Michelin guided Peru restaurant. Ordered a course menu. Lots of interesting looking food came out. Some was excellent tasted. Tried Peru wine and smoky taste on it. Nice service and employees were kind.

So glad we dined here! The thirteen course degustation represented excellent value. Each course was a superbly crafted combination of exquisite flavours and amazingly not a single dish missed the mark. Chef Gabriel Huaman designs complex servings with intricate attention to the detail of flavours, mouth feel and presentation. Each course is a delightful artwork. The restaurant is family owned and sommelier Guillermo is knowledgable and was attentive to our needs. With so many touristy eateries in Bilbao, Waman is a stand out that deserves high praise. Tip: walk over the pedestrian bridge for an excellent view of the photographic Guggenheim.

I wish I could give 4⭐️ but it was more like a 3.5⭐️ The starters were delicious, the Ceviche was phenomenal, the spider crab and the scallop/pork dish were solid. The mock risotto (orzo) was a textural nightmare with unbalanced flavors and the "raviolo" was visually pleasing, very clever in context, but that's all there is to it. The mango/pineapple foam (forgot to take a pic) tasted great, but the dish does more damage than good to the ingredients. Lastly the pistachio trilogy is in dire need of some crunch, we had much higher hopes for this dish. They had a great selection wines, one of which their knowledgeable sommelier helped pick out. Unfortunately he was the highlight of the service, as our waitress was rather unenthusiastic (and didn't speak english, which I didn't mind, but might be an issue for some) Keep in mind, that weekends are tasting menu only, and I'm not sure if it's indicated anywhere on their website. Overall food is good value for money, but rather unpolished still.

This was the best surprise on our trip. We usually go for local cuisine but I am so glad we ended up having lunch at Waman. The value you get for the set menu at lunch is incredible. The food was among the best we had during our trip in Northern Spain and all the plates were a work of art, especially the crab. I am having a hard time choosing a favourite, all the dishes we had were amazing. I will definitely go back on our next visit to Bilbao. Highly recommended!

Our fist visit in Bilbao and we ate like kings. This is a bulls eye place. We were served with kindness and great advise. Fiid was served in a modern way but it was a intercontinental trip. We've tasted things we didn't know existed. This please is an oasis of great food somehow distant to all the noise city so big as Bilbao created. We were satisfied with every dish and thanks to great advise from the crew, we could better understand cuisine we didn't know before.

Happy we found Waman for the one night we had in Bilbao. The restaurant was in a local neighborhood but not too far away from Guggenheim Bilbao. Friendly staff. The crab and the ceviche starters were so delicious and fresh. We could have another round of these two dishes. The sourdough bread with yellow and red pepper butter were tasty. The main course of oxtail pasta and clams with rice like a paella were good but a bit on the salty side. Dessert was yummy. Great local wines and so reasonable for such high quality ingredients.

Felt that service was a little slow, but the food was genuinely quite special indeed, and not outrageously expensive either. Its very much a haute cuisine-type experience, but you don't need a suit to get in.

I went to this restaurant in hopes of finding a good Peruvian spot in Spain (and Bilbao in specific). The food was excellent and a great experience over all. The team provided a top restaurants service for an affordable price. The flavors were close to the flavors you get in Peru. Chef Gabriel successfully elevates Peruvian cuisine while maintaining what makes Peruvian food so enjoyable. The ceviche has the most invigorating flavors I've ever tasted. A must try.
