This was my fourth visit, and unfortunately the first disappointing one.
I came by habit — the food and service here had always been consistently good. Sadly, this time something clearly went wrong.
The restaurant was almost empty: only one large family table and us. We politely asked the staff not to serve the main course immediately after the starters and requested a one-hour break between courses. We like long dinners, conversations, and a relaxed pace — this was clearly explained and confirmed.
Despite that, the main dishes arrived about 20 minutes later. We asked to pause and serve them later. The staff then informed us that everything would need to be cooked again, which would take 45 more minutes. This was their mistake, so we agreed to wait.
What made the experience worse was that 2–3 different waiters kept coming, and we had to explain the same situation repeatedly, spending 10–15 minutes each time clarifying something that had already been clearly discussed (and even shown on the clock).
When the dishes finally arrived, especially the paella, it was obvious that the rice had been reheated — not freshly baked as it should be. The fish on top might have been prepared again, but the rice clearly wasn’t.
The chef came out and repeatedly said “I swear” that everything was cooked fresh in a 300°C oven. Unfortunately, swearing is not proof, and the texture said otherwise.
Visually, everything remains beautiful: sunset views, elegant interior, pleasant music — the atmosphere is still lovely. However, the service coordination and food quality this time did not match the level I experienced before.
For this visit, I’m reducing my rating to 3 stars.
That said, I may return again — I often stay in this hotel and have truly enjoyed UNA MAS in the past. I hope this was just an off night and not a new standard.
