Spent the afternoon in Sebastopol yesterday, walking around to a great variety of shops, restaurants, and breweries in the area. Sebastopol is a great place filled with a plethora of unique mom and pop businesses, but Wm Cofield Cheesemakers felt the one that stood out to the most to me.
My time here was short and sweet, but in that time, I got to try three separate cheese that were all made in house and all had different flavor profiles. The white cheddar was soft and sharp, the blue was flavorful without being too funky (not always my favorite style of cheese), and their cheese curds melted in my mouth! I was pleasantly surprised by the entire spread, but mostly by the blue cheese, which I thoroughly enjoyed despite usually finding the style to be a little too much for my liking.
My girlfriend and I picked up a portion of the blue, which I'm sure we'll be enjoying later this weekend with some other local cheese picked up earlier that morning at the Sebastopol farmer's market. I'm exciting to dig farther into it!
The man behind the counter, who I assume was the owner, was incredibly friendly and I could tell he enjoyed what he did. He asked if we had the day off for Presidents Day (we do!) and wished us a good once. Sounds like he had the day off, too, outside of a small order he's received earlier today. He was a super nice guy, and I hope he gets to enjoy the rest of the holiday, too!
Samples are allowed for cheese not made in house, too. When I revisit, I'll try a couple more. For now, I'm just glad to have enjoyed this experience, and to have found a local blue cheese I can personally enjoy.
