This Cambridge restaurant appears to be the first of two eastward expansions — Veggie Grill, which claims to be the largest vegan chain in the country, also has a New York location planned — and currently remains heavily concentrated around Los Angeles, with outlets in Illinois, Washington, and Oregon.
