I've dined here twice and loved it each time. The first time I dined at this restaurant was in the fall of 2009 for dinner, only to return in the winter of 2012 for lunch and have an equally memorable meal. After dining for both meals, while both were excellent, I think the fare is better suited for dinner.
As you enter, you feel like you have stepped back in time. The ground level is dark, woodsy, and moody. As you go upstairs, more formal dining rooms exist. The attire is more casual than the atmosphere. Both times I have dined upstairs. The one knock on the upstairs is that it does get a bit warm. I'd love to sit outside and people watch while I eat, but each time the weather has been a bit chilly and/or already full of patrons. There are not a ton of outdoor tables, so I guess you need a bit of luck. The restaurant has a rich history as a secret meeting place during World War II. It's definitely worth reading up on that history, as they do have some information available.
The restaurant expertly blends the cuisines of Austria and Italy together, as is customary in the Trentino-Alto Adige region. The menu changes quite frequently, but it is a good blend of the two cuisines, though it does tend to be heavier, heartier fare. There are good choices from a beer and wine standpoint, particularly considering that there are several wonderful whites that come from the region.
I've been twice, and should my travels bring me back to Bolzano (an under-rated destination in northern Italy), I will not hesitate to return. If you have one night in Bolzano and are looking for a place to eat dinner, look no further.
