Portland Restaurant Vaux Will Open in the Pearl District August 9 - Eater Portland

"Vaux, the new restaurant within the Canopy Hilton, comes from Sara Woods, a chef who spent time at the illustrious Blue Hill at Stone Barns — the farm-centric restaurant that Eater once called “the best restaurant in America.” Woods also worked as a culinary producer for Martha Stewart and the Food Network, before moving to Portland and working for Jenn Louis’s Lincoln. Vaux, named for Vaux’s swifts and their annual migration to South America, is Woods’ first restaurant where she is fully in command; the restaurant pulls inspiration from both Europe and local produce, from pizzas topped with local mushrooms to a hulking braised short rib with spaetzle and pickled shallots. The restaurant serves breakfast, lunch, dinner, and two separate happy hours; during the day, diners can expect dishes like grilled cheese on Nuvrei’s croissant bread, as well as salads and flatbreads. For those seeking a drink, Canopy does have a full bar that leans on Oregon spirits, as well as a Willamette-Valley-heavy wine list. Like The Hoxton, Canopy’s restaurant space is open-format within the hotel; the lobby slowly transitions into the restaurant space and bar, with open patio seating and art from Elizabeth Leach Gallery. Stayed at the Canopy hotel and received dining credit so I had breakfast and dinner at Vaux. The challah French toast sounded promising but was underwhelming. It was probably the thinnest French toast I've ever had, though the flavor was pretty good. The pecan butter was disappointing. It was almost chalky. The happy hour pizza was a good deal. The pizza of the day was white sauce with bacon and spinach. Crust was not too thick and nice and crispy. It may have been floured too much though. With all the other dining options available in PDX, I don't know if I'd go out of my way to come here, but it's worth checking out if you're already at the hotel.

Went here for some dinner tonight and ordered the wings, which were delicious! They toss it in a peach buffalo sauce that made my mouth water. Not to mention the atmosphere was relaxing and peaceful. A great way to end a Monday!

Way more than a hotel bar! The food and drinks here are fantastic. Lead bartender, Chuck Ward, has mastered the craft of the Old Fashioned. Easily one of the best I’ve had. Meanwhile Sous Chef Zack has brought in his own family sausage recipe that elevates an already hearty breakfast menu. There’s plenty of space for events or just relaxing with friends. High quality establishment here, there just happens to be a hotel (a very modern, comfortable hotel with incredible staff) attached.

Bartender was very attentive and friendly! 😁 Cheese pizza was delicious, chicken Caesar salad was good, but the croutons were not crunchy. 🤷🏻‍♀️

Awesome food! Even better drinks! We got an old fashioned, a Sazerac, the halibut, and the short ribs. The food was awesome, fork tender for everything. Haley made the best old fashioned I've ever had, and that's my go to drink. Definitely worth the visit whether you're local or visiting.

The staff is unbelievable and made the our time very fun. The food is pretty solid and it's not a bad place to hang out of you're staying in the hotel. I probably wouldn't specifically go here if I wasn't staying in the hotel, but it's not a bad option.

Tried to start the night out here because I had credits to burn. Drinks were underwhelming for the price and the credits went fast, additionally the bartender didn't know what a highball drink was and then kind of became combative about it. He swung by twice to try and tell us we were wrong about how a highball is served and what ingredients are in it. Also took the tip receipt while we were still trying to enjoy our drinks. He didn't once ask if we liked our drinks, or if we needed water, etc. Honestly with several other great bars and restaurants in the area unless you're trying to burn your status credits I'd probably go with literally any other option!

Soup was dangerously hot, a sure sign it was microwaved. It was blended to a thin slime and had no flavor. No noticeable cheese, no chunks of vegetables, a sign that it was frozen. I added salt but nothing could save this cat food. It’s like everything here is from kits. Pizza oven is not hot enough. They can accommodate customization of a dish but the pizza dough is premade or frozen. No soul here. Vaux is only for the most desperate of exhausted travelers wishing for enough calories to remain alive. Update: I finally sat long enough for my soup to cool and I added salt. It still tasted like microwaved water. (No, I’m not sick.) I took it to the counter to ask if maybe it was prepared incorrectly. They offered to replace it with anything on the menu. The next thing I got was properly salted but still obviously microwaved. I’ve bumped my service rating up but still do not recommend the food. It’s a lovely place for a drink, but don’t come hungry.
