"Peruvian cooking and Basque ingredients are to the fore in this restaurant located very close to the university campus in the relaxed Deusto district of the city. Here, chef Gabriel Huaman showcases plenty of personality and highly refined textures in dishes that honour his roots and his time spent working with the great Eneko Atxa. At this restaurant with a meticulous contemporary decor, they like to say that the cuisine at Waman will take you on a journey from the peaks of the Andes to the water of the Biscay coast without leaving your table. The culinary experience can be enjoyed via the à la carte and a choice of three set menus: Wayki (only served for lunch midweek), Inti and Pachamama. Dishes you won’t want to miss thanks to their flavour and stylish presentation include the octopus with olives and a dessert entitled Chocolate and Lucuma (a fruit commonly found in the Andes), the presentation of which pays homage to the unusual terraces of the Moray archaeological site near the Peruvian city of Cuzco." - Michelin Inspector

We found the food absolutely amazing — every dish was unique, with exceptional flavors, sauces, and ingredient combinations. Each course was a delightful surprise. However, coming from countries like Greece and Italy, the wines didn’t quite meet our expectations The overall atmosphere was simple yet very elegant, and the staff were incredibly friendly, warm, and always ready to help with a smile.

Had the 7 course tasting with the wine pairing . The food is outstanding with unique flavors. The wine pairing is bold, from small, independent wineries. My favorite was the pear sparkling. The food has unique sauces which is savory enough to serve with ramen.

Absolutely wonderful. Had the Inka menu, all dishes were delicate and beautifully presented. Our server was extremely nice and the atmosphere was calm and relaxing. Can nor recommend enough.

This restaurand was a true and exeptional experience, one of a kind in Bilbao. Taste of Perú combined with basque tradition in a playful way, and all dishes looked like an art piece without being oretensius. And service was warm and welcoming.

Thank you for the wonderful evening. We had to change our plans last moment but Waman team really went above and beyond to accommodate all our needs to celebrate our wedding anniversary and even cater for kids menus. Food is delicious, very attentive and friendly service and fantastic wine card. We had wonderful time and culinary experience. Arsen

Michelin guided Peru restaurant. Ordered a course menu. Lots of interesting looking food came out. Some was excellent tasted. Tried Peru wine and smoky taste on it. Nice service and employees were kind.

I wish I could give 4⭐️ but it was more like a 3.5⭐️ The starters were delicious, the Ceviche was phenomenal, the spider crab and the scallop/pork dish were solid. The mock risotto (orzo) was a textural nightmare with unbalanced flavors and the "raviolo" was visually pleasing, very clever in context, but that's all there is to it. The mango/pineapple foam (forgot to take a pic) tasted great, but the dish does more damage than good to the ingredients. Lastly the pistachio trilogy is in dire need of some crunch, we had much higher hopes for this dish. They had a great selection wines, one of which their knowledgeable sommelier helped pick out. Unfortunately he was the highlight of the service, as our waitress was rather unenthusiastic (and didn't speak english, which I didn't mind, but might be an issue for some) Keep in mind, that weekends are tasting menu only, and I'm not sure if it's indicated anywhere on their website. Overall food is good value for money, but rather unpolished still.

So glad we dined here! The thirteen course degustation represented excellent value. Each course was a superbly crafted combination of exquisite flavours and amazingly not a single dish missed the mark. Chef Gabriel Huaman designs complex servings with intricate attention to the detail of flavours, mouth feel and presentation. Each course is a delightful artwork. The restaurant is family owned and sommelier Guillermo is knowledgable and was attentive to our needs. With so many touristy eateries in Bilbao, Waman is a stand out that deserves high praise. Tip: walk over the pedestrian bridge for an excellent view of the photographic Guggenheim.
