In a relatively unmarked and unassuming industrial warehouse in Canmore Alberta you'll find the Wild Life Distillery. From the outside, it could be any other bay in this big industrial park, but the faint glow of neon in the window tells you it's not.
I was skeptical coming in here because craft distilling in the US is all over the place. Some people seem to innately understand how to make great stuff while others are in such a hurry to recoup their investments that they'll put out anything you can legally drink. Beyond that, the tasting room experiences are "wildly" different too with again, some who really know what they're doing and how to explain their offerings BUT then again, some with drinks that just shouldn't be served.
Wild Life actually blew me away. The tasting room itself houses a beautiful bar and back bar to display their products, comfortable seating for guests, and a proper bar setup for the bartender working.
Wild Life makes a vodka using Alberta red wheat, a classic style gin, and an Alberta gin with botanicals found only in the province!
Why no whiskey? Because the Canadian government has done a great public service by not allowing anything to be called whiskey with less than four years of age!
Tasting spirits straight is great but it's even more impressive when those spirits stand up and stand out in cocktails. It's even more impressive when those cocktails are made with the right attention to detail, served in the right glassware, and put over the correct ice. It's most impressive that you can find all of that in the tasting room at the Wild Life Distillery.
We tried a negroni and their take on a G&T with their own tonic syrup, as well as their seasonal cocktail with pepper flakes, Alberta gin, citrus and some other yummies! Look for those recipes on the bar top when you visit.
Make this the place you come wind down after a day of adventuring or make it a destination all its own. You won't be sorry. I only wish I'd thought ahead and brought a boozecase (extra suitcase to haul booze home).
