The overall service and environment were excellent. The team was attentive, professional, and made us feel welcome throughout the evening. The dining room itself is elegant, comfortable with a warm alpine touch, setting the right tone for a high-end gastronomic experience.
The food was very good, beautifully presented, and showed a good level of creativity. Each dish was thoughtfully composed and visually refined. A particular highlight was the cheese course, which was outstanding: a personalized selection chosen directly from the restaurant’s cheese cellar, guided by knowledgeable staff.
That said, the experience lasted around 4.5 hours, which felt on the lengthier side for such tasting menu. This would have been perfectly acceptable for an 8-course tasting menu if the wine pairing had lived up to expectations. Unfortunately, it was one of the weakest wine pairings we have experienced at a tasting restaurant and significantly impacted the overall enjoyment.
The full 8-course wine pairing only covered 7 courses and consisted of six wine glasses—more accurately, half-glasses of no more than ~5 cl each—including three whites, one red, one rosé, and one dessert wine. In addition, one course was paired with a 0.0% tea infused “wine,” which tasted more like juice and was entirely unexpected within a wine pairing.
Given the wine pairing price point, the selection of wines felt inadequate. In hindsight, I strongly wish we had been advised upfront to opt for one or two bottles instead, which would likely have provided a far better experience.
In summary, the cuisine, service, and atmosphere are of a very high standard, but the wine pairing—particularly considering its cost—falls well short and unfortunately undermines an otherwise excellent dining experience (in the 3-4 star rating range).
