After a relatively chill day exploring Taichung, we decided to end our day with a visit at Fu Juang Yuan. The outside is hard to miss. You'll see a vat of pig feet and other goodies that are marinating in a liquid gold concoction.
You order via the paper sheet that is outside. Once you've marked down all the items that you want, you give it to the cashier and you can take a seat as you wait for your order.
We got various cuts of the pork trotters. Unfortunately, I can't accurately recall the difference. Though they were all good. Some of the cuts are certainly more gelatinous; others are more lean with a balance of meat. I do generally like braised pork feet, but I'm also not the biggest fan. With that in mind, I felt that this was maybe above average quality from what I've had compared to home cooking or restaurants in the Houston area. What did stand out were the pork intestines and the noodles with sauce use to braise. Usually I would think rice to be the better base but these noddles went so well the sauce.
I would come back again and primarily order a more gelatinous cut, intestines, noodles, and of course try something new!
