First, yola is a 5 star restaurant, but this review is for the chilaquiles. Hopefully this and the one other review on yelp (none on Google maps) that mentions chilaquiles will inspire a change in the recipe.
Stopped here for Sunday breakfast and the service was great as usual. I was on a mission to try the chilaquiles, which I've just recently discovered for myself because of trip to Arizona where it is popular. I've now had chilaquiles at 4 restaurants, and have made it for myself after watching several videos. So, I'm not an expert.
While primarily composed of tortillas and salsa, something magical happens when combining those things together in pan with epazote and then topping with eggs, protein, queso/ crema, and cilantro to make chilaquiles. It's more than the sum of its parts.
Unfortunately, there was no magic in the chilaquiles at Yola. I'm not an expert, so I don't know why we didn't have any chemistry, but there was no cheese, cilantro, protein, and I'm guessing no epazote. Or maybe is was the chips not being combined with the salasa in a pan. Or maybe they started with chips rather than tortillas? Only Yola knows. What I know is that this is the first chilaquiles that I would neither order nor recommend even though the price was under $10.
What do I recommend at Yola? Just about everything else I've had is great. Breakfast tacos, birria, enchiladas, guacamole, etc
