Villa Pignano Restaurant - Stella verde Michelin

We had a wonderful dinner at Villa Pignano during our late October stay. The restaurant’s dedication to using ingredients from its own estate is evident in every dish. I had the Suckling Pig, which was exceptional, and my wife’s Scottona Maremmana was just as delicious. You could genuinely taste the quality. The service struck the perfect balance of attentive and friendly, and dining indoors felt warm and intimate on a cool autumn evening. It was a truly memorable experience, and we wholeheartedly recommend the restaurant to anyone staying at Borgo Pignano.

Came here for an anniversary dinner and this place was so romantic, excellent service and impeccable food. I’m still dreaming of the bread and olive oil starters. I live in NYC and it’s true what they say, the carbs are made different in Italy. I ate multiple pieces of bread and pasta and my stomach felt so light after the meal whereas back home, I would be bloated. We started with the scallops with caviar on top - so soft it melts in your mouth. The sauce that it’s paired with adds an explosion of flavor that ties it together nicely. The steak was perfectly cooked to our liking, so juicy and tons of flavor. So happy to spend our anniversary here!

An exceptional experience - one that would garner Michelin recognition in San Francisco, New York or Tuscany. Lovely expression of highly local ingredients in modern dishes that build on each other in a very thoughtful way. Standouts included a “barbecue” langoustine with cucumber salad that hit the sweet smoky flavors right on the nose, without any heavy sauce, and perfectly medium rare duck breast with just a hint of sweetness in the long-reduced juices that accompanied it. The wine suggestion was perfect, even though the sommelier claimed not to like Orange wines. The only miss was a one-note lemon and gin dessert that was simply too uniformly sour. Each bite gave the same shock of eye watering tartness. But genuinely, this place is special. The service didn’t do everything exactly right, but they were trying hard to and very attentive. The view is just indescribably gorgeous. As the guide says, this restaurant is absolutely worth a trip.

The Villa Pignano Restaurant is part of Borgo Pignano which is approached through a medieval arch. It is one of the most romantic restaurant settings I have ever been to. Dinner at the Villa Pignano Restaurant is in itself an event. The food is all of an extremely high quality and really could not be fresher. Much of it is sourced from the Estate and its gardens. The Villa's Chef, Anthony Burd, is highly creative and works hard to invent combinations of ingredients and flavors that never fail to surprise and delight. Villa Pigano are very fortunate that Anthony, an American of Italian descent, has decided to return to his roots to delight Tuscans and visitors alike with his culinary skills. Anthony is, in my view, a Chef to watch, and ought to write and publish some, if not all, of the dishes that he is so good at creating. If you need any help with the choice of wine for dinner, the Restaurant Manager, Gabriele, is on hand to make suggestions which invariably match to perfection the food being provided. If you ever find yourself in the Volterra region of Tuscany, the Restaurant at the Villa Pignano really is a must. If you don't pay them a visit you will never know the delights that you are missing. I cannot recommend it highly enough.
