a “cooked” version of the omakase. Hugo himself was a delight to meet and to speak with. You can tell that most diners were locals and regulars.
