The pine chop, a beautifully charred, umami-packed pork rib that glistens with yuzu-butter, and the kinmedai tiradito, silky Japanese sea bream draped in truffle ponzu. You shouldn’t miss the spicy tuna crispy rice, and for something unexpected, the eringi mushroom salad with truffle yuzu dressing delivers nitrogen-chill theater. They’re playing with fire and ice in the best way possible.
