And master it, she has: At Ursa Bakery, a micro-bakery that pops up weekly at a handful of different locations around the city, McWilliams uses local grain to make artisan fougasse, sesame bread, spelt honey loaves, and even granola. Claire and Maddy are BREAD WIZARDS. The dedication to flavors and textures makes for bread that is truly outstanding. It's one of those things that's almost too good. I think I've tried nearly every loaf they offer, but my favorites are the Omnibus, which almost feels too good for the paltry sandwiches I make with it, and the Cinnamon Raisin, which can be "accidentally" consumed in one day if not careful. The All Rye reminds me of waking up and having breakfast in a Bavarian Ski Chalet. The fougasse is great and I don't even like olives. It is wonderful to find folks who are committed to producing a truly outstanding product, and I tell people to go to them all the time. I love showing off their bread to other folks too, so consider this my endorsement.

Ursa bread is fantastic. Since the pandemic when we were incredibly lucky to have this bread delivered to our door to now it has been consistently wonderful bread baked with love. I go to the farmers markets specifically for this bread. Philadelphia has a number of great new small bakeries but Ursa is at the top!

I am such a huge fan of this bakery and the woman behind it. I try to get to the Falls River Farmers market every weekend. Ursa has the most delicious breads - I buy their fougasse every time as well as their home made granola. When entertaining I get baguettes and other breads. They sell out! Can't recommend any bakery more they are on the savory side which is my absolute favorite!
