"West Loop Salumi, founded by Greg Laketek, shuttered last month after nearly five years of business. The shop was known for its excellent preserved proteins, earning praise from many. Laketek learned the craft of meat-curing from Italian salumi expert Massimo Spigaroli. Fans can still find West Loop Salumi products at Eataly." - Kat Odell

Great byob place to go with a bottle of wife and good friends. We had 6 people and we came on Sunday. The guy behind the counter was helpful and courteous and we enjoyed the charcuterie and the cheese plate. Would come again.

I've ordered the whole piece of Nduja salami,it did arrive pretty fast but no ice pack was found in the box. It tasted great the first 2 days, on the 3rd day it started to change its color to a darker shade. I thought is normal but after tasting it again I had a very weird strong dry effect in my mouth so I threw it in the garbage. We eat a lot of salami and I grew up in a sausage and salami making household but this was not a pleasant experience.I believe they are still yet to discover the right curing technique.

Wish the front of the store were open more hours. Tried coming down on a weekend when I found out it wasn't open. No hours posted on the door or anything like that. But when I finally did get to stop by there, the owner was working the counter and super-nice and helpful. The meat was great. Relatively enjoyed the gifts. And they were offering some samples of the things they were slicing for customers while I was there, so I got to try a few new things. Not cheap, but super-tasty.

Showed up the day before their opening on accident, with a friend who sort of dragged me there. The owners happened to be standing by the front door, a day early they let us in. I'd compare meeting Greg and his business to bumping into an old friend, he gave two strangers a tour of the whole operation, backstage access to all of it, nerded out with us on craft beer in his cellar, and was genuinely good people. It was just right place - right time. The product they produce is literally unique to Chicago, no one's doing it. It's already being bought wholesale by some really good Chicago restaurants. We took a salumi and a pancetta home (at a friendly discount) and they were amazing... like nothing I've ever eaten. It was truly an unbelievable experience...

We visited West Loop Salumi over the weekend (check hours ahead of time, they are limited) and were overjoyed with the attention and knowledge we received from Ian. The selection is unique and flavorful, and precisely what we were looking for in order to pull together a charcuterie plate.

How do you beat BYOB and a board of tasty high end Charcuterie? It's a social dining experience. We often like to eat light and bounce around to several places to meet friends. This place is always on the list.

Seems like they have a good product through the window... It's a shame they don't know how to run a business. If it says on the window and on Google "retail hours 12-3 Tuesday-Friday" I expect the store to be open at 1:30.... I trekked across 1/2 of Chicago to pick some salami up... Might want to consider updating your window card and your google profile.... If your out of product, then you should post a sign on your door stating so. Just frustrated because now I've wasted hours of my day....

I actually had some salumi before their store opened. Although the meat is very tasty, it is also very pricey. Bring your wallet. I think $36.00 for 8-10 ounces is way too expensive. #CitiExperts @Localguides
