Coming from Boston, I'm comparing this place to our local legend: Gene's Chinese Flatbread.
The spicy cumin lamb hand-ripped noodles (N1) are the must-get. For noodles, I think Gene's wins out. Theirs have more of that fresh, hand-pulled aroma and chew. Xi'an's noodles were definitely good, too. For the meat, Xi'an wins. The lamb was so tender and so flavorful. And finally, for the spices and seasoning, Xi'an wins as well. The flavors are much more complex and each bite is exploding with flavor.
I recommend getting extra spicy, because for regular spicy they skimp out on the seasoning and aromatics. You'll only have spicy chili oil at the bottom. Speaking of the chili oil at the bottom, there was WAY too much of that. It felt very greasy at the end.
We also tried the spicy cumin lamb burger (B2). The lamb, once again, was delicious. The bread was just okay. Definitely one of the best rou jia mo I have had (although I haven't had any in China).
They have limited seating, and luckily we were able to grab two seats since people finish eating pretty quickly.
