Restaurant Secrets: Make Crispy Pork Belly Like MICHELIN Restaurants

"After being open just a year, this Chinese restaurant became Thailand’s first to earn one MICHELIN Star, and its crispy pork belly reflects Chef Qiu Xiaogui’s obsession with the perfect bite: fresh pork from about 19 kg pigs is marinated simply with five-spice powder and salt, then steamed to roughly 70% doneness before being fan-dried for 12 hours in a separate room to maximize dryness. It is barbecued, not fried, at a precise 400°F for about 75 minutes, with the slab taken out every 10 to 15 minutes to scrape the skin around five times so it crisps evenly without burning, and soy sauce is avoided so the surface stays dry. This traditional Chinese approach, over gas or wood fire, yields crackling that stays crunchy for days and can even handle a microwave reheat; at the table, a lightly sweet house mustard is offered, though when the pork is done right, nothing else is needed." - Pruepat 'Maprang' Songtieng

Located inside the Four Seasons Hotel. First time tasting a legitimate hot and sour soup. A lot of dishes we ordered were Cantonese classics but slightly elevated in presentation and preparation. Delicious overall with great service - definitely could see why they have a Michelin star. For a party of 4, we spent roughly $300 USD, so relatively good value

Overall a good experience. I had high expectations since it’s a 1-Michelin star restaurant. The food was enjoyable. The dish I liked most was the noodle rolls with fried shrimp.

Four Season Chinese Restaurant truly serves the best baby pork I have ever eaten in my life! The flavor is absolutely incredible, perfectly crispy on the outside and tender inside. Every time I come here, the service is exceptional friendly, attentive, and consistent. This place never disappoints. Highly recommended!

Yu Ting Yuan, located in the Four Seasons Hotel, boasts a truly stunning setting—elegant, refined, and beautifully designed. The ambiance and interior are top-notch, creating a luxurious dining experience. The service was excellent, as expected. As for the food, it was good overall, though we had higher expectations. The clear standout was the Peking Duck—crispy, flavorful, and perfectly prepared—and the dessert was also a delightful surprise. The other dishes were decent, but didn’t quite wow us. Still, a lovely place to dine for the atmosphere and standout service. 🥢🦆🍨✨

I recommend this place if you look for fine and authentic Chinese food in Bangkok. They have Dim Sum for lunch which I recommend. And prices are less expensive than evening time. Also their wine collections are selected prices range from 2,000THB or more. The service is quite trained and comfortable services. I thank to great staffs, Tee, Singtoh, Bow and Arawan. Definitely visit there again!
