XO in Hamburg is one of those places that just works. No fuss, no exaggeration show, no trying-too-hard energy. An open kitchen, a calm room, friendly service that knows the menu and leaves you space to enjoy it.

The food is modern seafood with a light fusion touch, but always clean and well judged. Dattel hummus with charcoaled lettuce. Simple, but memorable. Smoky, slightly sweet, nicely balanced. One of those plates you keep picking at because it just tastes right. Yellowfin hamachi with yellow corn jus. Fresh, delicate fish with a sauce that reminded me of a softer, gentler leche de tigre. Great texture. Crisp, light, and fresh, with just enough acidity. Fish croquettes
Comfort food done really properly. Crisp outside, clean inside, no heaviness. Nothing felt overworked or confusing. You could taste what each dish was meant to be.
Wine
The wine list is short but solid and well matched to the food. A Bourgogne Chardonnay and a Riesling Jungfer both worked beautifully — fresh, balanced, and exactly what you want with seafood.
