This was our final dinner for our short stay in Whistler. It recently won Best Restaurant in Whistler in Vancouver Magazine, so I had some high expectations.
We had reservations and asked whether we preferred to sit inside or in the patio. It was a beautiful sunny day, so we decided patio, where it was lush and still covered from direct sunlight. Although we didn't sit inside, it clearly looked a like a sleek, dark and elegant place with a stunning bar.
We were welcome by a very professional server where he went over the spring prix fixe and the a la carte options. He then took our drink order. Our drinks took a lot longer than expected - maybe 10-15 min, but after seeing it served, I could clearly see the attention to detail which is why it took awhile.
We decided on the prix fixe ($39 for 4 courses). Here is what we tried:
- Spring Sweet Pea Soup - Very good/excellent. I would seldom order a pea soup, as I couldn't imagine it ever being very good. I was completely wrong here. Warm, silky , smooth and nicely seasoned this converted me. I could eat this over and over.
- Tomato Tartare - Very good/excellent. I wasn't sure if tomato tartare was a real dish. But what I do know is that when it came out, it looked like a lot of beef tartare I've had. Not only beautifully presented, but also delicious.
- Chicken Liver Parfait - Very good. Another work of art, and good tasting plate. My only thought was the pickled rhubarb overpowers the parfait.
- Radiatori - Good. Solid dish, but compared to everything else we had, not as memorable.
- Roasted Ling Cod - Excellent. I've had roasted fish so many times, it tends to disappoint more than impress, but they did it perfect. It takes a good chef to get the fish the perfect texture (not over cooked) yet the skin so crisp. Topped off with a great sauce, this was exceptional.
- Osso Bucco - Very good/excellent. A confidentially prepared dish and it delivered. Braised to perfection.
- Rhubarb and Wildflower Gateau - Very good. I generally don't really like rhubarb or edible flowers, but what they delivered is another beautifully plated dessert that was light and surprisingly delicious.
- Warm Chocolate Fondant Cake - Excellent. I've had some many similar molten cakes, I was sure there was no way it could get any better. Wrong. Perfectly warm liquid centre, crispy like shell, chocolatey but not overly sweet, this is probably the best version of this dessert I've ever had.
Service was spot on. Server, runners, and bussers were all professional, friendly, personable and attentive. The exact service you would expect from a top tier restaurant.
What really blew my mind is that the prix fixe menu is only $39 (plus supplemental fees for some items). To get this high a quality meal in Vancouver would cost at least twice that. At this price I would gladly drive up from Vancouver solely to eat at Wild Blue. I can easily see why this place won Best Restaurant in Whistler. Wonderful dinner.
