Cheat Sheet: Eat Your Way Through Singapore's 24 Newly Awarded Food Establishments

"A seafood-focused debut along Hong Kong Street from Singaporean chef Nicolas Tam, the pan-Asian tasting menu reveals solid French technique and leans on mostly fresh Japanese produce such as amadai; served and introduced by the chefs, courses flow seamlessly and build upon one another with refinement, precision, and balance." - Mikka Wee

"After working in some prestigious kitchens, Chef Nicolas Tam makes his debut with this intimate, understated and well-run restaurant. His solid French techniques come through in his pan-Asian tasting menu featuring mostly Japanese ingredients, sporting refinement, precision and balance. Served and introduced by the chefs themselves, the courses flow seamlessly and build upon each other. Counter seats overlooking the kitchen are the ones to go for." - Michelin Inspector

It's great to have some local representation on Michelin, and the flavours do not disappoint. There are some very creative use of textures and ingredients to emphasize each dish and represent local flavours, I can tell a lot of thought has gone into crafting each dish. I love the attention put on the plating, and every dish looks like a beautiful floral arrangement and has a magical quality. However, the same few edible flowers are used in every dish so it became a little repetitive. After viewing Culinary Class Wars, I am also influenced by the judge's opinion on edible flowers that they don't really do much for the dish. There are also some dishes that I just didn't get, such as the cold soup - it was refreshing but I cannot appreciate that flavour. Staff were friendly and very helpful, but perhaps need to increase their volume and enunciation while they are explaining the dish, as I couldn't catch a lot of what they were saying. There were also moments that I could observe the kitchen atmosphere becoming very tense, as the head chef was unhappy and throwing vulgarities. Definitely not a pleasant moment for the diners at the counter either. Other than that, there were also slight inconsistencies in serving size - most notable being the bread dish. Two of us got to share a loaf while a solo diner beside us got the same. So perhaps each diner should get 1 instead. Overall a positive experience.

Great experience at Willow. Some of the meals were excellent and beautifully presented. However, the explanation of the dishes could be improved — it would be nice to have more relevant details about the ingredients and inspiration behind each course.

What an amazing experience! Outstanding food and service! Kif, Kat and Jimmy made for an truly unforgettable evening! We had a place at the kitchen counter which allowed us to sneak at the magic happening behind the counter. Food was delicious and beautifully prepared. Even though we were one of (if not The) slowest eaters of the evening, we were not rushed at all, but given our time to eat, drink and chat. Thank you to the whole team for making it such a memorable experience!

Staff very friendly and attentive. Food was delicious and was the perfect fusion of modern and Asian cuisine. We opted for the lavish wine pairing which did not disappoint. However, our only slight negative comment would be that we were immediately offered a glass of champagne on arrival, without knowing if it was chargeable or not, or what the wine pairings to follow would be. It then transpired the first wine pairing was a champagne also, and it was brought to the table very soon after the first. So felt a bit rushed to move on as the first course arrived. If we had known this, we would not have ordered the first glass of champagne, as we were then sat with 2 full glasses of champagne each during the first course.

Overall experience is okay. Ambience is fine but food didn’t impress. Service is okay. We walk out of the restaurant not able to recall any fantastic dishes that will make us return. Definitely a one time visit for me. Parking is very hard around the area.

Very special experience dining here at Willow. Staff are all very attentive and professional. Flavours brought to us were so diverse and special, nothing like we’ve had elsewhere. If you are looking for a special place to dine in Singapore this is the place to go as they introduce local flavours fused with Japanese and French influences. Very talented group of chefs. Thank you for this experience.

Undecided on this - felt like the dishes were trying too hard i.e. throw in expensive ingredients to jazz it up, but nothing really sprung up as my fave. Meta & Seroja they kept it so simple, yet had that wow factor & elevated. This was well executed but nothing inspired. I think the service and being tucked away from the counter seats added to the negative experience also.

We had a great dinner at Willow. The food was unique and very good. They were also very accommodating to allow us to start dinner much later as our friend was stuck in prior appt. Thank you!
