From Michigan looking for a farmers market and came across this one while traveling through the Denver area. First food truck when you walk In caught our eye and had to give it a try. They serve Thai food, the name is Mountain Thai Kitchen. Had to try the papaya salad and minced chicken salad. Both were fantastic. We ordered medium spicy on the papaya salad and it was just the right amount. The minced chicken salad was especially tasty with fresh shallots, lime juice, toasted rice and chicken. It also came with sticky rice which is a nice compliment to the chicken salad. We then ordered a few more dishes to take back to our room; pork satay, pumpkin curry with chicken (now my favorite), Thai puffs (not on the menu, you have to ask for it), and mango with sticky rice and coconut milk for desert. The cashier was a nice guy, and we found his wife was the cook and from Thailand. Highly recommend when you can catch them. I think this is a weekend gig for them. Will post a video later which shows all of the dishes on their menu.
