Showed up the day before their opening on accident, with a friend who sort of dragged me there. The owners happened to be standing by the front door, a day early they let us in.
I'd compare meeting Greg and his business to bumping into an old friend, he gave two strangers a tour of the whole operation, backstage access to all of it, nerded out with us on craft beer in his cellar, and was genuinely good people. It was just right place - right time.
The product they produce is literally unique to Chicago, no one's doing it. It's already being bought wholesale by some really good Chicago restaurants. We took a salumi and a pancetta home (at a friendly discount) and they were amazing... like nothing I've ever eaten. It was truly an unbelievable experience...
